There&#8217;s the science (of course), and also a whole lot of skill.<\/p>\n<p>After my <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/blog\/happy-cheese-culture-idyll-on-parish-hill\" target=\"_blank\">first day<\/a> in the <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/blog\/happy-cheese-culture-parish-hill-creamery\" target=\"_blank\">Parish Hill<\/a> cheese house, I had an idea of the skill involved to create their beautiful cheeses, but after a second day (and getting my hands on the curds), I am in awe of what it takes to shape and produce good-looking (and good-tasting) cheese.<\/p>\n<p>On Day 2 things got dreamier, stretchier, and curdier with <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-library\/Suffolk-Punch\" target=\"_blank\">Suffolk Punch<\/a> (in the <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-library\/Caciocavallo-Podolico\" target=\"_blank\">Caciocavallo<\/a> style) and <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-library\/Kashar\" target=\"_blank\">Kashar<\/a> (a classic basket provolone). Here&#8217;s a look at the process:<\/p>\n<p>Like a dream&mdash;one where you are suddenly dropped into the middle of an action scene&mdash;this day begins after the milking, testing, cultures, rennet, and flocculation.<\/p>\n<p>Milk is turning solid and dairy magic is in full swing.<\/p>\n<p>First, the stirring.<\/p>\n<p><center><img fetchpriority=\"high\" decoding=\"async\" class=\"aligncenter size-full wp-image-23111\" src=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2015\/08\/1-Rachel-at-Vat.jpg\" alt=\"Rachel at Vat -
