I admit, I was a part of the cottage cheese-hating fan club\u2014and why? What did cottage cheese ever do to me?<\/p>\n<p>Was it the lunch snack mix-up in grade school, when I mistook cottage cheese for rice pudding?<\/p>\n<p>Was it my arachnophobia and the Miss Muffet nursery rhyme convincing me cottage cheese (i.e. curds and whey) must be a spider sentinel?<\/p>\n<p>Or is it because I just fell in with the same boat as everybody else, the \u201cwrinkle your nose without giving \u2018ol cottage cheese a chance\u201d cruise line?<\/p>\n<p>Whatever my qualms were, they disappeared once I gave cottage cheese the college try. (Really\u2014it took me until college to try!) Since then, I haven\u2019t gone back.<\/p>\n<p>With the popularity of frozen yogurt, Green yogurt, kefir and anything else wonderfully tart,&nbsp;<em>you<\/em>&nbsp;should give cottage cheese another chance as well. Trust me on this.<\/p>\n<p><strong>KEFIR COTTAGE CHEESE<\/strong><\/p>\n<p><em><a href=\"https:\/\/twitter.com\/stacymakescents\" target=\"_blank\">Stacy<\/a>&nbsp;of&nbsp;<a href=\"http:\/\/www.stacymakescents.com\/\" target=\"_blank\">Stacy Makes Cents<\/a>, was inspired by her friend to make this easy cottage cheese recipe that includes kefir among its trinity of main ingredients. She herself often laments about everyone else\u2019s loathing for cottage cheese; \u201cMy husband doesn&#8217;t care for cottage cheese, but I can inhale it.\u201d Stacy and I are on a mission\u2014and we\u2019ll make cottage cheese lovers out of you yet!*<\/em><\/p>\n<p><strong>Makes 3 cups cottage cheese<\/strong><\/p>\n<p>INGREDIENTS:<\/p>\n<ul>\n<li>1 pint dairy kefir, room temperature<\/li>\n<li>1 quart whole milk<\/li>\n<li>2 tablespoons apple cider vinegar<\/li>\n<li>Salt (optional)<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p>SPECIAL EQUIPMENT:<\/p>\n<ul>\n<li>Thermometer<\/li>\n<li>Cheesecloth<\/li>\n<li>Colander<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong>Step 1: Heat Milk<\/strong><br \/>\n<img decoding=\"async\" alt=\"\" src=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/sites\/all\/files\/Intern_Blogs\/Amanda_Furrer\/cottage-cheese-step-1.jpg\"><br \/>\n<strong>Heat<\/strong>&nbsp;milk slowly to 140\u02da, making sure milk doesn\u2019t boil.<\/p>\n<p><strong>Step 2: Add kefir<\/strong><br \/>\n<img decoding=\"async\" alt=\"\" src=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/sites\/all\/files\/Intern_Blogs\/Amanda_Furrer\/cottage-cheese-step-2.jpg\"><br \/>\n<strong>Pour<\/strong>&nbsp;kefir slowly into pot. Do not stir.<\/p>\n<p><strong>Step 3: Acidify<\/strong><br \/>\n<img decoding=\"async\" alt=\"\" src=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/sites\/all\/files\/Intern_Blogs\/Amanda_Furrer\/cottage-cheese-step-3.jpg\"><br \/>\n<strong>Pour<\/strong>&nbsp;apple cider vinegar into pot. Do not stir.<\/p>\n<p><strong>Step 4: Allow curds to form<\/strong><br \/>\n<img decoding=\"async\" alt=\"\" src=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/sites\/all\/files\/Intern_Blogs\/Amanda_Furrer\/cottage-cheese-step-4.jpg\"><br \/>\n<strong>Push<\/strong>&nbsp;mixture with wooden spoon as curds form. Do not stir. (Do you see a pattern?) When whey (it will look like chicken broth) starts to emerge, turn off heat and let sit for 5 minutes.<\/p>\n<p><strong>Step 5: Strain<\/strong><br \/>\n<img decoding=\"async\" alt=\"\" src=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/sites\/all\/files\/Intern_Blogs\/Amanda_Furrer\/cottage-cheese-step-5.jpg\"><br \/>\n<strong>Wet<\/strong>&nbsp;cheese cloth; line colander with cheesecloth. Pour curds and whey into lined-colander; allow cheese to strain for 30 minutes.<\/p>\n<p><strong>Step 6: Fluff<\/strong><br \/>\n<img decoding=\"async\" alt=\"\" src=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/sites\/all\/files\/Intern_Blogs\/Amanda_Furrer\/cottage-cheese-step-6.jpg\"><br \/>\n<strong>Turn<\/strong>&nbsp;cheese into storage bowl and break curds with fork while still warm. Add salt to taste. You can use the leftover whey to make homemade bread tender and flaky.<\/p>\n<p>Stacy loves using cottage cheese in lasagna. Make it a treat with fruit; \u201cIt&#8217;s really good with some nice, sweet pears or peaches,\u201d Stacy says.<\/p>\n<blockquote><p>*Note<\/p>\n<p>Just add a little of this, a little of that.
