In this blog series, Amanda will be interviewing cheesemongers from around the country and relaying their most fantastic tales of international travel, in-shop aging, and curious customers.&nbsp;<a title=\"Cheesemonger Tales: Lassa Skinner, Fromage Freelancer\" href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/blog\/cheesemonger-tales-lassa-skinner-fromage-freelancer\" target=\"_blank\">Last week we met <\/a><\/em><a title=\"Cheesemonger Tales: Lassa Skinner, Fromage Freelancer\" href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/blog\/cheesemonger-tales-lassa-skinner-fromage-freelancer\" target=\"_blank\"><strong>culture&#8217;s&nbsp;<\/strong><\/a><em><a title=\"Cheesemonger Tales: Lassa Skinner, Fromage Freelancer\" href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/blog\/cheesemonger-tales-lassa-skinner-fromage-freelancer\" target=\"_blank\">very own retailer, Lassa Skinner<\/a>.&nbsp;This week we sit down with Linni Kral of South Boston&#8217;s American Provisions.&nbsp;Read on, and you\u2019ll have a chance to win a copy of our&nbsp;<\/em><strong>Cheese+<\/strong><em>&nbsp;ultimate pairings issue!<\/em><\/p>\n<hr>\n<p>Even in the summer, when most of us are happily smearing fresh cheese across any surface that will suffice, Linni Kral still can\u2019t get enough of Alpine-style hard cheeses. &nbsp;\u201cA lot of Alpines are used in winter because they melt well,\u201d she said. \u201cBut right now, I\u2019m really into this cheese called&nbsp;<a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-library\/Heublumen\" target=\"_blank\">Heublumen<\/a>&nbsp;from a small town in Switzerland. It\u2019s only aged six months. They brush the outside with fresh grass, so there\u2019s this beautiful, dark green, funky rind on the outside, but inside it&#8217;s creamy, brighter, and citrusy. So it\u2019s great to eat in the summer.\u201d<\/p>\n<p>The description had me ready to trade in my log of summer ch\u00e8vre for a wedge of Linni\u2019s recommendation. As lead merchandiser at South Boston\u2019s&nbsp;<a href=\"http:\/\/americanprovisions.com\/products\/pantry\/\" target=\"_blank\">American Provisions<\/a>, Linni is well versed in translating her love of cheese through&nbsp;palatable adjectives.&nbsp;But Linni\u2019s passion for the product she sells is at once deep-seated and newly discovered\u2014just five years ago, in college, she was a vegan. But after joining the American Provisions team and attending Long Island City\u2019s Cheesemonger Invitational, she \u201cfell in love with cheese.\u201d<\/p>\n<p>\u201cIt\u2019s like a gaming convention,\u201d she said, describing the Invitational. \u201cI realized there\u2019s this underbelly of crazy cheese people, and if I hadn\u2019t gotten this job, I wouldn\u2019t have known it existed. There are all sorts of people like cheese\u2014there\u2019s no one stripe of cheese geek.\u201d &nbsp;<\/p>\n<p>Though she may have only recently made her debut into the community of dairy-lovers, Linni\u2019s commitment to environmentalism and animal welfare hasn\u2019t wavered &#8211; it\u2019s just been reconfigured. \u201cThe more I learn about it, the more I\u2019m convinced cheese is the most natural thing,\u201d she said. \u201cIt\u2019s preserving the milk that\u2019s going to be produced by animals no matter what. I think that it\u2019s a very environmentally conscious thing to make.\u201d<\/p>\n<div id=\"attachment_12577\" style=\"width: 410px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2014\/07\/Linni_CheeseTasting.jpg\"><img fetchpriority=\"high\" decoding=\"async\" aria-describedby=\"caption-attachment-12577\" class=\"wp-image-12577 size-full\" src=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2014\/07\/Linni_CheeseTasting.jpg\" alt=\"Processed with VSCOcam with m5 preset\" width=\"400\" height=\"598\" srcset=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2014\/07\/Linni_CheeseTasting.jpg 400w, https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2014\/07\/Linni_CheeseTasting-200x300.jpg 200w\" sizes=\"(max-width: 400px) 100vw, 400px\" \/><\/a><p id=\"caption-attachment-12577\" class=\"wp-caption-text\">Linni hosts a tasting, pitting American-made Pleasant Ridge Reserve against Swiss-made Maxx 365.<\/p><\/div>\n<p>Linni is currently applying for a scholarship to study cheese in the Alps, in part because she\u2019s drawn to the relationship between the cheesemakers and their dairy cows. \u201cThey really appreciate the animal there,\u201d she explained. \u201cThey literally have parades to celebrate the cows; they shower them with flowers.\u201d<\/p>\n<p>Perhaps when describing her beloved Alpine cheeses to customers, Linni should mention that they also carry sweet notes of ethical standards. \u201cI studied politics in college, so I\u2019m always looking to make my job political. And the way we support small famers is the most political thing we can do.\u201d<\/p>\n<p>And what better way to spread good politics than by forging the personal connection between producers and consumers? Linni was immediately attracted to American Provisions\u2019 grounded approach to introducing customers to good food without pretension. \u201cA lot of [cheese shops] get held back by this perceived elitism. What I love most is that we keep it humble and welcoming,\u201d she said. \u201cI think that part of the reason we have this store instead of letting people buy cheese at Whole Foods or any other capable vendor is we like to tell the stories behind the products.\u201d<\/p>\n<p>The products have stories, indeed. And as the resident blogger for the American Provision&#8217;s <a href=\"http:\/\/americanprovisions.com\/blog\/\" target=\"_blank\">blog<\/a>, Linni is skilled in the art of yarn spinning.&nbsp;Take, for example, the story Linni shares with her customers about the cheese sourced&nbsp;from <a href=\"http:\/\/www.bostonpostdairy.com\/\" target=\"_blank\">Boston Post Dairy<\/a>. They got a small piece of land, and now they make cheese and milk caramels with all the goat\u2019s milk. They\u2019re the nicest people.\u201d<\/p>\n<p>But enough &#8211; we get it. People who make, sell, and buy cheese are inherently awesome humans. &nbsp;Once Linni gets talking about the tales behind the labels, her customers start to itch with excitement and grumble with hunger. So let\u2019s get back to this delicious <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-library\/Heublumen\" target=\"_blank\">Heublumen Alpine cheese<\/a>. How could one make a meal of it? &nbsp;\u201cI\u2019d pair it with this shallot and red wine jam from <a href=\"http:\/\/www.quinceandapple.com\/\" target=\"_blank\">Quince and Apple<\/a>,\u201d Linni suggested. \u201cIt has this sweet, meaty flavor that would go nicely with the cheese. I\u2019d also eat it with beer.
