But&nbsp;riesling&nbsp;isn\u2019t the only&nbsp;success story&nbsp;here; there are&nbsp;some 60 other varieties that grow along the shores of these&nbsp;oblong&nbsp;bodies of water.&nbsp;Among them, whites&nbsp;stand out, retaining their acidity to remain vibrant and nervy. Here are five to&nbsp;try.<span data-ccp-props=\"{}\">&nbsp;<\/span><\/p>\n<h3><span data-ccp-props=\"{}\">&nbsp;<\/span><b>Chardonnay<\/b><span data-ccp-props=\"{}\">&nbsp;<\/span><\/h3>\n<p>The&nbsp;wine&nbsp;darling of the world, chardonnay is in an unusual position in the Finger Lakes: it trails&nbsp;riesling&nbsp;in both popularity and abundance. That\u2019s&nbsp;partly&nbsp;because some&nbsp;pockets&nbsp;of the region are&nbsp;<i>too<\/i>&nbsp;cool to ripen&nbsp;chardonnay&nbsp;grapes&nbsp;well. But as vintners in Champagne realized long ago, tart chardonnay makes excellent sparkling wine. Try&nbsp;<a href=\"http:\/\/wiemer.com\/wine\/blanc-de-blanc-2009\/\" target=\"_blank\" rel=\"noopener\"><b>Herman<\/b><b>n J.&nbsp;<\/b><b>Wie<\/b><b>mer<\/b><b>&nbsp;<\/b><b>2009 Finger Lakes&nbsp;<\/b><b>Blanc de Blanc&nbsp;<\/b><b>Cuv\u00e9e<\/b><\/a>.&nbsp;Made entirely of chardonnay in the same method as Champagne, it\u2019s both toasty and lemony, with fine bubbles that cut through the wine\u2019s creamy texture. It\u2019s heavenly&nbsp;with a creamy, bloomy-rind cheese&nbsp;such as&nbsp;<a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-library\/St-Stephen\">St. Stephen<\/a> from&nbsp;the Hudson Valley\u2019s&nbsp;Four Fat Fowl.<span data-ccp-props=\"{}\">&nbsp;<\/span><\/p>\n<h3><span data-ccp-props=\"{}\">&nbsp;<\/span><b>Rkatsiteli<\/b><b>&nbsp;<\/b><span data-ccp-props=\"{}\">&nbsp;<\/span><\/h3>\n<p>Pronounced&nbsp;<i>er<\/i><i>&#8211;<\/i><i>kat<\/i><i>&#8211;<\/i><i>si<\/i><i>-TELL-<\/i><i>ee<\/i>, this grape was once the third most-planted in the world. Most of the acreage, however, was in the USSR and&nbsp;was&nbsp;plowed under during Mikhail Gorbachev\u2019s rule in the 1980s.&nbsp;The Finger Lakes boasts some thanks&nbsp;to Dr. Konstantin Frank, a viticulturist who&nbsp;emigrated&nbsp;to the US from Odessa&nbsp;in the 1950s. He started his own winery on the banks of Keuka Lake&nbsp;in 1962 and planted&nbsp;Rkatsiteli&nbsp;on the hunch that it would work in the cool climate, as it did back home. He was right:&nbsp;<a href=\"http:\/\/www.drfrankwines.com\/wine-detail.asp?WineType=1&amp;Wine=4\" target=\"_blank\" rel=\"noopener\"><b>Dr. Konstantin Frank 2016 Finger Lakes&nbsp;<\/b><b>Rkatsiteli<\/b><\/a>&nbsp;is&nbsp;a lean, nervy wine, a little like&nbsp;riesling&nbsp;but earthier and more herbal\u2014the sort to pour with&nbsp;herbed goat cheese,&nbsp;such as&nbsp;<a href=\"https:\/\/livelyrun.com\/our-cheese\/goat-cheeses\/\" target=\"_blank\" rel=\"noopener\">Fine Herbs&nbsp;Ch\u00e8vre<\/a>&nbsp;from Lively Run&nbsp;Goat Dairy&nbsp;on Seneca Lake&nbsp;nearby.<span data-ccp-props=\"{}\">&nbsp;<\/span><\/p>\n<h3><span data-ccp-props=\"{}\">&nbsp;<\/span><b>Gew<\/b><b>\u00fc<\/b><b>rztraminer&nbsp;<\/b><span data-ccp-props=\"{}\">&nbsp;<\/span><\/h3>\n<p>Wherever&nbsp;riesling&nbsp;thrives,&nbsp;gewurz, as it\u2019s often&nbsp;abbreviated,&nbsp;is sure to follow. Heady with rose-petal scents and spicy, lychee-like fruit flavors, it\u2019s not always easy to pair with food, though\u2014unless that food is cheese.&nbsp;(Gewurz&nbsp;needs richness&nbsp;to balance its full flavors.)&nbsp;In Alsace, where many vintners specialize in gew\u00fcrztraminer, <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-library\/Munster-Gerome\">Munster<\/a> is the go-to match. The funk of the cheese tames the sweet, spicy scents, and vice versa.&nbsp;Grab a bottle of&nbsp;<a href=\"http:\/\/www.keukaspringwinery.com\/doc\/2015_Dynamite_Gewurztraminer_tech_sheet_complete_correct.pdf\" target=\"_blank\" rel=\"noopener\"><b>Keuka Spring 2015 Dynamite Vineyard Gewurztraminer<\/b>&nbsp;<\/a>and&nbsp;a wedge of Munster&nbsp;d\u2019Alsace.&nbsp;For&nbsp;a&nbsp;more local&nbsp;choice,&nbsp;try&nbsp;Sprout Creek Farm <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-library\/Toussaint\">Toussaint<\/a>.<span data-ccp-props=\"{}\">&nbsp;<\/span><\/p>\n<h3><span data-ccp-props=\"{}\">&nbsp;<\/span><b>Gr\u00fcner<\/b><b>&nbsp;Veltliner<\/b><span data-ccp-props=\"{}\">&nbsp;<\/span><\/h3>\n<p>There isn\u2019t much of it grown&nbsp;in New&nbsp;York, but this Austrian grape is worth seeking out.&nbsp;<i>Gr\u00fcner<\/i>means \u201cgreen,\u201d and the&nbsp;wine\u2019s&nbsp;flavors often fall in this color spectrum\u2014think&nbsp;limes,&nbsp;lentils, or&nbsp;green&nbsp;peas\u2014with a hallmark whiff of white pepper.&nbsp;The&nbsp;<a href=\"http:\/\/www.fulkersonwinery.com\/index.cfm?method=storeproducts.showdrilldown&amp;productid=4C2AFC96-6B84-40FE-895C-B47302C848C2&amp;isMarketingURL=1\" target=\"_blank\" rel=\"noopener\"><b>Fulkerson 2014 Seneca Lake William&nbsp;<\/b><b>Vigne<\/b><b>&nbsp;<\/b><b>Gr\u00fcner<\/b><b>&nbsp;Veltliner<\/b><\/a>&nbsp;is named for the first Fulkerson to settle in New&nbsp;Amsterdam back in the early 1600s. It\u2019s terrific with<a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/recipes\/grilled-halloumi-shiitake-mushroom-marinade-truffle-honey-drizzle\"> halloumi<\/a>,&nbsp;especially&nbsp;when&nbsp;the cheese is&nbsp;grilled and doused in herb sauce. Or&nbsp;take a cue from the&nbsp;Austrians&nbsp;and whisk pumpkin seed oil&nbsp;into&nbsp;fresh cheese,&nbsp;then&nbsp;spread&nbsp;the mixture&nbsp;on whole-grain&nbsp;bread or seedy crackers.&nbsp;&nbsp;&nbsp;<span data-ccp-props=\"{}\">&nbsp;<\/span><\/p>\n<h3><span data-ccp-props=\"{}\">&nbsp;<\/span><b>Vignoles<\/b><span data-ccp-props=\"{}\">&nbsp;<\/span><\/h3>\n<p>Vignoles&nbsp;is a&nbsp;hybrid&nbsp;grape&nbsp;created by crossing two varieties together.&nbsp;Wondering which ones? Us too:&nbsp;Curiously, the parents of&nbsp;vignoles&nbsp;have been lost to history. What we do know is that it buds late&nbsp;(typically after&nbsp;spring frosts),&nbsp;does well in&nbsp;the cold, and is highly susceptible to&nbsp;<i>B<\/i><i>otrytis<\/i><i>&nbsp;<\/i><i>cinerea<\/i>, the special rot that\u2019s responsible for some of the greatest&nbsp;dessert&nbsp;wines in the world.&nbsp;<a href=\"http:\/\/www.anthonyroadwine.com\/shop-wine-detail.asp?WineType=4&amp;Wine=14\" target=\"_blank\" rel=\"noopener\"><b>Anthony Road 2015 Finger Lakes&nbsp;<\/b><b>Vignoles<\/b><\/a>&nbsp;is&nbsp;slightly&nbsp;sweet, filled with ripe peach and citrus flavors,&nbsp;yet&nbsp;simultaneously&nbsp;bright and fresh.
