In fact, before my older son spent a year off of dairy, I would have been hard pressed to choose a favorite. After being deprived, though, my cheese allegiances became clear. I still love all cheese, but I&#8217;d missed some cheeses more than others and Parmesan was number one. Not only did I crave the taste, but I realized just how much I use it. Thankfully, my son can tolerate dairy again &#8211; Parmesan, in particular (thanks to a different lactose protein in Italian milk and also that Parmesan is naturally low in the proteins that irritate lactose intolerant tummies) &#8211; and just in time for us to tour a Parmesan dairy outside of Bologna, Italy.<\/p>\n<p>Yes, seriously. And it was as amazing as it sounds.<\/p>\n<p>Real <a title=\"Culture Cheese Library: Parmigiano Reggiano\" href=\"\/cheese-library\/Parmigiano-Reggiano\" target=\"_blank\">Parmigiano Reggiano<\/a> cheese has a long, fascinating history and is still, to this day, exclusively produced by nearly 400 certified cheese makers in the provinces of Parma, Reggio Emilia, Modena and parts of the provinces of Mantua and Bologna. Well, imagine my delight when a family trip early this summer took us to Bologna. How could I be near the only, relatively tiny part of the world that produces Parmesan and not visit a dairy?<\/p>\n<p>Parmesan is one of those cheeses that, like butter, makes nearly everything better. I save Parmesan rinds in my freezer to throw into soup like this <a href=\"http:\/\/onehungrymama.com\/2012\/03\/recipe-kale-squash-farro-soup-with-chickpeas\/\" target=\"_blank\">Kale, Squash and Farro Soup with Chickpeas<\/a>. I use Parmesan to make <a href=\"http:\/\/onehungrymama.com\/2009\/07\/tarragon-and-parmesan-crustedpork-paillard\/\" target=\"_blank\">breading on chicken or pork cutlets<\/a>. I grate Parmesan over <a href=\"http:\/\/onehungrymama.com\/2009\/10\/roasted-broccolini-over-spinach-parmesan-polenta\/\" target=\"_blank\">roasted veggies<\/a>&nbsp;and stir it into <a href=\"http:\/\/onehungrymama.com\/2009\/10\/butternut-squash-with-honey-lemon-parmesan\/\" target=\"_blank\">veggie purees<\/a> and <a href=\"http:\/\/onehungrymama.com\/2012\/10\/video-parmesan-mashed-cauliflower-organic-baby-food\/\" target=\"_blank\">mashes<\/a>. When the boys were little, Parmesan was my go-to flavor agent. Pureed squash is good. <a href=\"http:\/\/onehungrymama.com\/2009\/10\/butternut-squash-with-honey-lemon-parmesan\/\" target=\"_blank\">Pureed squash with Parmesan<\/a> is better. I&#8217;ve even topped my morning oatmeal with Parmesan and honey &#8211; it&#8217;s delicious.<\/p>\n<p>Once my family trip was planned, I reached out to my friends at <a href=\"http:\/\/www.parmesan.com\/parmigianoreggianonight?utm_source=utm_source%3Dculturecheesemag&amp;utm_medium=utm_medium%3Dbloglink&amp;utm_content=utm_content%3Dblog1&amp;utm_campaign=utm_campaign%3DParmigiano_Reggiano_Night\" target=\"_blank\">Parmesan.com<\/a>&nbsp;and the <a href=\"http:\/\/www.parmigianoreggiano.com\" target=\"_blank\">Consortium for Parmigiano Reggiano<\/a> who were kind enough to organize a visit for me near where I was staying in Bologna. An <em>early morning<\/em> visit. In this time, the fatty part of the milk rises to the surface and is skimmed.
