Mom always said, \u201cIt\u2019s what\u2019s on the inside that counts,\u201d but the truth is, appearance does matter. How else to explain why this fabulous cheese languished in the U.S. until the producer got the idea to coat it with herbs and flowers? Since then, the sluggish sales curve has spiked. Where\u2019s my lipstick?<br \/>\nWhen I first tasted this Austrian cow\u2019s milk cheese four years ago, its name was <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/blog\/cheese-chase-alpine-star-cheese\" target=\"_blank\" rel=\"noopener noreferrer\">Hubaner<\/a>. It was naked\u2014no flowery exterior\u2014but deliciously robust and meaty, with an aroma of brown butter and toasted walnuts. A few retailers willing to hand-sell an unknown Austrian cheese were carrying it, but customers weren\u2019t buying.<\/p>\n<blockquote><p><strong>\u201cYou never know why that is,\u201d says Jonathan Richardson of Columbia Cheese, the importer. \u201cBut we thought, what if we dressed it up and gave people a reason to buy it?\u201d<\/strong><\/p><\/blockquote>\n<p>Thickly cloaked in dried mountain herbs and flowers and rechristened Alp Blossom, the same cheese has been \u201cmassively successful,\u201d says Richardson. Who can resist this beauty?<\/p>\n<h3>The nine-pound wheel is produced at a cooperative creamery in Austria, from pasteurized milk gathered from small farms. The cheese is aged for about six months and then shipped just across the border to Germany where a woman applies the coating by hand.<\/h3>\n<p>It\u2019s primarily decorative; because the cheese is already mature and sold shortly thereafter, the herbs and flowers don\u2019t contribute much scent.&nbsp;But now the wheel stands out in a cheese case and Columbia is importing 200 a month. I can\u2019t think of a prettier cheese. More important, it\u2019s still delicious.<\/p>\n<p>The texture is satiny and more supple than many alpine cheeses\u2014a slice bends without breaking. The flavor is beefy and highly savory but not so concentrated that you\u2019re done after a few bites. I could snack on this cheese all day.<br \/>\nServe Alp Blossom with a dry Riesling, Gewurztraminer or Gr\u00fcner Veltliner. Beer fans, open a malty brew, like a brown ale, porter or doppelbock.
