{"id":11896,"date":"2014-07-15T10:40:24","date_gmt":"2014-07-15T14:40:24","guid":{"rendered":"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/?p=11896"},"modified":"2014-07-23T00:13:04","modified_gmt":"2014-07-23T04:13:04","slug":"meet-maker-haystack-mountain-goat-dairy","status":"publish","type":"post","link":"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/meet-maker-haystack-mountain-goat-dairy\/","title":{"rendered":"Meet the Maker: Haystack Mountain Goat Dairy"},"content":{"rendered":"<p>If there\u2019s anything that <a href=\"http:\/\/www.haystackgoatcheese.com\/\" target=\"_blank\">Haystack Creamery<\/a> in Longmont, Colo.&nbsp;knows how to do (besides making delicious cheese), it\u2019s how to work with what they\u2019ve got.<\/p>\n<p>\u201cWe\u2019ve had to get really creative working with spaces over the years,\u201d John Scaggs, Director of Sales and Marketing, says. \u201cThe cheese room itself is pretty funky.\u201d<\/p>\n<p>&nbsp;According to Scaggs, Haystack Creamery purchased a vat from Sid Cook of Carr Valley&nbsp;back in the 90&#8217;s that they continue to use for cheesemaking. They also bought an old spice grinder at a coffee repair shop in Denver. \u201c<a title=\"Culture Cheese Library: Haystack Fresh Chevre\" href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-library\/Flavored-Chevre-Haystack-Mountain\" target=\"_blank\">That\u2019s what we use to grind herbs for ch\u00e8vre<\/a>,\u201d Scaggs explains. \u201cIt gives the herbs a bright, clean flavor \u2026 and saves us money.\u201d<\/p>\n<p>The source of their milk, too, may come as a surprise. The milk is produced by goats, but <a title=\"Photo Essay: Doing Time Together\" href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/photo-essay\/doing-time-together\" target=\"_blank\">processed by inmates at Colorado Correctional Industries<\/a>, or CCI. According to Scaggs, CCI and its inmates are a separate entity from Haystack.<\/p>\n<p>\u201cThey produce high-quality milk consistently,\u201d Scaggs says of CCI. He adds that though many of the inmates pursue a career in agriculture after their release, the majority of them become involved in an industry that is tangentially related to dairy, such as refrigeration or electric. The program gives them a new skill-set through hands-on experience. Many of the prisoners become deeply involved in the dairy industry while completing the program.<\/p>\n<p>\u201cI took the whole staff to CCI\u2019s birthing pen and nursery and hung around there for two hours with the inmates,\u201d Scaggs says, \u201cThey were going on and on about goats and I could see their faces lighting up. If that\u2019s where I have to go to prison, you can lock me up and throw away the key.\u201d<\/p>\n<p>Haystack Creamery not only engages prisoners to become involved with dairy culture, but the entire surrounding community. Located in downtown Longmont and nestled between the Rocky Mountains, Haystack is known for a deep involvement with local farmers&#8217; markets. \u201cFarmers&#8217; markets are the lifeblood of our company,\u201d Scaggs explains, adding that that Jim Schott sold Haystack\u2019s first cheese at the Boulder County Farmer\u2019s Market back in 1991.<\/p>\n<div id=\"attachment_11900\" style=\"width: 610px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2014\/07\/haystack-chevre-logs-600x400.jpg\"><img decoding=\"async\" aria-describedby=\"caption-attachment-11900\" class=\"wp-image-11900 size-full\" src=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2014\/07\/haystack-chevre-logs-600x400.jpg\" alt=\"Chevre logs bring made at Haystack Mountain Creamery\" width=\"600\" height=\"400\" srcset=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2014\/07\/haystack-chevre-logs-600x400.jpg 600w, https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2014\/07\/haystack-chevre-logs-600x400-300x200.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/a><p id=\"caption-attachment-11900\" class=\"wp-caption-text\">Logs of fresh ch\u00e8vre being made at Haystack Mountain&#8217;s creamery.<\/p><\/div>\n<p>Not much has changed in terms of Haystack\u2019s commitment to local farmers&#8217; markets, but there has been a massive amount of growth in terms of Haystack\u2019s distribution, production, and variety of cheeses. In 1989, there were five goats on Jim Schott\u2019s five-acre farm, and Haystack was producing fresh, creamy, and simple ch\u00e8vre. In 2003, Haystack outgrew their facility and purchased a 2500-square-foot creamery that they expanded upon in 2005. Head cheesemaker Jackie Chang experimented with different cheeses, first with herb-coated chevres, then with aged raw-milk cheeses (such as <a title=\"Culture Cheese Library: Snowdrop\" href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-library\/Snowdrop\" target=\"_blank\">Snowdrop<\/a>&nbsp;and <a title=\"Culture Cheese Library: Haystack Peak\" href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-library\/Haystack-Peak\" target=\"_blank\">Haystack Peak<\/a>), aged washed rind cheeses (such as <a title=\"Culture Cheese Library: Red Cloud\" href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-library\/Red-Cloud\" target=\"_blank\">Red Cloud<\/a>), a mixed goat and cow\u2019s milk cheese, and a cow\u2019s milk alpine-style cheese, among others.<\/p>\n<p>\u201cWe\u2019ve been trying to find new ways to keep our cheese room busy and developed some amazing cheeses in the process,\u201d Scaggs says, adding that his personal favorite is the Wall Street Gold, named after a Boulder mine that was the source of gold in the late 1880s.
