Laurie Andrighetto was hired to assist in the San Carlos cheese department shortly thereafter, growing it into one of the store\u2019s most successful areas. Today she works as the cheese buyer for both shops. Each week Bianchini\u2019s Market brings in a cheese expert to sample wheels and discuss the making process. Andrighetto\u2019s passion for quality curds is evident in the wide selection (at least 500 different wedges and wheels) she offers as well as in numerous awards she\u2019s won over the years (recently she visited Switzerland through Adopt An Alp). \u201cWe have so many wonderful creameries here in California,\u201d Andrighetto says. \u201cBut I also try to find unique cheeses as well. I\u2019m always bringing in something new and different.\u201d<\/p>\n<p><span style=\"color: #ff6600;\"><strong>culture:<\/strong><\/span> Do you have a favorite cheese?<\/p>\n<p><strong>Laurie Andrighetto:<\/strong> I love La Tur, mixed-milk cheeses, <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-bites\/a-brief-guide-to-great-stinky-cheeses\">stinky cheeses<\/a>&#8230;I think my current favorite is Meredith Dairy marinated feta. It\u2019s out of Australia and a sheep-goat mix. You can so do so much with it. But my all-time-favorite cheese is Franklin\u2019s Teleme. (Mid Coast Cheese Company is) local, and I grew up on that cheese.<\/p>\n<p><span style=\"color: #ff6600;\"><strong>culture:<\/strong> <\/span>What is your go-to recipe highlighting cheese?<\/p>\n<p><strong>LA:<\/strong> During Christmas-time, I take goat cheese and mix it with <a href=\"http:\/\/dianessweetheat.com\/\" target=\"_blank\" rel=\"noopener\">Diane\u2019s Sweet Heat pepper jelly<\/a>\u2014I prefer mango\u2014roll it into a log, and roll the log in chopped pistachios, cranberries, and parsley. It\u2019s festive, it\u2019s pretty, and, because of the sweet-heat jam, people don\u2019t expect that little bit of pop.<\/p>\n<p><span style=\"color: #ff6600;\"><strong>culture:<\/strong><\/span> What is the strangest customer request you\u2019ve received?<\/p>\n<p><strong>LA:<\/strong> Some customers ask me for<a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-library\/Limburger-German\"> German Limburger <\/a>in a jar. I can\u2019t get it; they don\u2019t import it here any-more. When I was in Germany, I went to three different cheese shops trying to find it so I could at least taste it, and I couldn\u2019t find it there, either.<\/p>\n<p><em>3130 Alpine Rd.<\/em><br
