I&#8217;ve occasionally ordered soy milk in my lattes, but I was surprised to walk into Dunkin&#8217; Donuts and find that instead of soy milk, they <a href=\"http:\/\/www.dunkindonuts.com\/DDBlog\/2014\/09\/you_ve_asked_andwe.html#sthash.pZjW7w9k.dpbs\" target=\"_blank\">carry almond milk<\/a>. This sweet, nut-derived concoction has skyrocketed in popularity over the past few years and has become America&#8217;s favorite non-dairy alternative.<\/p>\n<p>We love almond milk so much, in fact, that many dairy farmers are feeling pressure to replace cow grazing crops with almond trees. According to market research company <em>IRi<\/em>, Americans bought $890 million dollars of almond milk last year (compared to only $286 million of soy milk). &#8220;The economics for the trees has been very good,&#8221; dairy farmer Richard Wagner told <cite><a href=\"http:\/\/www.bloomberg.com\/news\/articles\/2016-09-13\/dairy-farmers-think-almond-milk-is-bogus-but-americans-love-it\" target=\"_blank\">Bloomberg<\/a>. &#8220;Dairymen have a decision.&#8221;<\/p>\n<p>Many dairy farmers are growing almonds and <a href=\"http:\/\/www.marketplace.org\/2016\/09\/16\/world\/dairy-farmers-see-organic-label-way-pay-bills\" target=\"_blank\">going organic<\/a> as a pragmatic response to the recent <a href=\"http:\/\/www.cnbc.com\/2016\/08\/26\/quantitative-cheesing-weak-cheese-prices-led-to-a-mini-government-bailout.html\" target=\"_blank\">drop in dairy demand<\/a> and subsequent government bailout.<\/p>\n<p>Some argue that almond milk shouldn&#8217;t even be called milk. The popular brand Almond Breeze contains only about 2 percent almonds, and the rest of the beverage consists of mostly water, sugar, and starches. In addition to being made into &#8220;milk&#8221;, almonds are used in producing other dairy substitutes. We already know that almonds <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/recipes\/grilled-romaine-salad-almonds-goat-cheese-caramelized-balsamic-vinaigrette\" target=\"_blank\">pair well with cheese<\/a>&mdash;but how does the nut actually <em>become<\/em> cheese?<\/p>\n<div id=\"attachment_20623\" style=\"width: 310px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2015\/05\/grilledromaine_internal.jpg\"><img fetchpriority=\"high\" decoding=\"async\" aria-describedby=\"caption-attachment-20623\" class=\"wp-image-20623 size-medium\" src=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2015\/05\/grilledromaine_internal-300x184.jpg\" alt=\"grilledromaine_internal\" width=\"300\" height=\"184\" srcset=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2015\/05\/grilledromaine_internal-300x184.jpg 300w, https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2015\/05\/grilledromaine_internal.jpg 600w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><p id=\"caption-attachment-20623\" class=\"wp-caption-text\">We love this salad with goat cheese and almonds, but can one really be a substitute for the other?<\/p><\/div>\n<p>Many people choose to make almond cheese at home. To do so, the almonds are soaked for about a day, then blended in a food processor, strained, and refrigerated overnight. Most <a href=\"http:\/\/rawmazing.com\/recipe\/raw-recipe-simple-almond-cheese\/\" target=\"_blank\">recipes<\/a> include blending in garlic or other savory components into the cheese itself. The result is something flavorful and cheese-like, but not truly cheesy. Almond cheeses tend to be firm and crumbly, having a texture and sharpness often compared to feta.<\/p>\n<p>However, some have succeeded in processing almond milk like animal milks. <a href=\"http:\/\/www.kite-hill.com\/\" target\"_blank\">Kite Hill<\/a>, a Whole Foods supplier, adds in cultures and enzymes so that nut milk ferments like the real thing. They produce soft-ripened &#8220;delicacies&#8221; and ricotta with various flavor profiles (they generally avoid using the term &#8220;cheese&#8221; in their branding). Terminology for these products is up for debate right now, because though the <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/blog\/z-cheese-nutrition-vegan-cheese\" target=\"_blank\">expansion<\/a> of the <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-talk\/vegan-cheese\" target=\"_blank\">vegan cheese market<\/a> is an ongoing
