Each co-op\u2019s cheese department functions as its own specialty cheese shop, overseen by Boise Co-op\u2019s two&nbsp;American Cheese Society Certified&nbsp;Cheese&nbsp;Professionals&nbsp;Dorota&nbsp;Siejek-Hendershot and Lacey&nbsp;McNeff. Their departments boast a wide selection of both Idahoan and international cheeses, with approximately 200 options between them.<span data-ccp-props=\"{}\">&nbsp;<\/span><\/p>\n<p>\u201cWe develop strong relationships with all of our local cheesemakers and are very grateful for their support to get their fabulous cheese to our customers,&nbsp;even if it means battling through a snowstorm or traveling for five hours to make a delivery or sample product,\u201d says&nbsp;McNeff.<span data-ccp-props=\"{}\">&nbsp;<\/span><\/p>\n<p>Boise Co-op also hosts a number of fun and educational events, such as cheese-and-alcohol pairing classes, food show\u2013style&nbsp;events that let customers try new cheeses, and a 16-cheese bracket during the second week of March to see who will be crowned the \u201cBig Cheese.\u201d&nbsp;<\/p>\n<h4><span style=\"color: #ff6600;\"><strong>culture:<\/strong><\/span>&nbsp;What\u2019s the strongest cheese in your shop?<span data-ccp-props=\"{}\">&nbsp;<\/span><\/h4>\n<p><b>Dorota<\/b><b>&nbsp;<\/b><b>Siejek<\/b><b>-Hendershot<\/b>: Paradise Spring Farm Mahogany Ridge. Well, if I had to pick, I would go with Mt. Townsend <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/article\/partners-in-craft-beer-washed-cheese\" target=\"_blank\" rel=\"noopener\">Off Kilter<\/a>,&nbsp;Toscano&nbsp;salami, and&nbsp;Castelvetrano&nbsp;olives.<span data-ccp-props=\"{}\">&nbsp;<\/span><\/p>\n<p><b>LM<\/b>:&nbsp;It\u2019s tricky&nbsp;to pick just one,&nbsp;but I\u2019m leaning towards <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-bites\/new-parmigiano-lab-test\" target=\"_blank\" rel=\"noopener\">Parmigiano&nbsp;Reggiano<\/a>. I\u2019d skip the meat (in hopes of catching something wild on the island) and I\u2019d pair it with fresh figs and crusty bread.<span data-ccp-props=\"{}\">&nbsp;<\/span><\/p>\n<p><em>888
