But within the last few years, the dish has suddenly sprung into national and international fame.<\/p>\n<p>While the rich meal has landed recognition in <a href=\"http:\/\/travel.cnn.com\/poutine-passion-canadas-favorite-comfort-food-makes-its-way-tokyo-254951\/\">Tokyo<\/a> and the <a href=\"https:\/\/www.theguardian.com\/lifeandstyle\/shortcuts\/2014\/sep\/07\/poutine-the-posh-chips-and-gravy-taking-over-the-world\" target=\"_blank\" rel=\"noopener\">United Kingdom<\/a>, its most notable rise has occurred in the U.S., where it\u2019s infiltrated New England and worked its way into cities scattered around the Canadian border. Chicago hosted a poutine festival that prided itself on \u201c<a href=\"https:\/\/www.facebook.com\/PoutineFest\/\">ruining your bikini bods.<\/a>\u201d Chefs in <a href=\"https:\/\/www.thrillist.com\/eat\/detroit\/best-poutine-in-detroit\" target=\"_blank\" rel=\"noopener\">Detroit<\/a> have developed inventive plays on the Canadian dish, including versions with duck confit gravy and spicy chorizo alongside the original fries-curd-gravy trifecta.<\/p>\n<p>Along with that increase in popularity, the dish has become a veritable Canadian icon. It was even<a href=\"http:\/\/www.npr.org\/2016\/03\/10\/469972493\/white-house-chef-to-serve-canadian-poutine-at-state-dinner\"> served at the White House<\/a> during Canadian Prime Minister Justin Trudeau\u2019s visit in 2016.<\/p>\n<h3>So how did the greasy guilty pleasure make it to the big times? According to Jake Edmiston of Toronto\u2019s <a href=\"http:\/\/nationalpost.com\/news\/canada\/the-dark-side-of-poutine-canada-taking-credit-for-quebec-dish-amounts-to-cultural-appropriation-academic-says\">National Post<\/a>, it was popularized by \u201cinventive Quebec chefs and a youth nightlife culture that appreciated poutine\u2019s virtues as a post-bar snack.\u201d Indeed, its reputation as a prime \u201c<a href=\"https:\/\/www.orbitz.com\/blog\/2017\/01\/11-tasty-drunk-foods-from-around-the-world\/\">drunk food<\/a>\u201d may have contributed to a late-night craze.<\/h3>\n<p>According to a <a href=\"http:\/\/www.cbc.ca\/2017\/we-are-the-best\/poutine-has-gone-from-rural-quebec-delicacy-to-national-icon-here-s-where-it-all-started-1.4164288\">CBC interview<\/a> with chef Ricardo Larriv\u00e9e and author Charles-Alexandre Th\u00e9or\u00eat, we can thank Martin Picard and Anthony Bourdain for poutine\u2019s national and international acclaim.<\/p>\n<p>Picard is a Canadian author, television personality, and chef at Montreal\u2019s Au Pied de Cochon, where he serves a foie gras-laced version. Bourdain, an American television personality, featured Picard\u2019s version in Montreal on his show in 2006. He also televised his visit to famous Montreal poutinerie La Banquise, describing his meal as \u201ca forbidden love.\u201d According to Th\u00e9or\u00eat, Picard\u2019s unique blend and Bourdain\u2019s worldwide audience thrust the dish into its new role as \u201ca world star.\u201d<\/p>\n<blockquote><p><strong>Poutine has spread into the literary realm, too. In <a href=\"https:\/\/www.barnesandnoble.com\/w\/the-biggest-poutine-in-the-world-andree-poulin\/1122615766\"><i>The Biggest Poutine in the World<\/i>,<\/a> a children\u2019s book, author Andree Poulin works the Quebecois specialty into the plot. The coming-of-age story features a protagonist who goes on a journey to build the biggest poutine. Let\u2019s hope the tale is fiction; otherwise the character will have to rival this 4,000-pound masterpiece.<\/strong><\/p><\/blockquote>\n<p>Still hungry?
