H<\/span>eads up, Chicago! There’s a new cheese counter in town. Located in Ukrainian village, All Together Now is a combination eatery, bottle shop, market, and cheese counter offering a selection of wedges and wheels you’ll be hard pressed to find elsewhere in the city. Co-founders Erin Carlman-Weber and Derek Herbster have come together to combine their backgrounds in food and hospitality in this unique space. Carlman-Weber\u2019s honed her cheese knives at Boston\u2019s famous Formaggio Kitchen<\/a>, while Herbster brings his knowledge of music and coffee, which he picked up from his time at Stumptown Coffee Roaster<\/a>.<\/span><\/p>\n

The crew has joined forces with chef Jonny Hunter of Forequarter<\/a> and Undergrounds Meats<\/a> up in Madison, Wisconsin. Fun fact: he’s also Andy Hatch’s former college roommate so you better believe that cheese counter is stocked with Pleasant Ridge Reserve<\/a>. <\/span><\/p>\n

The space seamlessly blends classic and funk. Warm wooden accents paired with splashes of teal complement the herringbone tile floor. It’s the perfect place to work remotely with some French press coffee or share lentil croquettes and a glass of wine with a friend.<\/span><\/p>\n

The retail area showcases natural wine, artisan charcuterie, and multi-roaster coffee, which will rotate frequently. Their cheese list includes American fan favorites as well as exotic wedges and wheels hailing from France and Spain. You’ll also be able to stock up on tinned fish<\/a> too, which is always a plus in our book. <\/span><\/p>\n
