Our mission? To hand down tips and tricks on how to cook with and pair French goat\u2019s milk cheeses! In this post, Anne Maxfield of the <a href=\"www.accidental-locavore.com\" target=\"_blank\">Accidental Locavore<\/a> whips up some fine treats and accompaniements with and for Crottin de Champcol and Pico. Missed Thursday&#8217;s post from <a href=\"http:\/\/www.dontbelieveinjetlag.com\/\" target=\"_blank\">Don&#8217;t Believe in Jet Lag<\/a> on Tomme de Ch\u00e8vre Bethmale and Valen\u00e7ay? <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/blog\/shaking-chevre-tomme-de-chevre-bethmale-valencay\" target=\"_blank\">Click here and salivate!<\/a><\/em><\/p>\n<hr>\n<p>Finally in receipt of my ch\u00e8vre (courtesy of <a href=\"goatcheesesoffrance.com\/\" target=\"_blank\">Goat Cheeses of France<\/a>), the tangy Pico and some classic Crottin de Champcol, the <a href=\"www.accidental-locavore.com\" target=\"_blank\">Accidental Locavore<\/a> needed to come up with a good recipe for them. Normally this just would have been some fun time in the kitchen with a good dinner as the result, but since these both were fairly strong, specific ch\u00e8vres, it took some time to figure out how best to showcase them.<\/p>\n<p>I love mac and cheese and Bobby Flay\u2019s <a href=\"http:\/\/www.accidental-locavore.com\/2010\/10\/recipe-cauliflower-gratin-with-goat-cheese\/\" target=\"_blank\">cauliflower gratin with goat cheese<\/a> and started envisioning a hybrid of the two. Maybe roasting the cauliflower first, to get it caramelized, and then mixing in the ch\u00e8vre and pasta, with some homemade bread crumbs to give it a little crunch. The sweetness of the roasted cauliflower would work well with the pungency of the goat cheeses. My only fear was that using strictly the Pico and the Crottin would be too pungent, so I added a fresh, mild domestic ch\u00e8vre. This made a big dish, serving 4-6.<\/p>\n<p><center><\/p>\n<div>\n<h2><a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/recipes\/trois-chevres-mac-cheese\" target=\"_blank\">Trois Ch\u00e8vres Mac and Cheese<\/a><\/h2>\n<\/div>\n<p><\/center><\/p>\n<div id=\"attachment_23967\" style=\"width: 550px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2015\/09\/GCoF_Maxfield_1.jpg\"><img fetchpriority=\"high\" decoding=\"async\" aria-describedby=\"caption-attachment-23967\" class=\"size-full wp-image-23967\" src=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2015\/09\/GCoF_Maxfield_1.jpg\" alt=\"Pre-bake\" width=\"540\" height=\"360\" srcset=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2015\/09\/GCoF_Maxfield_1.jpg 540w, https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2015\/09\/GCoF_Maxfield_1-300x200.jpg 300w\" sizes=\"(max-width: 540px) 100vw, 540px\" \/><\/a><p id=\"caption-attachment-23967\" class=\"wp-caption-text\"><small>Pre-bake<\/small><\/p><\/div>\n<h3>Ingredients:<\/h3>\n<p><strong>Cauliflower:<\/strong><\/p>\n<ul>\n<li>1 small head of cauliflower cut into small florets<\/li>\n<li>2 tablespoons olive oil<\/li>\n<li>Salt and pepper<\/li>\n<\/ul>\n<p><strong>Mornay Sauce:<\/strong><\/p>\n<ul>\n<li>3 cups whole milk<\/li>\n<li>\u00bd cup unsalted butter<\/li>\n<li>\u00bd cup flour<\/li>\n<li>Salt and pepper to taste (white pepper if you have it)<\/li>\n<li>\u00bd teaspoon freshly grated nutmeg<\/li>\n<li>2 \u00bd ounces fresh, mild goat cheese (about \u00be&#8221; slice from a log)<\/li>\n<li>2 Crottin de Champcol, cut into chunks<\/li>\n<\/ul>\n<p><strong>Mac and Cheese<\/strong><\/p>\n<ul>\n<li>2 cups elbow macaroni<\/li>\n<li>Butter for greasing the pan<\/li>\n<li>\u00bd wheel of Pico, sliced into thin wedges<\/li>\n<li>\u00be cup breadcrumbs<\/li>\n<\/ul>\n<h3>Instructions<\/h3>\n<ol>\n<li>Preheat the oven to 400\u00b0F. In a large bowl, toss the cauliflower with the olive oil, salt, and pepper until well coated. Roast on a baking sheet for 25-30 minutes, turning after 15 minutes, until nicely browned. Remove from oven and set aside. If you\u2019re going to cook the mac and cheese right away, turn the oven down to 350\u00b0F.<\/li>\n<li>While the cauliflower is cooking, bring a large pot of well-salted water to a boil and cook the elbow macaroni for about 10-12 minutes, until al dente. Drain and set aside.<\/li>\n<li>Heat the milk in a medium-sized pot until warm, but not bubbling, about 4 minutes. Remove from heat. In a large, heavy pot, melt the butter over medium heat. When it\u2019s melted, add the flour and whisk constantly until the mixture turns light brown, about 3 minutes. Turn the heat down to very low.<\/li>\n<li>Slowly pour in the warm milk, about 1 cup at a time, whisking constantly. It will get very thick and gradually thin out when all the milk has been added. Once all the milk has been added, raise the heat to medium and keep whisking. After about 3 minutes, the sauce should thicken again. If it coats a spoon, you\u2019re good!<\/li>\n<li>Stir in the nutmeg, salt, and pepper. Start adding the cheese, stirring until it\u2019s melted. When all the cheese has been incorporated, taste and adjust the seasonings.<\/li>\n<li>Remove the pot from the heat and add in the cooked elbow macaroni. Stir to combine. Add the roasted cauliflower and toss until evenly coated.<\/li>\n<li>With the butter, lightly grease a large gratin pan. Add the mac and cheese mixture. Sprinkle with the breadcrumbs and then dot the top with the wedges of Pico. This is a terrific year for apples and there are literally thousands of them, ripe for the picking. I grabbed a bunch of Romes and Macintoshes from the course and made a simple relish for the cheeses:<\/p>\n<p><center><\/p>\n<div>\n<h2><a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/recipes\/local-apple-relish\" target=\"_blank\">Local Apple Relish<\/a><\/h2>\n<\/div>\n<p><\/center><\/p>\n<p><center><a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2015\/09\/AppleRelish_rcp1.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-23965\" src=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2015\/09\/AppleRelish_rcp1.jpg\" alt=\"AppleRelish_rcp\" width=\"540\" height=\"360\" srcset=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2015\/09\/AppleRelish_rcp1.jpg 540w, https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2015\/09\/AppleRelish_rcp1-300x200.jpg 300w\" sizes=\"(max-width: 540px) 100vw, 540px\" \/><\/a><\/center><\/p>\n<h3>Ingredients<\/h3>\n<ul>\n<li>\u00bd cup of sugar, more or less depending on your apples<\/li>\n<li>\u00bc cup cider vinegar<\/li>\n<li>Salt<\/li>\n<li>1 \u00bd pounds tart, crisp apples, peeled and cut into \u00bd&#8221; chunks<\/li>\n<li>\u00bd teaspoon freshly grated ginger<\/li>\n<\/ul>\n<h3>Instructions:<\/h3>\n<ol>\n<li>In a medium-sized pot over medium heat, heat the sugar and vinegar, stirring to dissolve.<\/li>\n<li>Stir in the apples and cook for about 5 minutes, until the apples are cooked but still hold their shape.
