Three cheeses certainly ups the ante, and when you get to four cheeses (oh boy) things start to get interesting. But in a move that challenges our very notions of cheese creativity, Australian chef Johnny Di Francesco&mdash;grand champion of <a href=\"http:\/\/www.theguardian.com\/lifeandstyle\/australia-food-blog\/2014\/apr\/16\/melbourne-pizza-johnny-di-francesco\" target=\"_blank\">the 2014 Pizza World Championship<\/a>&mdash;has crafted a 99-cheese pizza.<\/p>\n<p>The &#8220;Why&#8221; may not be super intriguing: \u201cNo one has done this before. So I thought I would give it a go,\u201d Di Francesco explains. We would chime in and say <em>obviously<\/em> more cheese is more better, and ninety-nine of them in a single dish indelibly expands the boundaries of human potential (we&#8217;re not biased or anything). But we&#8217;re also guessing the money behind the not-so-subtle <cite>Teenage Mutant Ninja Turtles<\/cite> promotional tie-in had <em>something<\/em> to do with it&hellip;<\/p>\n<p><center><\/p>\n<div style=\"margin-top:-5px;\">\n<blockquote class=\"twitter-tweet\" lang=\"en\">\n<p>Worlds first 99-cheese pizza avail this Sat in <a href=\"https:\/\/twitter.com\/hashtag\/Melbourne?src=hash\">#Melbourne<\/a> (booking details, cheese list inc.) <a href=\"http:\/\/t.co\/09u3nOEzyl\">http:\/\/t.co\/09u3nOEzyl<\/a> <a href=\"http:\/\/t.co\/r9zjRZ0qVM\">pic.twitter.com\/r9zjRZ0qVM<\/a><\/p>\n<p>&mdash; the AU review (@theAUreview) <a href=\"https:\/\/twitter.com\/theAUreview\/status\/542201123075915777\">December 9, 2014<\/a><\/p><\/blockquote>\n<p><script async src=\"\/\/platform.twitter.com\/widgets.js\" charset=\"utf-8\"><\/script><\/div>\n<p><\/center><\/p>\n<p>Nonetheless, this is a crazy-awesome accomplishment, and the &#8220;How&#8221; deserves some worthy attention and admiration. The first 94 cheeses&mdash;including <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-library\/Brie-de-Meaux\" target=\"_blank\">Brie<\/a>, American, <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-library\/Camembert-Normandie\" target=\"_blank\">Camembert<\/a>, chili cheddar, grated nacho cheese, <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-library\/Pecorino-Lucano\" target=\"_blank\">pecorino<\/a>, and mini Babybel, to name a few&mdash;are meticulously scraped, sliced, and grated into a giant melting pot, where they slowly congeal into a beautiful molten mass for over an hour. This foundation is layered over Di Francesco&#8217;s award-winning pizza dough and sprinkled with the remaining five cheeses: buffalo mozzarella, goat cheese, fior di latte, ricotta, and raspadura. The Aussie pops the pie in the oven, and in a couple of minutes&mdash;voil\u00e1, 99-cheese pizza.
