Today, the factory is run by the couple&#8217;s son and grandchildren and produces over 16,000 pounds per day.&nbsp;<\/p>\n<p>But while Henning&#8217;s has upped its production considerably, the factory still uses old-school techniques. Kerry Henning, the current president of Henning&#8217;s Cheese told <a href=\"http:\/\/www.washingtontimes.com\/news\/2014\/jul\/7\/wisconsin-cheese-factory-celebrates-100-years\/\" target=\"_blank\">The Washington Times<\/a>,&nbsp;\u201cWe always focus on tradition and quality&nbsp;of cheese. We like to say, \u2018we stayed backwards so long, we\u2019re in vogue again&#8217;.<span style=\"color: #000000;\">\u201d<\/span><\/p>\n<p>Wisconsin is well known for being <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-bites\/wisconsin-cheese-culture\" target=\"_blank\">the nucleus of American cheese production<\/a>, and Henning&#8217;s does the state proud by producing&nbsp;classic varieties while&nbsp;experimenting with inventive flavors. The factory makes cheddar, Colby, monterey jack, and mozzerella and offers flavors like blueberry cobbler, mango fire, garlic and dill, hatch pepper.
