We were the weird students at school who were asked to leave our stinky (cheese-containing) lunches in the hall and had to explain to classmates why we drank raw milk and ate homemade yogurt. One of our greatest joys was convincing skeptical friends to give uncommon cheeses a chance.<\/p>\n<p>Now that we have a shop called <a href=\"http:\/\/www.claremontcheese.com\/\" target=\"_blank\">Cheese Cave<\/a> in our hometown of Claremont, California, and a brand new stall called <a href=\"http:\/\/www.dtlacheese.com\/\" target=\"_blank\">DTLA Cheese<\/a> opening this fall in downtown Los Angeles\u2019s historic <a href=\"http:\/\/www.grandcentralmarket.com\/\" target=\"_blank\">Grand Central Market<\/a>, it is our goal and delight to introduce more people to great cheeses. Burrata<\/h2>\n<ul style=\"list-style-type: none;\">\n<li><strong>Maker:<\/strong> Gioia Cheese Company<\/li>\n<li><strong>Origin: South El Monte, Calif.<\/strong> <\/li>\n<li><strong>Milk:<\/strong> Pasteurized cow&#8217;s milk<\/li>\n<li><strong>Rennet:<\/strong> Microbial<\/li>\n<\/ul>\n<p><a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-iq\/style-highlight-burrata\" target=\"_blank\">Burrata<\/a> is essentially a thin pouch of hand-pulled mozzarella containing curd with a touch of cream. It\u2019s wildly satisfying, with a sweet, milky, tender mouthfeel. This cheese is not meant to be saved; the fresher the burrata, the better, so look for a local maker when selecting your ball of joy. Cheese Cave is lucky to be just minutes away from Gioia (which means joy in Italian!), so we order Gioia\u2019s burrata fresh each week. If you have trouble tracking down Gioia\u2019s burrata, look for versions made by Vermont\u2019s <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-library\/Burrata-Maplebrook-Farm\" target=\"_blank\">Maplebrook Farm<\/a> or Wisconsin\u2019s <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-library\/Burrata-Belgioioso\" target=\"_blank\">BelGioioso<\/a>.<\/p>\n<h2>2. <a title=\"Culture Cheese Library: Idiazabal\" href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-library\/Idiazabal\" target=\"_blank\">Idiaz\u00e1bal<\/a><\/h2>\n<ul style=\"list-style-type: none;\">\n<li><strong>Maker:<\/strong> <a href=\"http:\/\/doidiazabal.com\/\" target=\"_blank\">Various<\/a><\/li>\n<li><strong>Origin:<\/strong> Navarra, Spain<\/li>\n<li><strong>Milk:<\/strong> Raw sheep&#8217;s milk<\/li>\n<li><strong>Rennet:<\/strong> Animal<\/li>\n<\/ul>\n<p>To us, Idiaz\u00e1bal is like the summer cookout that you never want to end. Made from sheep\u2019s milk, it has more protein and butterfat than cheeses made from either cow\u2019s or goat\u2019s milk. At room temperature, its surface glistens, and it tastes subtly smoky, like a warm, glowing bonfire. A DOP (name-protected) cheese, Idiaz\u00e1bal is made in the Basque region of northern Spain. It was traditionally stored near nightly fires, which explains its porky, smoky flavor.<\/p>\n<h2>3. Honey Bee Goat Cheese<\/h2>\n<ul style=\"list-style-type: none;\">\n<li><strong>Maker:<\/strong> <a href=\"http:\/\/cheeselandinc.com\/\" target=\"_blank\">Cheeseland Inc.<\/a><\/li>\n<li><strong>Origin:<\/strong> Holland<\/li>\n<li><strong>Milk:<\/strong> Pasteurized goat&#8217;s milk<\/li>\n<li><strong>Rennet:<\/strong> Vegetarian<\/li>\n<\/ul>\n<p>So you think you don\u2019t like goat cheese? Give this convivial guy a try! The gouda-style Honey Bee Goat Cheese is just as approachable as it sounds! It\u2019s more sweet than tangy, thanks to the incorporation of honey into the recipe. This cheese can fit in at almost any occasion, whether it\u2019s an after-school snack or a fancy pairing with your favorite apple cider. Honey Bee has a semi-firm, bone-white paste and a slightly smooth, chalky finish that makes you want to go back for more.<\/p>\n<h2>4. <a title=\"Culture Cheese Library: Ch\u00e4llerhocker\" href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-library\/Chllerhocker\" target=\"_blank\">Ch\u00e4llerhocker<\/a><\/h2>\n<ul style=\"list-style-type: none;\">\n<li><strong>Maker:<\/strong> <a href=\"http:\/\/www.chaellerhocker.ch\/englisch\" target=\"_blank\">K\u00e4serei Tufertschwil<\/a><\/li>\n<li><strong>Origin:<\/strong> St. Gallen, Switzerland<\/li>\n<li><strong>Milk:<\/strong> Raw cow&#8217;s milk<\/li>\n<li><strong>Rennet:<\/strong> Animal<\/li>\n<\/ul>\n<p>We have yet to meet someone across the counter who isn\u2019t in love with the super-flavorful Ch\u00e4llerhocker at first bite. Walter Rass, who makes this Cheese Cave favorite, also makes the widely known <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-library\/Appenzeller\" target=\"_blank\">Appenzeller<\/a>, but Ch\u00e4llerhocker is his baby. It\u2019s rich, creamy, and nutty. Its kooky-sounding name translates to \u201csitting in the cellar,\u201d which it does for 10 months as it ages, gaining wonderful, tiny, crunchy crystals that seem to leap toward your teeth as you nosh on its toothsome paste.<\/p>\n<h2>Accompaniments<\/h2>\n<h3><a href=\"http:\/\/www.friendincheeses.com\/jams\/nor-cal-chow-chow\" target=\"_blank\">Nor Cal Chow Chow | Friend in Cheeses Jam Company<\/a><\/h3>\n<p>Not to be mistaken for a pickled relish, Tabitha Stroup\u2019s chow chow is a little different from typical takes on the Southern condiment. Imagine all your favorite cheese accessories (cherries, cranberries, almonds, pumpkin seeds, sunflower seeds and more) suspended together in a glorious mix of wild Delk honey, vanilla, and bourbon.<\/p>\n<h3><a href=\"http:\/\/www.potterscrackers.com\/ca\/the-crackers\/\" target=\"_blank\">Carrot Ginger Crisps | Potter&#8217;s Crackers<\/a><\/h3>\n<p>A mother-son team crafts these crisps from local ingredients (one outpost of their business is in California, and another is in Wisconsin).
