{"id":36426,"date":"2019-03-06T07:45:05","date_gmt":"2019-03-06T12:45:05","guid":{"rendered":"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/?p=36426"},"modified":"2019-03-06T14:25:33","modified_gmt":"2019-03-06T19:25:33","slug":"shop-talk-sweet-freedom-cheese","status":"publish","type":"post","link":"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/shop-talk-sweet-freedom-cheese\/","title":{"rendered":"Shop Talk: Sweet Freedom Cheese"},"content":{"rendered":"<p><span data-contrast=\"none\"><span class=\"wpsdc-drop-cap\">\u201c<\/span>To my current knowledge, w<\/span><span data-contrast=\"none\">e\u2019re the only full-service,&nbsp;<\/span><span data-contrast=\"none\">cut-to-order shop in the state of Arkansas,\u201d says&nbsp;<\/span><span data-contrast=\"none\"><a href=\"https:\/\/www.sweetfreedomcheese.com\/\" target=\"_blank\" rel=\"noopener\">Sweet Freedom Cheese<\/a> owner and founder&nbsp;<\/span><span data-contrast=\"none\">Jessica&nbsp;<\/span><span data-contrast=\"none\">Keahey<\/span><span data-contrast=\"none\">,&nbsp;<\/span><span data-contrast=\"none\">who worked<\/span><span data-contrast=\"none\">&nbsp;<\/span><span data-contrast=\"none\">in the engineering field for 10 years&nbsp;<\/span><span data-contrast=\"none\">before<\/span><span data-contrast=\"none\">&nbsp;realiz<\/span><span data-contrast=\"none\">ing<\/span><span data-contrast=\"none\">&nbsp;s<\/span><span data-contrast=\"none\">he wanted to pursue&nbsp;<\/span><span data-contrast=\"none\">this culinary endeavor<\/span><span data-contrast=\"none\">.&nbsp;<\/span><span data-contrast=\"none\">Itching&nbsp;<\/span><span data-contrast=\"none\">to learn as much as she could,&nbsp;<\/span><span data-contrast=\"none\">Keahey<\/span><span data-contrast=\"none\">&nbsp;took a six<\/span><span data-contrast=\"none\">&#8211;<\/span><span data-contrast=\"none\">week road trip<\/span><span data-contrast=\"none\">&nbsp;visiting shops and creameries<\/span><span data-contrast=\"none\">&nbsp;around the US&nbsp;<\/span><span data-contrast=\"none\">in what she calls her \u201ccheese-mobile<\/span><span data-contrast=\"none\">.\u201d&nbsp;<\/span><span data-contrast=\"none\">Al<\/span><span data-contrast=\"none\">though she&nbsp;<\/span><span data-contrast=\"none\">learned how<\/span><span data-contrast=\"none\">&nbsp;<\/span><span data-contrast=\"none\">challenging it could be to make it in the<\/span><span data-contrast=\"none\">&nbsp;industry, she took the leap and started a tiny licensed creamery&nbsp;<\/span><span data-contrast=\"none\">in<\/span><span data-contrast=\"none\">&nbsp;the Arkansas Food Innovation Center.&nbsp;<\/span><span data-ccp-props=\"{}\">&nbsp;<\/span><\/p>\n<p><span data-contrast=\"none\">Now&nbsp;<\/span><span data-contrast=\"none\">Keahey<\/span><span data-contrast=\"none\">&nbsp;runs a<\/span><span data-contrast=\"none\">&nbsp;full cheese shop&nbsp;<\/span><span data-contrast=\"none\">in Bentonville\u2019s<\/span><span data-contrast=\"none\">&nbsp;<\/span><span data-contrast=\"none\">8th Street Market, a vibrant and diverse culinary community.&nbsp;<\/span><span data-contrast=\"none\">Since&nbsp;<\/span><span data-contrast=\"none\">opening last&nbsp;<\/span><span data-contrast=\"none\">November<\/span><span data-contrast=\"none\">, customers have&nbsp;<\/span><span data-contrast=\"none\">flocked<\/span><span data-contrast=\"none\">&nbsp;here to shop a&nbsp;<\/span><span data-contrast=\"none\">selection of locally and internationally<\/span><span data-contrast=\"none\">&nbsp;<\/span><span data-contrast=\"none\">sourced cheeses, cured meats, and specialty grocery items<\/span><span data-contrast=\"none\">, as well as&nbsp;<\/span><span data-contrast=\"none\">enjoy charcuterie and cheese boards with beer and wine&nbsp;<\/span><span data-contrast=\"none\">in a<\/span><span data-contrast=\"none\">&nbsp;cozy<\/span><span data-contrast=\"none\">&nbsp;on-site<\/span><span data-contrast=\"none\">&nbsp;dining room.&nbsp;<\/span><span data-ccp-props=\"{&quot;335559731&quot;:720}\">&nbsp;<\/span><\/p>\n<p><span data-contrast=\"none\">The self-proclaimed \u201ccurd nerds\u201d behind the shop\u2014including&nbsp;<\/span><span data-contrast=\"none\">cheese educator&nbsp;<\/span><a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/?post_type=guest-author&amp;p=34031\" target=\"_blank\" rel=\"noopener\"><span data-contrast=\"none\">Pat&nbsp;<\/span><span data-contrast=\"none\">Polowsky<\/span><\/a><span data-contrast=\"none\">, seasoned&nbsp;<\/span><span data-contrast=\"none\">cheesemongers<\/span><span data-contrast=\"none\">&nbsp;Maddie Ward and Tiffany&nbsp;<\/span><span data-contrast=\"none\">Tayrien<\/span><span data-contrast=\"none\">, and newbies Shelby Thomas and Kristen Martin\u2014are all about educating and sharing cheese with their community. To that end, they offer classes on pairings, cheesemaking, and cheese science and history, as well as a plethora of events, from<\/span><span data-contrast=\"none\">&nbsp;<\/span><span data-contrast=\"none\">Fondue Friday<\/span><span data-contrast=\"none\">s<\/span><span data-contrast=\"none\">&nbsp;and&nbsp;<\/span><a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/blog\/meal-winter-raclette\" target=\"_blank\" rel=\"noopener\"><span data-contrast=\"none\">Raclette<\/span><\/a><span data-contrast=\"none\">&nbsp;<\/span><span data-contrast=\"none\">n<\/span><span data-contrast=\"none\">ights<\/span><span data-contrast=\"none\">&nbsp;to&nbsp;<\/span><span data-contrast=\"none\">serving&nbsp;<\/span><span data-contrast=\"none\">special grilled cheese sandwiches on holidays.<\/span><span data-ccp-props=\"{&quot;335559731&quot;:720}\">&nbsp;<\/span><\/p>\n<h4><span data-ccp-props=\"{}\">&nbsp;<span style=\"color: #ff6600;\"><strong>culture:<\/strong><\/span><b> When were you sure that you wanted to pursue a career in cheese?&nbsp;<\/b>&nbsp;<\/span><\/h4>\n<p><b><span data-contrast=\"none\">J<\/span><\/b><b><span data-contrast=\"none\">essica&nbsp;<\/span><\/b><b><span data-contrast=\"none\">Keahey<\/span><\/b><b><span data-contrast=\"none\">:<\/span><\/b><span data-contrast=\"none\">&nbsp;\u202fOne evening, while enrolled in the Sterling College Cheese Intensive course, I was on the front lawn of <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/hunks-of-cheese\/hunks-cheese-andy-mateo-kehler\" target=\"_blank\" rel=\"noopener\">Jasper Hill Farm<\/a>. I had my first bite of <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-bites\/harbison-go-party-cheese\" target=\"_blank\" rel=\"noopener\">Harbison<\/a> and it was transformative and emotional. I realized right then and there that I wanted to make cheese my profession.<\/span><span data-ccp-props=\"{}\">&nbsp;<\/span><\/p>\n<h4><span data-ccp-props=\"{}\">&nbsp;<span style=\"color: #ff6600;\"><strong>culture:<\/strong><\/span><b> What is the first thing you recommend to cheese beginners?&nbsp;<\/b>&nbsp;<\/span><\/h4>\n<p><b><span data-contrast=\"none\">JK:<\/span><\/b><span data-contrast=\"none\">&nbsp;Brush away any intimidation or fears of not knowing all the cheeses in our case or <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-iq\/cheese-iq-say\" target=\"_blank\" rel=\"noopener\">mispronouncing names<\/a>.
