You just have to ask the right people. In this blog series, Amanda will be interviewing cheesemongers from around the country and relaying their most fantastic tales of international travel, in-shop aging, and curious customers.&nbsp;Last week, we hung out with with <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/blog\/cheesemonger-tales-linni-kral-ethical-anecdotalist\" target=\"_blank\">Linni Kral of Boston&#8217;s American Provisions<\/a>.&nbsp;This week we get to know&nbsp;Jordan Edwards&nbsp;of Chicago\u2019s Pastoral Artisan.&nbsp;Read on, and you\u2019ll have a chance to win a copy of our&nbsp;<\/em><strong>Cheese+<\/strong><em>&nbsp;ultimate pairings issue!<\/em><\/p>\n<hr>\n<p>Jordan Edwards has always had a taste for the earth. But we\u2019re not just talking about terroir here. We\u2019re talking actual dirt.<\/p>\n<p>\u201cWhen I was a little kid, I used to eat the dirt under my grandma\u2019s oak tree,\u201d he explained. \u201c<a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-library\/Cheddar-Montgomerys\" target=\"_blank\">Montgomery\u2019s Cheddar<\/a> reminds me of that same dirty, earthy taste.\u201d<\/p>\n<p>Jordan may have received some scolding as a child, but it\u2019s now clear that his unconventional palate was simply a herald of the skill he now wields as a cheesemonger. Behind the counter of Chicago\u2019s <a href=\"http:\/\/www.pastoralartisan.com\/\" target=\"_blank\">Pastoral Artisan<\/a>, he has to convince the&nbsp;customers to adopt the same adventurous mentality he had as a boy. \u201cWhen I\u2019m trying to sell [Montgomery&#8217;s Cheddar]&nbsp;to customers and I tell that story, I have to assure them that it was some pretty good dirt,\u201d he said.<\/p>\n<p>Somehow, in spite (or perhaps because) of unappetizing comparisons, Jordan delivers his recommendations with such charm and knowledge that his customers literally eat up his advice. The man\u2019s fan base is huge. So huge, they voted him all the way to the top of <strong>culture<\/strong>\u2019s <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/blog\/congrats-cheesemonger-jordan-edwards\" target=\"_blank\">Send Your Monger Packing<\/a> competition. \u201cI was making mini business cards, and asking customers to sign petitions to vote for me,\u201d he said. \u201cI was pretty much hustling, doing everything I could. But it was definitely worth all the hard work.&#8221;<\/p>\n<p><a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2014\/08\/photo-2-3.jpg\"><img fetchpriority=\"high\" decoding=\"async\" class=\"size-full wp-image-12759 aligncenter\" src=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2014\/08\/photo-2-3.jpg\" alt=\"photo 2 (3)\" width=\"595\" height=\"425\" srcset=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2014\/08\/photo-2-3.jpg 595w, https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2014\/08\/photo-2-3-300x214.jpg 300w\" sizes=\"(max-width: 595px) 100vw, 595px\" \/><\/a><\/p>\n<p>Jordan\u2019s win earned him a ticket to the <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/blog\/emily-acosta-wins-cheesemonger-invitational\" target=\"_blank\">Cheesemonger Invitational<\/a> in New York City in June, where he elegantly curated his \u201cperfect bite:\u201d Neal\u2019s Yard Dairy <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-library\/Stichelton\" target=\"_blank\">Stichleton<\/a> with English oatcake, port jellybean, and pistachio.<\/p>\n<p>Oh, did I mention that Jordan has only been mongering for two years? \u201cI didn\u2019t embarrass myself too badly,\u201d Jordan said, playing his humility card without a hint of affectation. \u201cBeing around that many people in this industry who&nbsp;are so passionate was pretty great. Chicago doesn\u2019t have that many cheese shops; there aren\u2019t gatherings of cheesemongers on a day-to-day basis.\u201d &nbsp;<\/p>\n<p>To be able to blend in with veterans at one of the biggest cheese events in the nation after just two years on the job is no easy feat. But then again, Jordan is unusually devoted. He\u2019s hiked his way up an impossibly steep learning curve with&nbsp;record speed. Jordan started off as a delivery driver for Pastoral Artisan, supplying restaurants with the shop\u2019s products. \u201cI would always try to learn something about the cheese so that I would have something to say to the chefs,\u201d he explained.&nbsp;<\/p>\n<p>And then Jordan\u2019s car got stolen. Perhaps it was a sign, pulling him away from the wheel and leading him to the cheese counter. The shop\u2019s managers were impressed by the knowledge he\u2019d accrued while working in delivery, and wholesale cheesemonger Lisa Futterman offered him a position.<\/p>\n<p>It was that memory-inducing Montgomery cheddar that woke up his taste buds to his innate appetite for cheese. \u201cI guess that was the gateway cheese,\u201d he said. From there, Jordan methodically worked his way through the shop\u2019s cheeses. \u201cI would do it by style and variety,\u201d he explained. \u201cEvery day I\u2019d go out of my way to try one washed rind, one bloomy rind, one semi-firm, one aged, and one blue. I\u2019d make tasting notes, and if I could meet the maker, I\u2019d ask questions. I built a cheese encyclopedia for myself. As a staff member, you spend a lot of time learning, and it\u2019s nice to be able to pass that on.\u201d The clientele at Pastoral Artisan isn\u2019t always so easy to please. \u201cOur downtown location tends to attract corporate business people who&nbsp;don\u2019t really know what they want, but have strong opinions on things, for better or worse,\u201d he said. \u201cBut they are usually trusting after their second time in the shop.\u201d<\/p>\n<p>Maybe that\u2019s because Jordan sends them home with crowd-pleasing Zingerman\u2019s Burrata. \u201cIf you\u2019re a customer, you definitely hear about it,\u201d he said of the cream-filled cheese. \u201cOne of my favorite things is how versatile it is. It\u2019s a three-meal cheese; you can have it for breakfast, lunch, or dinner. I\u2019d eat it with grilled peaches, balsamic, olive oil, and black pepper.\u201d<\/p>\n<p>Though Jordan has a repository of pairings and recommendation up his sleeve, he\u2019s always looking to learn about new varieties. \u201cTry everything,\u201d he advised aspiring mongers. \u201cIf there\u2019s a chance to sample something, sample it. Being able to explain how a specific cheese relates to you &#8211; that\u2019s what customers want to hear.\u201d<\/p>\n<p>And even after the post-Cheesemonger Invitational fame and fortune, Jordan\u2019s still got his head on straight. \u201cCheese shouldn\u2019t be pretentious, and I think it\u2019s becoming less snobby.
