A former pro cyclist, he competed on the Tour for Team Garmin in 2008. During his racing days, he and his wife Coral lived in Girona, Spain, where they grew more passionate about cheese and wine and adored the small specialty food shops they frequented. When Frischkorn retired from the sport, the couple moved to Boulder and pursued their dream of running a food business. In August 2011, they opened Cured, and the following summer, Frischkorn introduced a fun culinary concept that combined his loves: the &#8220;Cured de France.&#8221;<\/p>\n\n\n\n<p>Cheeses and wines are carefully selected based on the various regions the cyclists ride through in the Tour. Over the past five years, the &#8220;Cured de France&#8221; has been a hit with Frischkorn&#8217;s customers (many of whom happen to be cyclists\u2014no surprise, given Boulder&#8217;s reputation as one of America&#8217;s fittest cities). Read on to check out this year&#8217;s pairings!<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-stage-1\">Stage 1<\/h2>\n\n\n\n<p>July 1\u20133<\/p>\n\n\n\n<p>Despite its name, this year&#8217;s Tour actually kicks off in D\u00fcsseldorf, Germany. A pairing of <strong>Alex\u2014<\/strong>an &#8220;incredible&#8221; washed-rind Alpine wheel from southern Germany that&#8217;s &#8220;dense, creamy, fruity, and rich with umami&#8221;\u2014and &#8220;the hugely guilty&#8221; <a href=\"https:\/\/schneider-weisse.de\/en\/node\/1\" target=\"_blank\" rel=\"noopener noreferrer\">Schneider<\/a><strong> Aventinus Weizen-Eisbock<\/strong> beer, is appropriate.&nbsp;<\/p>\n\n\n<div class=\"wp-block-image wp-image-30884 size-medium\">\n<figure class=\"alignleft\"><img decoding=\"async\" width=\"300\" height=\"192\" src=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2017\/06\/LeTrouduCru-300x192.jpg\" alt=\"Trou de Cru\" class=\"wp-image-30884\" srcset=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2017\/06\/LeTrouduCru-300x192.jpg 300w, https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2017\/06\/LeTrouduCru.jpg 600w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><figcaption class=\"wp-element-caption\"><em>Trou de Cru<\/em><\/figcaption><\/figure><\/div>\n\n\n<h2 class=\"wp-block-heading\" id=\"h-stage-2\">Stage 2<\/h2>\n\n\n\n<p>July 4\u20136<\/p>\n\n\n\n<p>The first wine in this year&#8217;s Cured de France is&nbsp;<a href=\"http:\/\/www.vins-lelievre.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">Domaine Lelievre<\/a>\u2019s &#8220;edgy, nervy&#8221;&nbsp;<strong>Gris de Toul Rose<\/strong>. The wine, which is produced in Lucey, France, is fitting given the riders are racing in the Grand Est region during this time. It&#8217;s paired with a classic Burgundian washed-rind <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-library\/Trou-de-Cru\" target=\"_blank\" rel=\"noopener noreferrer\"><strong>Trou de Cru<\/strong><\/a>, &#8220;a rich, umami laden nugget of joy.&#8221;<\/p>\n\n\n<div class=\"wp-block-image size-medium wp-image-30885\">\n<figure class=\"alignright\"><img decoding=\"async\" width=\"300\" height=\"214\" src=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2017\/06\/BrillatSavarin-300x214.jpg\" alt=\"Brillat-Savarin\" class=\"wp-image-30885\" srcset=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2017\/06\/BrillatSavarin-300x214.jpg 300w, https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2017\/06\/BrillatSavarin.jpg 600w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><figcaption class=\"wp-element-caption\"><em>Brillat-Savarin<\/em><\/figcaption><\/figure><\/div>\n\n\n<h2 class=\"wp-block-heading\" id=\"h-stage-3\">Stage 3<\/h2>\n\n\n\n<p>July 7\u20139<\/p>\n\n\n\n<p>The race moves deep into Burgundy country, so only a guilty pairing of Paul Pernot\u2019s opulent <strong>2015 Bourgogne Blanc Chardonnay <\/strong>and&nbsp;a demi<strong> <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-library\/Brillat-Savarin\" target=\"_blank\" rel=\"noopener noreferrer\">Brillat-Saverin<\/a><\/strong>&nbsp;triple cr\u00e8me&nbsp;will do. Frischkorn describes the baby Brillats as &#8220;perfect . . . luscious and creamy,&#8221; and he names Paul Pernot as one of Cured&#8217;s favorite Puligny-Montrachet producers.&nbsp;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-stage-4\">Stage 4<\/h2>\n\n\n\n<p>July 10\u201313<\/p>\n\n\n\n<p>For the midway point of the race, the cyclists fly to the Aquitaine region in western France, home to its largest city, Bordeaux. Cured is serving up&nbsp;<a href=\"http:\/\/www.chateau-couronneau.fr\/\" target=\"_blank\" rel=\"noopener noreferrer\">Chateau Couronneau<\/a>\u2019s<strong> Merlot Bordeaux Rouge <\/strong>with&nbsp;the customers&#8217; favorite&nbsp;sheep-milk<strong> Tomme Brulee<\/strong> from famed affineur <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/centerfold\/garmy-puits-dastier\" target=\"_blank\" rel=\"noopener noreferrer\">Rodolphe le Meunier<\/a>. &#8220;His Tomme Brulee is akin to Ardi Gasna, but unlike any sheep\u2019s milk cheese we\u2019ve ever experienced in its refinement,&#8221; explains Frischkorn. &#8220;Chateau Couronneau is one of the few biodynamic wineries in Bordeaux, and their Merlot-based red is an example of the incredible values that Bordeaux <em>can<\/em>&nbsp;offer when you hunt for them.&#8221;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-stage-5\">Stage 5<\/h2>\n\n\n\n<p>July 14\u201316<\/p>\n\n\n\n<p>The pairing for this stage happens to be Frischkorn&#8217;s personal favorite. <strong>Bleu de Berger<\/strong>, the lone blue cheese on this year&#8217;s Cured de France, is paired with Ch\u00e2teau Combel-La-Serre\u2019s<strong> Cahors Malbec<\/strong>. Made with Pyrenean sheep&#8217;s milk, Bleu de Berger is &#8220;beautiful [and a] slightly more restrained blue than, say, a Roquefort.&#8221; Meanwhile, this particular Malbec possesses a &#8220;bright, feminine, super energetic style&#8221; and actually works remarkably well with blues.&nbsp;<\/p>\n\n\n<div class=\"wp-block-image size-medium wp-image-30886\">\n<figure class=\"alignleft\"><img loading=\"lazy\" decoding=\"async\" width=\"300\" height=\"222\" src=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2017\/06\/stalbans-300x222.jpg\" alt=\"Vermont Creamery St. Albans\" class=\"wp-image-30886\" srcset=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2017\/06\/stalbans-300x222.jpg 300w, https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2017\/06\/stalbans.jpg 600w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><figcaption class=\"wp-element-caption\"><em>St. Albans<\/em><\/figcaption><\/figure><\/div>\n\n\n<h2 class=\"wp-block-heading\" id=\"h-stage-6\">Stage 6<\/h2>\n\n\n\n<p>July 17\u201320<\/p>\n\n\n\n<p>&#8220;From time to time, there is a region whose cheeses we just can\u2019t get here in the States in good condition,&#8221; says Frischkorn. Therefore, this stage showcases <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-library\/St-Albans\" target=\"_blank\" rel=\"noopener noreferrer\"><strong>St. Albans<\/strong><\/a>, a French-style goat milk cheese from <a href=\"http:\/\/www.vermontcreamery.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">Vermont Creamery<\/a>, alongside Paul-Henri Thillardon\u2019s &#8220;stunningly elegant&#8221; <strong>Moulin-\u00e0-Vent Beaujolais<\/strong>. &nbsp;<\/p>\n\n\n<div class=\"wp-block-image size-medium wp-image-30887\">\n<figure class=\"alignright\"><img loading=\"lazy\" decoding=\"async\" width=\"300\" height=\"243\" src=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2017\/06\/AbbayedeTamie-300x243.jpg\" alt=\"Abbaye de Tamie\" class=\"wp-image-30887\" srcset=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2017\/06\/AbbayedeTamie-300x243.jpg 300w, https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2017\/06\/AbbayedeTamie.jpg 600w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><figcaption class=\"wp-element-caption\"><em>Abbaye de Tamie<\/em><\/figcaption><\/figure><\/div>\n\n\n<h2 class=\"wp-block-heading\" id=\"h-stage-7\">Stage 7<\/h2>\n\n\n\n<p>July 21\u201322<\/p>\n\n\n\n<p>With the race in its final days, <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-library\/Abbaye-de-Tamie\" target=\"_blank\" rel=\"noopener noreferrer\"><strong>Abbaye de Tamie<\/strong><\/a>, one of Cured&#8217;s beloved funky cheeses from the Savoie region, is matched with one of the shop&#8217;s favorite summer wines, Jean Masson et Fils&#8217;<strong> Apremont Traditionnelle<\/strong>.&nbsp;&#8220;Think of mountain flowers and minerality captured in a bottle, and then think about finding another cold bottle of it quickly,&#8221; says Frischkorn.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-stage-8\">Stage 8<\/h2>\n\n\n\n<p>July 23<\/p>\n\n\n\n<p>As the cyclists pedal their way into the heart of Paris on their last day, kick back and enjoy some <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-library\/Fougerus\" target=\"_blank\" rel=\"noopener noreferrer\"><strong>Fougerus<\/strong><\/a>, a fern-adorned Brie-style cheese with\u2014what else?\u2014celebratory champagne. &#8220;Fougerus could be one of the most elegant wheels you\u2019ll ever drop on your table,&#8221; says Frischkorn.
