S<\/span>et within France 44, a Minneapolis wine and spirits shop that\u2019s been operating since 1959, this cheese counter<\/a> launched a decade ago when manager Benjamin Roberts moved to town from Brooklyn, N.Y., where he ran a farm-to-table restaurant. Partnering with the well-established store, Roberts created a new area devoted to cheese, whole-animal butchery, and sandwiches.  <\/span><\/p>\n

Shortly after, the shop opened a second location in Saint Paul, broadening local access to the team\u2019s products and classes. \u201cOur aim is to delight our customers and have them feeling better about life after they\u2019ve interacted with us,\u201d Roberts says. To that end, the cheese counter\u2014curated by Katie Renner, France 44\u2019s cheese buyer for the past 6 years\u2014is shaped to reflect prime examples of each style. \u201cWe\u2019re not trying to crush you with variety\u2014we want to send our customers home with a delicious piece of well-cared-for cheese,\u201d says Roberts.<\/p>\n

BR:<\/strong> <\/span><\/span>Perfectly ripe brie<\/a> on a warm baguette with a schmear of honey<\/span><\/span>\u2014though t<\/span><\/span>his is <\/span><\/span>best<\/span><\/span> <\/span><\/span>for folks that know each other and want to be gooey and sticky<\/span><\/span>; <\/span><\/span>i<\/span><\/span>t\u2019s p<\/span><\/span>robably not a great idea for a first date.<\/span><\/span><\/p>\n
