{"id":26254,"date":"2015-09-08T17:23:31","date_gmt":"2015-09-08T21:23:31","guid":{"rendered":"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/?p=26254"},"modified":"2016-03-22T17:24:11","modified_gmt":"2016-03-22T21:24:11","slug":"bushel-buddies","status":"publish","type":"post","link":"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/bushel-buddies\/","title":{"rendered":"Cheese Plate: Bushel Buddies"},"content":{"rendered":"<p>Sheri LaVigne\u2019s love of dairy stems from her childhood spent on a small farm near Albuquerque, N.M. \u201cWe had one goat that provided milk for drinking and making butter, fresh cheese, and ice cream,\u201d she says. \u201cI knew how to milk her before I knew how to tie my shoes.\u201d LaVigne headed east to New York for art school and also traveled to France, sampling stinky cheese for the first time. In 2005, she moved to Seattle, where she couldn\u2019t find anything quite like the store she had frequented in Brooklyn: the <a href=\"http:\/\/bedfordcheeseshop.com\/\" target=\"_blank\">Bedford Cheese Shop<\/a>.<\/p>\n<p>So LaVigne took matters into her own hands, opening <a href=\"http:\/\/calfandkid.com\/\" target=\"_blank\">The Calf &#038; Kid<\/a> in the city\u2019s Capitol Hill neighborhood in 2010. To toast the season&mdash;and to celebrate the shop\u2019s fifth anniversary and the pending debut of her cheese bar, <a href=\"https:\/\/www.facebook.com\/cultureclubcheesebar\" target=\"_blank\">Culture Club<\/a>&mdash;we asked LaVigne to assemble a pleasing plate of cheeses that play well with Washington\u2019s top crop, apples.<\/p>\n<p>\u201cWe have almost all varieties available here year-round,\u201d LaVigne says. \u201cWe are lucky ponies.\u201d (In fact, the state produces well over half of the apples in the US.) She slathers a full wheel of the Vermont stunner with chutney, then bakes it in croissant dough. \u201cIt\u2019s the most delicious hot mess this side of the Mississippi,\u201d she says.<\/p>\n<hr>\n<h2>2. Rheba<\/h2>\n<ul style=\"list-style-type: none;\">\n<li><strong>Maker:<\/strong> <a href=\"http:\/\/tietonfarmandcreamery.com\/\" target=\"_blank\">Tieton Farm &#038; Creamery<\/a><\/li>\n<li><strong>Origin:<\/strong> Tieton, Wash.<\/li>\n<li><strong>Milk:<\/strong> Pasteurized sheep&#8217;s and goat&#8217;s milk<\/li>\n<\/ul>\n<div>\n<div style=\"float: left; font-size: 150%; margin-top: -7px;\"><strong>+<\/strong><\/div>\n<div style=\"margin-left: 20px;\">\n<h3><em><a href=\"http:\/\/tietonciderworks.com\/our-cider\/about-our-cider\/#cidermaker\" target=\"_blank\">Tieton Cider Works Cidermaker&#8217;s Reserve<\/a><\/em><\/h3>\n<\/div>\n<\/div>\n<p>The mixed-milk \u201cRheba is slightly funky, with a fat, creamy mouthfeel that coats the tongue deliciously,\u201d LaVigne says. \u201cThe cider tastes of bittersweet, tart apple and a bit of wood&mdash;it\u2019s strong enough to play with the deep, sweet milk of the cheese.\u201d<\/p>\n<hr>\n<h2>3. <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-library\/Stichelton\" target=\"_blank\">Stichelton<\/a><\/h2>\n<ul style=\"list-style-type: none;\">\n<li><strong>Maker:<\/strong> <a href=\"http:\/\/www.stichelton.co.uk\/\" target=\"_blank\">Collingthwaite Farm<\/a><\/li>\n<li><strong>Origin:<\/strong> Nottinghamshire, England<\/li>\n<li><strong>Milk:<\/strong> Raw cow&#8217;s milk<\/li>\n<\/ul>\n<div>\n<div style=\"float: left; font-size: 150%; margin-top: -7px;\"><strong>+<\/strong><\/div>\n<div style=\"margin-left: 20px;\">\n<h3><em><a href=\"http:\/\/shop.bluechairfruit.com\/products\/strawberry-apple-butter\" target=\"_blank\">Blue Chair Fruit Strawberry-Apple Butter<\/a><\/em><\/h3>\n<\/div>\n<\/div>\n<p>LaVigne loves this brash blue, \u201cbut it can be a bit too much for some people,\u201d she says. \u201cThis sweet, slightly acidic jam works very well to calm down the rich cave-floor notes and heavy mouthfeel of the cheese.\u201d<\/p>\n<hr>\n<h2>4. Fresh Chevre<\/h2>\n<ul style=\"list-style-type: none;\">\n<li><strong>Maker:<\/strong> <a href=\"http:\/\/yarmuthfarms.com\/\" target=\"_blank\">Yarmuth Farm Cheese<\/a><\/li>\n<li><strong>Origin:<\/strong> Darrington, Wash.<\/li>\n<li><strong>Milk:<\/strong> Pasteurized goat&#8217;s milk<\/li>\n<\/ul>\n<div>\n<div style=\"float: left; font-size: 150%; margin-top: -7px;\"><strong>+<\/strong><\/div>\n<div style=\"margin-left: 20px;\">\n<h3><em>Braeburn apple slices<\/em><\/h3>\n<\/div>\n<\/div>\n<p>\u201cThis is the lightest, fluffiest fresh cheese with a perfect balance of tangy and sweet,\u201d LaVigne says. \u201cIt naturally has tons of lemon and citrus notes, so it\u2019s perfect for Braeburns, which tend to be a bit heavier and sweeter in flavor. The pairing is simple, but I love it.\u201d Drizzled with raw honey or topped with crumbled bacon-caramel popcorn, the bite is a crowd-pleaser, she adds.<\/p>\n<hr>\n<h2>5.
