He talks about it a lot\u2014 from the various pieces of farm equipment he\u2019s accumulated over the years, to the the steel-framed barn he and his wife Liz recently built to shelter the goats at their farm <\/span><a href=\"http:\/\/www.valleyviewcheese.com\/\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">Valley View<\/span><\/a><span style=\"font-weight: 400;\">, (the roof is covered with 84 solar panels, help generate electricity for the farm), and, of course,. In their creamery: milk tank and cheese vat: both steel. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">Steel is non-reactive and easy to keep clean, and for a cheesemaker both are paramount. Peter and Liz have been making goat cheese on her mother\u2019s farm in Topsfield, about 20 miles north of Boston, since the mid-90\u2019s. It\u2019s a micro-operation\u2014 they make about 6,000 pounds of cheese a year and sell most of it within a narrow radius of the farm. And they like it that way. \u201cIt\u2019s a community thing,\u201d says Liz, who grew up in Topsfield and \u201cworks full-time at Peter\u2019s hobby\u201d, she jokes. Peter, a native of neighboring Ipswich, also works as an investment advisor, tending to the farm and the cheese when he\u2019s not in the office.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-talk\/crowdfunding\">Mulhollands <\/a>are members of the <\/span><a href=\"http:\/\/macheeseguild.org\/\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">Massachusetts Cheese Guild<\/span><\/a><span style=\"font-weight: 400;\">, an industry group and host of the dinner, at <\/span><span style=\"font-weight: 400;\">Tremont 647<\/span><span style=\"font-weight: 400;\"> in Boston, where we met last month. One of Valley View\u2019s wheels, a ripe, mellow camembert-style called <\/span><b>New Meadows<\/b><span style=\"font-weight: 400;\">, was in good company as &nbsp;part of a cheese plate highlighting wedges from all over the state\u2014including the earthy <\/span><b>Karolina<\/b><span style=\"font-weight: 400;\">, a natural-rind tomme from <\/span><a href=\"http:\/\/www.couetfarm.com\/\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">Couet Farm<\/span><\/a><span style=\"font-weight: 400;\"> in Central Massachusetts, the dense and &nbsp;cakey <\/span><b>Eidolon <\/b><span style=\"font-weight: 400;\">from <\/span><a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/farm-animal\/dutch-belted-cows\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">The Grey Barn and Farm<\/span><\/a><span style=\"font-weight: 400;\"> on Martha\u2019s Vineyard.<\/span><\/p>\n<div id=\"attachment_31969\" style=\"width: 660px\" class=\"wp-caption alignleft\"><a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2017\/11\/eidalon-e1509559111878.jpg\"><img fetchpriority=\"high\" decoding=\"async\" aria-describedby=\"caption-attachment-31969\" class=\"wp-image-31969\" src=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2017\/11\/eidalon-e1509559111878.jpg\" alt=\"bay state\" width=\"650\" height=\"433\"><\/a><p id=\"caption-attachment-31969\" class=\"wp-caption-text\"><em><strong>The dense and cakey Eidolon from The Grey Barn and Farm on Martha\u2019s Vineyard.<\/strong><\/em><\/p><\/div>\n<p><span style=\"font-weight: 400;\">The cheese plate was just the beginning. Chef and owner Andy Husbands designed a family-style meal with cheese in every course. It was inspiring to see how an imaginative chef like Husbands put these lovely cheeses to use (I couldn\u2019t stop nibbling at skillet-roasted broccoli tiled with gooey melted Eidolon). <\/span><\/p>\n<p><span style=\"font-weight: 400;\">Massachusetts is a small state with a long dairy legacy, and, despite the challenges involved with dairy farming and cheesemaking in this corner of the world, it\u2019s one you can taste. <\/span><span style=\"font-weight: 400;\">On Saturday, November 4, the Massachusetts Cheese Guild hosts its <\/span><a href=\"http:\/\/macheesefest.org\/\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">fifth annual festival<\/span><\/a><span style=\"font-weight: 400;\"> at the <\/span><a href=\"http:\/\/macheesefestival.brownpapertickets.com\/\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">Somerville Armory<\/span><\/a><span style=\"font-weight: 400;\">. So much good cheese from all over the state will be there. Culture will be there.
