So in 1947 the duo opened <a href=\"https:\/\/cortibrothers.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">Corti Brothers<\/a>, a small deli that was one of the only importers of foreign products in Northern California at the time. Seventy years later Frank\u2019s son, Darrell\u2014\u201cthe man who knows more about food and wine than anyone else in the world,\u201d says food writer Colman Andrews in Ruth Reichl\u2019s memoir, <cite>Comfort Me with Apples<\/cite> (Random House, 2001)\u2014owns the shop and travels the world to expand his knowledge. \u201cBeing around Darrell is quite an honor,\u201d says Corti Brothers operations manager Shaun Freeman.<\/p>\n<p>Freeman and his family, like many of the store\u2019s patrons, have been shopping there for generations. \u201cIt\u2019s a family tradition,\u201d he says. With over 140 different cheeses available on any given day and a staff who takes dairy education seriously (cheese experts are often brought in to instruct the team), Corti Brothers is a true NorCal curds destination.<\/p>\n<p><strong>culture:<\/strong> What\u2019s your go-to party cheese?<br \/>\n<strong>Shaun Freeman:<\/strong> Aged gouda, a nice double- or triple-cream brie, or <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-library\/Manchego\">Manchego<\/a> with quince paste. Manchego is a big crowd pleaser, [especially] with the sweetness of the quince paste\u2014[it becomes] very approachable.<\/p>\n<p><strong>culture:<\/strong> Do you have a favorite cheesy memory?<br \/>\n<strong>SF:<\/strong> Sitting in a park in Paris with my wife and a bottle of ros\u00e9 right after we got married. We went to a little fromagerie, bought a wide variety of cheeses and the bottle of wine, and put out a blanket in the park. I could live off cheese, bread, and wine.<\/p>\n<p><strong>culture:<\/strong> Do you have any cheese pet peeves?<br \/>\n<strong>SF:<\/strong> When people don\u2019t understand that cheese is a living product that\u2019s going to [grow] mold to a certain extent. As it ages, it [sprouts] mold.
