Cheesy childhood memories often feature Velveeta (melted with Rotel and taco seasoning for the best cheese dip ever) or <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/ruminations\/a-childhood-romance-with-american-cheese\" target=\"_blank\" rel=\"noopener\">American cheese<\/a> (grilled cheese just isn&#8217;t the same without it). Whenever you pick it up at the grocery store on a wave of nostalgia, you might find the &#8220;pasteurized cheese product&#8221; label off-putting. However, that&#8217;s not quite as scary as it seems. <a href=\"https:\/\/thetakeout.com\/when-is-cheese-not-cheese-1831776768\" target=\"_blank\" rel=\"noopener\">Cheese products have added emulsifiers<\/a>, which binds the cheese&#8217;s components when it melts. Those of us who&#8217;ve made a grilled cheese from an aged cheddar know the cheese separates into solids, fats, and liquids while melting. We&#8217;re not saying that cheese products are better than cheese, but we will admit there&#8217;s just something about a grilled cheese with Kraft singles.&nbsp;<\/p>\n<h4>Here&#8217;s what you might have missed this week:<\/h4>\n<ul>\n<li>While most American cheeses descended from European recipes, <a href=\"https:\/\/www.smithsonianmag.com\/innovation\/quest-for-totally-american-cheese-180971278\/\" target=\"_blank\" rel=\"noopener\">three cheesemakers<\/a> are collaborating to make a cheese that is entirely American.&nbsp;&nbsp;<br \/>\n&nbsp;<\/li>\n<li>Helped by two child taste-testers, this parent embarks on a <a href=\"https:\/\/thetakeout.com\/taste-test-boxed-macaroni-cheese-kraft-velveeta-annies-1831752022\" target=\"_blank\" rel=\"noopener\">blind taste test<\/a> to find the best-boxed mac and cheese.&nbsp; &nbsp;<br \/>\n&nbsp;<\/li>\n<li>Fondue pots litter Goodwill aisles and make an appearance at every garage sale. In the spirit of reusing and the love of melted cheese, we&#8217;ll join the plea: <a href=\"https:\/\/thetakeout.com\/bring-back-fondue-cheese-dinner-parties-1831534118\" target=\"_blank\" rel=\"noopener\">bring back fondue!<\/a>&nbsp;<br \/>\n&nbsp;&nbsp;<\/li>\n<li>Make your Valentine&#8217;s Day cheesy. <a href=\"https:\/\/www.bustle.com\/p\/meundies-wine-cheese-underwear-pajama-set-celebrates-your-otp-15829428\" target=\"_blank\" rel=\"noopener\">MeUndies Valentine Collection<\/a> includes pajama sets with cheese prints.&nbsp;<br \/>\n&nbsp;<\/li>\n<li>The revelation that Cheez Whiz contains no actual cheese will surprise no one. If you love the spray cheese but want some actual dairy product in it, <a href=\"https:\/\/thetakeout.com\/recipe-how-to-make-homemade-cheez-whiz-1831682875\" target=\"_blank\" rel=\"noopener\">here&#8217;s a recipe<\/a> to make it at home.&nbsp;<br \/>\n&nbsp;<\/li>\n<li>Those of us who are frugally minded already know Trader Joe&#8217;s has a fantastic cheese selection.
