As anyone who\u2019s sipped a piping brew between bites of ricotta cheesecake or a mascarpone-stuffed confection can tell you, coffee and cheese can sing, sing, sing.<\/p>\n<p>\u201cYou put cream in coffee, so why not put coffee on cream?\u201d says <a href=\"http:\/\/beehivecheese.com\/\" target=\"_blank\" rel=\"noopener\">Beehive Cheese<\/a> co-founder Pat Ford. Such was the rationale behind the company\u2019s signature <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-library\/Barely-Buzzed\" target=\"_blank\" rel=\"noopener\">Barely Buzzed<\/a>, a creamy Irish-style aged cheddar made with Jersey cow\u2019s milk and rubbed with crushed espresso beans and fragrant lavender buds.<\/p>\n<p>\u201cWhen we first introduced it here in Utah\u2014a pretty conservative state\u2014[people] turned up their noses,\u201d Ford says of the 2005 debut. \u201cThen they tasted it and said, Oh, my gosh! As with a wine or beer pairing, neither coffee nor cheese should overpower the other. Mild roasts complement easygoing cheeses; deeper roasts bond with more assertive cheeses. In general, milky, creamy, fatty varieties play well\u2014especially with earthy Indonesian coffees or fruity, citrusy Ethiopians, which recall classic cheese accoutrements such as jam and stone fruit.<\/p>\n<p>\u201cFind similarities or contrasts,\u201d says Will Frischkorn, co-owner of <a href=\"http:\/\/curedboulder.com\/\" target=\"_blank\" rel=\"noopener\">Cured<\/a>, a gourmet shop that shares walls with <a href=\"http:\/\/www.boxcarcoffeeroasters.com\/\" target=\"_blank\" rel=\"noopener\">Boxcar Coffee Roasters<\/a> in Boulder, Colo. The butterscotch sweetness of aged gouda frolics with toasty coffees; the bite of slightly sharp cheddar matches medium roasts and espresso. Funkier cheeses find comfort with coffees boasting bold notes.<\/p>\n<p>Not surprisingly, eating blue cheese with java is a universal no-no. \u201cAny cheese with the slightest acidity [doesn\u2019t] work with coffee,\u201d says Neal Corl, chef-in-residence at <a href=\"http:\/\/ristrettoroasters.com\/\" target=\"_blank\" rel=\"noopener\">Ristretto Roasters<\/a> in Portland, Ore., of a recent coffee-plus-cheese event. \u201cEven buffalo mozzarella seems too acidic.\u201d<\/p>\n<p>Unlike happy hour beverages, coffee adds a unique dimension: temperature contrast. Pop a piece of cheese, sip hot Joe, and savor a textural transformation. Oh, yeah, we melt with you.<\/p>\n<h2>How to Taste<\/h2>\n<p>First, make sure that the coffee is not going to be so blisteringly hot that you\u2019ll burn yourself if you take a big sip. \u201cI always tell people to take a bite of the cheese first and start chewing,\u201d says Andrea Robinson, a coffee pro (and sommelier) who represents Nespresso. \u201cThen, as you\u2019re starting to swallow, take a sip of the coffee. Other cheese styles showcasing creamy, milky sweetness, such as soft, young gouda or triple cr\u00e8mes, ease taste buds into coffee pairings, says Rocco Rainone, an American Cheese Society Certified Cheese Professional and manager of <a href=\"http:\/\/www.dibruno.com\/\" target=\"_blank\" rel=\"noopener\">Di Bruno Brothers<\/a>\u2019 Ninth Street location in Philadelphia, which hosts a weekly Sunday Breakfast Club coffee-cheese tasting. He chooses house blends for novice drinkers. \u201cThey offer a little bit of everything on the taste spectrum to appeal to a wide audience. They\u2019re also not as expensive as single varietals.\u201d<\/p>\n<p><strong><a href=\"<a href=\" target=\"_blank\" rel=\"noopener\">Beehive Cheese Co. Barely Buzzed<\/a><\/strong> + <em>Boxcar Coffee Roasters Stella Espresso<\/em><br \/>\n<strong><a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-library\/Mt-Tam\" target=\"_blank\" rel=\"noopener\">Cowgirl Creamery Mt. In 2008 the shop was asked for a cheese to accompany the chain\u2019s new Pike Place Roast, a chocolaty medium roast. \u201cWe all agreed,\u201d says Beecher\u2019s Julie Riendl. \u201cOur No Woman cheese, flavored with Jamaican jerk seasoning, was the best pairing.\u201d Also consider contrasting slightly firmer yet still creamy and rich cheeses with coffees showcasing berry and citrus notes. Sean Gartrell of <a href=\"http:\/\/www.consciouscoffees.com\/\" target=\"_blank\" rel=\"noopener\">Conscious Coffees<\/a> in Boulder, Colo., enjoys unwashed Ethiopia Yirgacheffe or Sidamo single origins with aged sheep\u2019s milk gouda, as the coffee\u2019s high acidity and citrus notes dance with the sweet cheese, \u201clike a blueberry muffin,\u201d Gartrell says.
