{"id":11010,"date":"2014-07-02T08:00:55","date_gmt":"2014-07-02T12:00:55","guid":{"rendered":"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/?p=11010"},"modified":"2014-07-01T14:29:57","modified_gmt":"2014-07-01T18:29:57","slug":"getting-schooled-cheese","status":"publish","type":"post","link":"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/getting-schooled-cheese\/","title":{"rendered":"Getting Schooled by Cheese"},"content":{"rendered":"<p>Artisanal cheesemaking provides a lot of lessons that are applicable in the classroom: history, foreign language, microbiology, and business skills, to name just a few.&nbsp;Some schools and organizations are recognizing that learning about cheesemaking can be an educational and delicious experience.<\/p>\n<p>At the end of this school year, students in upper-level French classes at a Massachusetts&nbsp;high school took a trip to two different cheese shops just outside of Boston. At&nbsp;<a title=\"capone foods\" href=\"http:\/\/www.caponefoods.com\/\" target=\"_blank\">Capone Foods<\/a>, students got the chance to make&nbsp;<a title=\"cheese library\" href=\"\/cheese-library\/Mozzarella-Fiore-di-Nonno\" target=\"_blank\">mozzarella<\/a> and <a title=\"cheese library\" href=\"\/cheese-library\/Ricotta-Maplebrook-Farm\" target=\"_blank\">ricotta<\/a>, allowing&nbsp;the process they learned about in the classroom come to life. According to their teacher&#8217;s <a title=\"Medford article\" href=\"http:\/\/medford.wickedlocal.com\/article\/20140630\/NEWS\/140639966\/?Start=1\" target=\"_blank\">account<\/a> of the experience,<\/p>\n<blockquote><p><span style=\"color: #424242;\">This was a moment of conversion for a few students who had previously declared their indifference for cheese. From that moment on, their appetite for cheese was awakened and their curiosity piqued.<\/span><\/p><\/blockquote>\n<p style=\"text-align: left;\">Ihsan Gurdal, owner of&nbsp;<a title=\"Formaggio\" href=\"http:\/\/www.formaggiokitchen.com\/\" target=\"_blank\">Formaggio Kitchen<\/a>, also showed the class the humidity-controlled cave underneath his store, which he built in order to simulate the European cellars often used for aging cheese. The students left this trip with a greater appreciation for the culture of cheesemaking, and an appetite for exploration on their own.<\/p>\n<p style=\"text-align: left;\"><a title=\"farms for city kids\" href=\"http:\/\/farmsforcitykids.org\/\" target=\"_blank\">Farms for City Kids<\/a>, a program at <a title=\"Spring Brook Farms\" href=\"http:\/\/www.vtcheese.com\/members\/springbrook\/springbrook.html\" target=\"_blank\">Spring Brook Farms<\/a> in Reading, Vermont, uses a &#8220;thousand-acre classroom&#8221; and firsthand farming experience to teach children from urban areas valuable skills and the importance of academics. The farm setting encourages teamwork and respect, while also building self-confidence in the students&nbsp;who can be proud of the tangible results of their hard work.&nbsp;<\/p>\n<p style=\"text-align: left;\">A typical day at Spring Brook Farm for a student might start with an early wake-up call at 6:30 AM, followed by chores in the dairy barn or the cheese house, such as taking care of the <a title=\"cheese library\" href=\"\/cheese-library\/Tarentaise-Spring-Brook\" target=\"_blank\">Tarentaise<\/a>, a favorite here at&nbsp;<strong>culture&nbsp;<\/strong>(and the centerfold in our <a title=\"store\" href=\"http:\/\/store.culturecheesemag.com\/prdetail.aspx?pr=CCMISS307\" target=\"_blank\">Autumn 2013<\/a> issue!) There is also time devoted to learning in the classroom and&nbsp;the opportunity to prepare meals and make maple syrup.&nbsp;<\/p>\n<p style=\"text-align: left;\">These opportunities to get out of the classroom and see the cheesemaking process are valuable to students and cheese consumers of all ages.
