A<\/span>t the El Dorado International Airport in Bogot\u00e1, Colombia, you can tell you\u2019re in a country of caseophiles before reaching baggage claim. Shop shelves in the international terminal are stocked with fresh cheeses in travel-ready packaging, from mild queso<\/i> <\/i>campesino <\/i>to creamy ques<\/i>ito<\/i> <\/i>C<\/i>olombiano<\/i> layered with boc<\/i>a<\/i>dillo<\/i> (guava paste) or arequipe<\/i> <\/i>(dulce de leche).  <\/span><\/p>\n

And then there\u2019s the coffee. One popular local style is spiked with cinnamon and cloves\u2026and dosed with cubes of fresh cheese. Most Colombian caf\u00e9s serve a version of this caf\u00e9 con <\/i>queso<\/i>,<\/i> as well as a hot chocolate version known as chocolate Santafere\u00f1o<\/i> <\/i>or chocolate <\/i>completo<\/i>. <\/span><\/p>\n

Whatever its base, the resulting drink is a beguiling balance of salty and sweet, creamy and bitter. The mozzarella-like queso,<\/i> rendered molten at the bottom of the cup, is ideal for spooning atop small chunks of bread (dunking is also encouraged). Alternately, the beverages are enjoyed with arepas<\/a> <\/i>(griddled corn cakes stuffed with cheese, meat, or egg) or a cheesy cornmeal bread called almoj\u00e1bana<\/i>s<\/i>, <\/i>usually at breakfast or as a snack. <\/span><\/p>\n

On a recent stop at El Dorado\u2014the fifth layover of my trip from southern Patagonia to Colorado\u2014I tried caf\u00e9 con queso for the first time. The spiced brew was poured into a to-go cup over cubes of queso <\/a>blanco<\/a>. I carried the elixir to the upstairs food court and ordered two cheese-stuffed arepas <\/i>from <\/i>my favorite eatery, a hole-in-the-wall called Kaori Bar.  <\/span><\/p>\n

While awaiting my next flight, I savored the hot, crumbly arepas, their edges crisped and golden, between leisurely sips of fragrant, slightly viscous coffee. I may not have had enough time to leave the airport, but sometimes\u2014if you\u2019re lucky\u2014a layover can leave you feeling rejuvenated.<\/p>\n","protected":false},"excerpt":{"rendered":"
