It helps that it\u2019s a one-ingredient sweetener boasting trace minerals, micronutrients, and antioxidants\u2014a natural alternative to corn syrup and white sugar. As Runamok Maple co-founder Eric Sorkin puts it, \u201cIt\u2019s this wild-harvested food from a really specific regional area that is unlike anything else\u2014and it happens to be delicious.\u201d<\/p>\n<p>Vermont\u2014where Runamok is based\u2014is the top syrup producer in America. The Green Mountain State turned out almost two million gallons of the sticky stuff in 2016, about 47 percent of the country\u2019s total output. Around 4,000 Vermonters are employed by the industry, according to Matthew Gordon, executive director of the <a href=\"http:\/\/vermontmaple.org\/\" target=\"_blank\" rel=\"noopener noreferrer\">Vermont Maple Sugar Makers Association<\/a>. \u201cIt\u2019s how people understand their place and their heritage,\u201d he says. \u201cIt does spill off into the wider use of maple in restaurants and other products.\u201d<\/p>\n<p>Fresh maple creations flooding the market\u2014from infused and barrel-aged syrups to maple-tinged seltzers and spirits\u2014highlight its versatility. \u201cMaple\u2019s not just sweet; it also has flavor,\u201d says Katie Webster, author of the cookbook <em>Maple<\/em> (Quirk Books, 2015). \u201cI love to add that roundness, warmth, and nuttiness to sweet and savory recipes.\u201d<\/p>\n<p>To wit: A joint project between the University of Vermont and the Vermont Agency of Agriculture resulted in a \u201cmaple map,\u201d a flavor wheel of sorts that describes the range and intensity of flavors found in the amber liquid, including \u201ctoasted\u201d (burnt sugar, caramel), \u201cfruity\u201d (raisins, apricot), and \u201cearthy\u201d (grassy, hay). Sound familiar? (the country\u2019s second-highest syrup-producing state), recently released a line of infused syrups at the Winter Fancy Food Show in San Francisco. \u201cPure maple is a rather porous ingredient and it quickly takes on other flavors,\u201d explains CEO Mike Cobb. The brand\u2019s Madagascar Vanilla Infused Maple Syrup finds harmony with Sprout Creek Farm Madeleine, an aged raw goat\u2019s milk round. \u201cThe vanilla syrup complements the floral notes of Madeleine and tones down some of its more piquant flavors,\u201d Cobb adds.<\/p>\n<p>At Vermont\u2019s Runamok, Elderberry Infused Maple Syrup\u2014one of four bottles in the company\u2019s \u201cCheese Pairing Collection\u201d\u2014is a no-brainer with curds. Yet it\u2019s made by boiling maple syrup to evaporate more water before stirring it vigorously to achieve a thick, creamy texture. Eat it straight from the jar (I do!), smear it on a toasted English muffin, or dollop it over pancakes dotted with fresh ch\u00e8vre for breakfast bliss\u2014a suggestion from Al Wood of Wood\u2019s Pure Maple Syrup Co. in Randolph, Vt. Boost the wheat crackers\u2019 subtle maple undertones with Vermont Farmstead Cheese Company Vermont Maple Sriracha WindsorDale\u2014a pleasant, palate-cleansing heat soon eclipses the combo\u2019s candy sweetness for a balanced bite. Dori Ross, owner of Tonewood in Mad River Valley, Vt., meanwhile, offers maple flakes, cubes, and wafers. \u201cI think what\u2019s held maple back historically is that it\u2019s liquid and messy,\u201d she says. \u201cSolid forms lend themselves beautifully to pairing with cheese.
