College football in the South is a way of life (and some might say religion). Fans take their teams\u2014and tailgating\u2014seriously. It\u2019s not uncommon for spectators to roll in to a stadium a week early, set up camp, and start tailgating. But before that happens, the menu must be chosen.<\/p>\n<p>Many customers order custom cheese boards and charcuterie platters from V. Richards Market during college football season. (The majority of them drop off their own boards in advance so we can make it look as if they\u2019ve done the arrangements themselves.) If you\u2019re not having a local monger pick out a selection for you, try these great cheeses and accompaniments from the southeastern United States\u2014and don\u2019t forget to bring lots of ice-cold beer for all the new friends you\u2019re sure to attract.<\/p>\n<h3>1. Vidalia Onion &amp; Muscadine Marinated Goat Cheese<\/h3>\n<p><em>Pictured in bowl at left<\/em><\/p>\n<p><a href=\"http:\/\/stonehollowfarmstead.com\/\" target=\"_blank\">Stone Hollow Farmstead<\/a> | Harpersville, Ala.<br \/>\nGoat\u2019s milk; Vegetable rennet<\/p>\n<p>With its combination of sweet caramelized Vidalia onions, tart muscadine syrup, and aged balsamic vinegar, this outstanding fresh ch\u00e8vre made by Stone Hollow Farmstead simply tastes like the South. It\u2019s awesome smeared on crackers or a fresh baguette.<\/p>\n<h3>2. Fiery Pimento Cheese<\/h3>\n<p><em>Pictured on celery at left<\/em><\/p>\n<p><a href=\"http:\/\/calliesbiscuits.com\/\" target=\"_blank\">Callie\u2019s Charleston Biscuits<\/a> | North Charleston, S.C.<br \/>\nCow\u2019s milk<\/p>\n<p>Pimento cheese is a staple across the South. Callie\u2019s makes a drier style than most, using shredded cheddar, pimentos, and spices that give a lasting yet not-too-intense heat. Serve it the traditional way, on either saltine crackers or celery stalks. Aged 60 days, this Reblochon-style cheese is a consistent award winner, and the best of its type available in the United States, in my opinion.<\/p>\n<h3>4. <a title=\"Culture Cheese Library: Thomasville Tomme\" href=\"\/cheese-library\/Thomasville-Tomme\" target=\"_blank\">Thomasville Tomme<\/a><\/h3>\n<p><em>Pictured at right as a wedge<\/em><\/p>\n<p><a href=\"http:\/\/sweetgrassdairy.com\/\" target=\"_blank\">Sweet Grass Dairy<\/a> | Thomasville, Ga.<br \/>\nRaw cow\u2019s milk; Traditional rennet<\/p>\n<p>Made in the style of a Pyrenees Tomme, <a title=\"Culture Cheese Library: Thomasville Tomme\" href=\"\/cheese-library\/Thomasville-Tomme\" target=\"_blank\">this cheese<\/a> is smooth and rich, with a tangy and slightly buttery finish. I often notice customers\u2019 eyes open widely as they taste it for the first time. It\u2019s a crowd-pleaser that pairs well with Good People Brewing Co.\u2019s pale ales (made in Birmingham).<\/p>\n<h3>ACCOMPANIMENT: Alecia\u2019s Tomato Chutney | <a href=\"http:\/\/aleciaschutney.com\/Home.html\" target=\"_blank\">Alecia\u2019s Specialty Foods<\/a><\/h3>\n<p>Alecia\u2019s chutney, made in Leeds, Ala., is a sweet and savory sauce that can be used on literally everything.
