The next stop on our journey through my Cheese Around the World series, is the home of the pharaohs themselves: Egypt. Like this post? <a title=\"Kastengel: Indonesian Cheese Sticks\" href=\"\/blog\/kastengel-indonesian-cheese-sticks\" target=\"_blank\">Read my previous post on Indonesian&nbsp;Kastengel<\/a>.<\/em><\/p>\n<hr>\n<p>Native Egyptian cheeses are few in number and variety. Not much is known about them, and non-Egyptian cheeses are becoming more and more available in Egypt. In my process of digging up the dirt on these cheeses, I only found a couple.&nbsp;<a href=\"http:\/\/articles.latimes.com\/1999\/jul\/14\/food\/fo-55996\" target=\"_blank\">Mish<\/a> is a cheese that is dry and spiced, and often made into a paste. Unlike mish, labna is a cheese that is made by straining salted yogurt, which turns into a creamy form of cheese. Gebna, which you will learn how to make today, can be similar to Greek feta cheese (<a href=\"http:\/\/www.egypttravelsearch.com\/egyptian-food.html\" target=\"_blank\">gibna beida<\/a>), or a sharp, hard, pale-yellow cheese(gibna rumy). It is made by <a href=\"http:\/\/books.google.com\/books?id=7rmIDVcoHNoC&amp;pg=PA85&amp;lpg=PA85&amp;dq=gebna+makleyah&amp;source=bl&amp;ots=jQop2i4Gad&amp;sig=xbpHif2GSUybRSs80c--jimplCs&amp;hl=en&amp;sa=X&amp;ei=GQ4AUtmAGaPKigL3uYDYCw&amp;ved=0CEcQ6AEwBDgK#v=onepage&amp;q=gebna%20makleyah&amp;f=false\" target=\"_blank\">pressing salted curds<\/a> and allowing them to dry over a three day long period.<\/p>\n<p>Gebna Makleyah is a fried cheese that is traditionally eaten with bread at meals.
