{"id":35785,"date":"2018-11-21T07:45:56","date_gmt":"2018-11-21T12:45:56","guid":{"rendered":"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/?p=35785"},"modified":"2022-10-07T11:15:17","modified_gmt":"2022-10-07T15:15:17","slug":"curds-in-my-coffee","status":"publish","type":"post","link":"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/curds-in-my-coffee\/","title":{"rendered":"Wheys Less Traveled: Curds in my Coffee"},"content":{"rendered":"<p><span class=\"wpsdc-drop-cap\">A<\/span>t&nbsp;the&nbsp;El Dorado&nbsp;International&nbsp;Airport&nbsp;in&nbsp;Bogot\u00e1, Colombia,&nbsp;you&nbsp;can tell&nbsp;you\u2019re in a country of&nbsp;caseophiles&nbsp;before reaching&nbsp;baggage claim.&nbsp;Shop&nbsp;shelves&nbsp;in the international terminal&nbsp;are stocked with&nbsp;fresh cheeses&nbsp;in travel-ready packaging,&nbsp;from&nbsp;mild <i>queso<\/i><i>&nbsp;<\/i><i>campesino&nbsp;<\/i>to&nbsp;creamy&nbsp;<i>ques<\/i><i>ito<\/i><i>&nbsp;<\/i><i>C<\/i><i>olombiano<\/i>&nbsp;layered with&nbsp;<i>boc<\/i><i>a<\/i><i>dillo<\/i>&nbsp;(guava paste) or&nbsp;<i>arequipe<\/i><i>&nbsp;<\/i>(dulce&nbsp;de&nbsp;leche).&nbsp;<span data-ccp-props=\"{}\">&nbsp;<\/span><\/p>\n<p>And then there\u2019s the coffee.&nbsp;One popular local&nbsp;style&nbsp;is&nbsp;spiked with&nbsp;cinnamon and cloves\u2026and&nbsp;dosed&nbsp;with&nbsp;cubes&nbsp;of fresh cheese. Most&nbsp;Colombian&nbsp;caf\u00e9s serve&nbsp;a version&nbsp;of&nbsp;this&nbsp;<i>caf\u00e9 con&nbsp;<\/i><i>queso<\/i><i>,<\/i>&nbsp;as well as a hot chocolate&nbsp;version&nbsp;known as&nbsp;<i>chocolate Santafere\u00f1o<\/i><i>&nbsp;<\/i>or&nbsp;<i>chocolate&nbsp;<\/i><i>completo<\/i>.<span data-ccp-props=\"{}\">&nbsp;<\/span><\/p>\n<p>Whatever its&nbsp;base, the&nbsp;resulting drink&nbsp;is a&nbsp;beguiling balance of salty and sweet, creamy and bitter. The&nbsp;mozzarella-like&nbsp;queso<i>,<\/i>&nbsp;rendered&nbsp;molten&nbsp;at the bottom of the cup, is&nbsp;ideal for&nbsp;spooning&nbsp;atop&nbsp;small chunks of bread (dunking is also encouraged).&nbsp;Alternately, the beverages are enjoyed with&nbsp;<i><a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/recipes\/mozzarella-stuffed-arepas-sherry-mango-slaw\" target=\"_blank\" rel=\"noopener\">arepas<\/a>&nbsp;<\/i>(griddled corn cakes&nbsp;stuffed&nbsp;with cheese, meat,&nbsp;or egg) or&nbsp;a&nbsp;cheesy&nbsp;cornmeal bread called&nbsp;<i>almoj\u00e1bana<\/i><i>s<\/i>,<i>&nbsp;<\/i>usually&nbsp;at&nbsp;breakfast or as a snack.<span data-ccp-props=\"{}\">&nbsp;<\/span><\/p>\n<div id=\"attachment_10256\" style=\"width: 760px\" class=\"wp-caption alignnone\"><img fetchpriority=\"high\" decoding=\"async\" aria-describedby=\"caption-attachment-10256\" class=\"size-full wp-image-10256\" src=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2014\/06\/Arepa750x368.jpg\" alt=\"Mozzarella-Stuffed Arepas with Sherry-Mango Slaw\" width=\"750\" height=\"368\" srcset=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2014\/06\/Arepa750x368.jpg 750w, https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2014\/06\/Arepa750x368-300x147.jpg 300w\" sizes=\"(max-width: 750px) 100vw, 750px\" \/><p id=\"caption-attachment-10256\" class=\"wp-caption-text\">Mozzarella-Stuffed Arepas with Sherry-Mango Slaw<\/p><\/div>\n<p>On a&nbsp;recent&nbsp;stop&nbsp;at&nbsp;El Dorado\u2014the&nbsp;fifth layover of&nbsp;my trip from&nbsp;southern&nbsp;Patagonia&nbsp;to Colorado\u2014I tried&nbsp;caf\u00e9&nbsp;con&nbsp;queso&nbsp;for the first&nbsp;time.&nbsp;The&nbsp;spiced&nbsp;brew was&nbsp;poured&nbsp;into a to-go cup&nbsp;over&nbsp;cubes of&nbsp;<a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/blog\/latin-american-cheese-queso-blanco\" target=\"_blank\" rel=\"noopener\">queso&nbsp;<\/a><a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/blog\/latin-american-cheese-queso-blanco\" target=\"_blank\" rel=\"noopener\">blanco<\/a>. I carried the elixir to the&nbsp;upstairs food court&nbsp;and&nbsp;ordered&nbsp;two&nbsp;cheese-stuffed&nbsp;arepas<i>&nbsp;<\/i>from<i>&nbsp;<\/i>my favorite&nbsp;eatery, a hole-in-the-wall&nbsp;called Kaori Bar.&nbsp;<span data-ccp-props=\"{}\">&nbsp;<\/span><\/p>\n<p>While&nbsp;awaiting my next flight, I savored the hot, crumbly&nbsp;arepas,&nbsp;their&nbsp;edges crisped and golden, between&nbsp;leisurely&nbsp;sips of fragrant, slightly viscous&nbsp;coffee.&nbsp;I may not have had&nbsp;enough&nbsp;time to leave the airport, but&nbsp;sometimes\u2014if you\u2019re lucky\u2014a&nbsp;layover&nbsp;can&nbsp;leave you&nbsp;feeling&nbsp;rejuvenated.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Culture contributor Laurel Miller discovers a new way
