A pair of them, like a bride and groom. Soft, delicate. The scent of the French countryside was still detectable on their rinds.<\/p>\n<p>Yes, this post is going to get romantic. If you\u2019re eating lunch at your desk, you may want to close the door. You see, I have spent the last week with this pair in a little threesome\u2014picnicking, drinking cocktails on the sofa, making eyes at each other over breakfast, sneaking into the kitchen at night for love bites. It\u2019s not often that such perfectly ripe goat cheeses appear in one\u2019s life.<\/p>\n<p>And so Chabichou du Poitou and Sainte-Maure de Touraine seduced me. Utterly.<\/p>\n<p><center><a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2015\/09\/GCoF_MdmFro_1.jpg\"><img fetchpriority=\"high\" decoding=\"async\" class=\"aligncenter size-full wp-image-23848\" src=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2015\/09\/GCoF_MdmFro_1.jpg\" alt=\"GCoF_MdmFro_1\" width=\"600\" height=\"400\" srcset=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2015\/09\/GCoF_MdmFro_1.jpg 600w, https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2015\/09\/GCoF_MdmFro_1-300x200.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/a><\/center>Chabichou (pronounced like <em>shabby<\/em> shoe) hit the wet bar right away. The bottle of <a href=\"cocktails.about.com\/od\/liqueurscordials\/p\/chartreuse_lqr.htm\" target=\"_blank\" rel=\"noopener\">Chartreuse<\/a> was in her hands before we were properly introduced. No surprise. Chabichou is one of France\u2019s oldest and most honorable cheeses\u2014allegedly developed by the Saracens in the 8th century A.D. It seemed fitting, then, that she reached for Chartreuse, a historically French liqueur created by Carthusian monks. With its many wild herbs, it\u2019s a perfect match for goat cheese, especially in an afternoon sipper.<\/p>\n<p><center><\/p>\n<h2><a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/recipes\/chartreuse-cocktails-chabichou\" target=\"_blank\" rel=\"noopener\">Chartreuse Cocktails for Chabichou<\/a><\/h2>\n<p><\/center><\/p>\n<p><em><a href=\"www.nytimes.com\/2008\/09\/24\/dining\/24gene.html?_r=0\" target=\"_blank\" rel=\"noopener\">Genever<\/a>, a precursor to gin, has malty notes\u2014perfect for underscoring the nutty, yeasty flavors in Chabichou.<\/em><\/p>\n<h3>Ingredients<\/h3>\n<ul>\n<li>1\u00bd ounces genever (I used Boomsma)<\/li>\n<li>\u00bc ounce green Chartreuse<\/li>\n<li>3 ounces tonic water<\/li>\n<li>Cucumber slices and fresh mint, for garnish<\/li>\n<\/ul>\n<h3>Instructions<\/h3>\n<p>To prepare the cocktail, fill a rocks glass with ice. Add genever. Float the Chartreuse on top, then garnish with abandon. Serve with crudit\u00e9s, almonds, olives, fruit.<\/p>\n<p><center><a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2015\/09\/GCoF_MdmFro_2.jpg\"><img decoding=\"async\" class=\"aligncenter size-full wp-image-23860\" src=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2015\/09\/GCoF_MdmFro_2.jpg\" alt=\"GCoF_MdmFro_2\" width=\"600\" height=\"400\" srcset=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2015\/09\/GCoF_MdmFro_2.jpg 600w, https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2015\/09\/GCoF_MdmFro_2-300x200.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/a><\/center><\/p>\n<h3>From my Tasting Notebook: Chabichou du Poitou<\/h3>\n<p><strong>Appearance:<\/strong> imagine a mochi ball cheesecake<br \/>\n<strong>Aroma:<\/strong> yogurt, bread, wet hay<br \/>\n<strong>Taste\/Texture:<\/strong> I love how the fudgy middle yields to a cream line just below the rind, which is veil thin. As the cheese relaxes, the cream line melts, weeps a little. Ah! I taste a rush of damp hay, butter, yeast, black pepper on the finish. It\u2019s like a rainy fall walk in the country while eating a butter sandwich.<br \/>\n<strong>Pairing Ideas:<\/strong> Cucumber, mint, and marcona almonds. Honey and Dates. Crumbled atop saut\u00e9ed cabbage or greens. Woven into scrambled eggs. Needs a crisp white wine (Sancerre).<\/p>\n<hr>\n<p>Sainte-Maure was soft-spoken, more fragile. He reclined on the couch in his gray fur coat and murmured in his sleep about a salad. \u201cPistachios,\u201d he whispered, his whiskers twitching, \u201capples, grapes.\u201d<\/p>\n<p>I darted into the kitchen and rummaged for my mandoline. A cheese so delicate requires a salad of thin shavings, I think. I am in a phase of shaving everything (now, don\u2019t take that the wrong way). Using a mandoline, I shredded cucumbers and apples, a few green onions, and then I tossed these with greens and some lemon. Nothing more.<\/p>\n<p><center><a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2015\/09\/GCoF_MdmFro_3.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-23862\" src=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2015\/09\/GCoF_MdmFro_3.jpg\" alt=\"GCoF_MdmFro_3\" width=\"600\" height=\"400\" srcset=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2015\/09\/GCoF_MdmFro_3.jpg 600w, https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2015\/09\/GCoF_MdmFro_3-300x200.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/a><\/center><\/p>\n<p>Instead of adding pistachios on top, I climbed into the fridge to root out a jar of pistachio butter. The inspiration came from a salad I once ate that was served on a swirl of homemade pistachio butter\u2014I love the memory of the fork tines catching on a little bit of that cream as I swept up each bite of salad.<\/p>\n<p><center><\/p>\n<h2><a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/recipes\/saint-maure-de-touraine-salad-with-apples-and-pistachio-butter\" target=\"_blank\" rel=\"noopener\">Sainte-Maure de Touraine Salad with Apples and Pistachio Butter<\/a><\/h2>\n<p><\/center><\/p>\n<p><em>You can buy prepared pistachio butter, which I used initially. Then I tried making my own using a recipe from <a href=\"www.coffeeandquinoa.com\/2013\/04\/homemade-pistachio-butter\/\" target=\"_blank\" rel=\"noopener\">Coffee and Quinoa<\/a>. All you have to do is combine a cup of pistachios with honey in a food processor \u2013 add some coconut oil along the way to smooth things out. The results are delicious, but I didn\u2019t achieve quite the same ultra creamy consistency I yearned for. Just sayin\u2019.<\/em><\/p>\n<h3>Ingredients<\/h3>\n<ul>\n<li>&frac12; green apple, thinly sliced<\/li>\n<li>1 celery stalk, thinly sliced<\/li>\n<li>1 green onion, thinly sliced<\/li>\n<li>2 handfuls of mixed greens<\/li>\n<li>half a lemon<\/li>\n<li>sea salt,\/li>\n<li>dill and mint, for garnish<\/li>\n<li>handfuls of grapes<\/li>\n<li>4 tablespoons pistachio butter<\/li>\n<\/ul>\n<h3>Instructions<\/h3>\n<p>Toss apple slices, celery, green onion, and greens in a bowl with lemon and sea salt. Mix with your hands. Serve on a plate you have prepared with a good shmear of pistachio butter. The rind is like damp crepe paper. The flavors are delicate&mdash;like eating a cheese made of rain. Or baby tears.<br \/>\n<strong>Pairing ideas:<\/strong> Blackberry or blueberry jam, oaty crackers.
