That\u2019s right&mdash;for the past few months, Kraft has been sneakily swapping the artificial dyes (yellow dye 5 and 6) used in their famous blue-boxed mac and cheese with all-natural spices: paprika, turmeric, and annatto (the lattermost used to color orange cheddars <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-bites\/cheddar-dye\" target=\"_blank\">for a couple hundred years<\/a>).<\/p>\n<div style=\"float: left;margin-left: 10%\"><a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2016\/03\/kraft-mac-and-cheese-225.jpg\"><img fetchpriority=\"high\" decoding=\"async\" class=\"size-medium wp-image-26219\" src=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2016\/03\/kraft-mac-and-cheese-225-203x300.jpg\" alt=\"How Kraft has changed\" width=\"203\" height=\"300\" srcset=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2016\/03\/kraft-mac-and-cheese-225-203x300.jpg 203w, https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2016\/03\/kraft-mac-and-cheese-225.jpg 225w\" sizes=\"(max-width: 203px) 100vw, 203px\" \/><\/a><br \/>\nThe box of Kraft gone by.<\/div>\n<div style=\"float: right;margin-right: 10%;text-align: right\"><a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2016\/03\/KMC_Box_NoBackground-e1458333610536.jpg\"><img decoding=\"async\" class=\"size-medium wp-image-26216\" src=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2016\/03\/KMC_Box_NoBackground-e1458333610536-198x300.jpg\" alt=\"New but still blue\" width=\"198\" height=\"300\" srcset=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2016\/03\/KMC_Box_NoBackground-e1458333610536-198x300.jpg 198w, https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2016\/03\/KMC_Box_NoBackground-e1458333610536-675x1024.jpg 675w, https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2016\/03\/KMC_Box_NoBackground-e1458333610536.jpg 1051w\" sizes=\"(max-width: 198px) 100vw, 198px\" \/><\/a><br \/>\nThe new Kraft Blue Box, now with a check list.<\/div>\n<div style=\"clear: both; margin-bottom: 10px;\"><\/div>\n<p>&#8220;As we considered changing the ingredients of our classic Blue Box, we did so knowing we had to maintain our iconic look, taste and texture,&#8221; <a href=\"http:\/\/newscenter.kraftfoodsgroup.com\/mobile.view?c=253200&#038;v=203&#038;d=1&#038;id=2146435\" target=\"_blank\">says<\/a> Greg Guidotti, Kraft Heinz&#8217;s vice president of meals. &#8220;We&#8217;d invite Americans to try our new recipe, but they most likely already have.&#8221; The idea was to do a \u201cblind taste test\u201d by replacing the boxes on the shelves and scanning for a reaction before the reveal. \u201cThe comments are no more or no less,\u201d <a href=\"http:\/\/www.post-gazette.com\/business\/pittsburgh-company-news\/2016\/03\/07\/Kraft-Heinz-moves-quietly-to-change-Mac-Cheese-recipe-pittsburgh\/stories\/201603070100\" target=\"_blank\">he concluded<\/a>.<\/p>\n<p>While this has been <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-bites\/kraft-no-longer-dye\" target=\"_blank\">a long time coming<\/a>, many feared the change by Kraft, believing the swap in ingredients would lead to a sharp change in taste and texture. Kraft has made this idea the leading point in its latest advertising campaign with the slogan, \u201cIt changed. But it hasn\u2019t.\u201d The most interesting thing about this shift is how it is entirely for the consumer. You\u2019d only be able to tell something was different if you looked on the back of the box&mdash;not even the impressive 1,710 mg of sodium (72% of your recommended daily intake) per box has been altered.<\/p>\n<p>Kraft isn&#8217;t the first company to take the step away from artificial ingredients. Due to public outcry, companies like <a href=\"http:\/\/www.npr.org\/sections\/thesalt\/2014\/02\/06\/272455631\/subway-phasing-out-bread-additive-after-blogger-flags-health-concerns\" target=\"_blank\">Subway<\/a> have also switched over to ensuring natural ingredients are all that can be found in their food. Subway\u2019s case was a little more severe as they were choosing to strengthen their bread with azodicarbonamide, an additive also found in yoga mats and shoe rubber.<\/p>\n<p>No matter what has been put in the product, it&#8217;s always satisfying to see a company stepping up to make it better for the consumer. Kraft had also announced they would be switching to using cage-free eggs, a really important step for such a large corporation. So, here\u2019s to the evolution of Kraft mac and cheese&mdash;may the bright orange gooeyness carry me to my rest.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Crafty Kraft crafting new Kraft.
