The answer is simple: Blintzes. This tasty breakfast item&nbsp;combines all the wonderful things in the world: sunshine, love, rainbows, crepes, cheese and something sweet, lightly fried. Well, maybe not the first few, but these roll-ups are easy to make to boot, and are incredibly versatile.<\/p>\n<p>Blintzes are originally a Russian dish that came to the US with Eastern European Jewish immigrants (who made them even more awesome by adding in sweetened cheese and jam).&nbsp;<a title=\"Cheese Blintz \" href=\"http:\/\/smittenkitchen.com\/blog\/2014\/01\/cheese-blintz\/\" target=\"_blank\">Smitten Kitchen<\/a> has a wonderful recipe for blintzes that are easy and adaptable &#8212; all you need is a blender, bowl and a frying pan. And of course, ingredients.<\/p>\n<p>Ingredients are the fun part! Fill your thin, tender blintzes with cheese and anything else you&#8217;d like. I add a little lemon zest to mine, but a bit of cinnamon or nutmeg would also make a big difference. &nbsp;Because these little pockets of joy are sweet and salty, creamy and light, and soft and crunchy, almost anything sweet is a good addition. Have your favorite <a title=\"Bonnie's Jam \" href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/blog\/bonnies-jams-chocolate-cheese\" target=\"_blank\">jam<\/a> on hand? Throw it on! If it is apple butter season, try some of that too! If <a title=\"Lemon Curd \" href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-bites\/lemon-curd-frozen-yogurt\" target=\"_blank\">lemon curd<\/a> is more your style give that a try.
