I&nbsp;<\/span><span data-contrast=\"auto\">can&nbsp;<\/span><span data-contrast=\"auto\">look directly at it without squinting.&nbsp;<\/span><span data-ccp-props=\"{&quot;134233279&quot;:true,&quot;335559739&quot;:200}\">&nbsp;<\/span><\/p>\n<p><span data-contrast=\"auto\">Th<\/span><span data-contrast=\"auto\">is<\/span><span data-contrast=\"auto\">&nbsp;<\/span><span data-contrast=\"auto\">hazy&nbsp;<\/span><span data-contrast=\"auto\">valley is&nbsp;<\/span><span data-contrast=\"auto\">the heart of<\/span><span data-contrast=\"auto\">&nbsp;<\/span><span data-contrast=\"auto\">California Big Ag<\/span><span data-contrast=\"auto\">&nbsp;country<\/span><span data-contrast=\"auto\">. It\u2019s<\/span><span data-contrast=\"auto\">&nbsp;<\/span><span data-contrast=\"auto\">home to the World Ag Expo, the largest&nbsp;<\/span><span data-contrast=\"auto\">milk&nbsp;<\/span><span data-contrast=\"auto\">processing center&nbsp;<\/span><span data-contrast=\"auto\">in California<\/span><span data-contrast=\"auto\">, and one of the largest Kraft cheese factories<\/span><span data-contrast=\"auto\">&nbsp;in the country<\/span><span data-contrast=\"auto\">.&nbsp;<\/span><span data-contrast=\"auto\">All&nbsp;<\/span><span data-contrast=\"auto\">here&nbsp;<\/span><span data-contrast=\"auto\">seems<\/span><span data-contrast=\"auto\">&nbsp;superlative<\/span><span data-contrast=\"auto\">:&nbsp;<\/span><span data-contrast=\"auto\">T<\/span><span data-contrast=\"auto\">he trucks are the dirtiest, the farms&nbsp;<\/span><span data-contrast=\"auto\">have<\/span><span data-contrast=\"auto\">&nbsp;the&nbsp;<\/span><span data-contrast=\"auto\">biggest<\/span><span data-contrast=\"auto\">&nbsp;equipment, the fog is the foggiest, and the cows are the happiest<\/span><span data-contrast=\"auto\">\u2014<\/span><span data-contrast=\"auto\">or so it is marketed.&nbsp;<\/span><span data-ccp-props=\"{&quot;134233279&quot;:true,&quot;335559731&quot;:720,&quot;335559739&quot;:200}\">&nbsp;<\/span><\/p>\n<p><span data-contrast=\"auto\">Yet i<\/span><span data-contrast=\"auto\">n the midst of all of this&nbsp;<\/span><span data-contrast=\"auto\">industrial<\/span><span data-contrast=\"auto\">&nbsp;<\/span><span data-contrast=\"auto\">agriculture<\/span><span data-contrast=\"auto\">, a small-framed<\/span><span data-contrast=\"auto\">, older<\/span><span data-contrast=\"auto\">&nbsp;man&nbsp;<\/span><span data-contrast=\"auto\">toils away<\/span><span data-contrast=\"auto\">&nbsp;<\/span><span data-contrast=\"auto\">making small batches of cheese&nbsp;<\/span><span data-contrast=\"auto\">in a<\/span><span data-contrast=\"auto\">n austere<\/span><span data-contrast=\"auto\">&nbsp;<\/span><span data-contrast=\"auto\">room<\/span><span data-contrast=\"auto\">&nbsp;behind an unmarked door inside of a repurposed&nbsp;<\/span><span data-contrast=\"auto\">warehouse<\/span><span data-contrast=\"auto\">&nbsp;<\/span><span data-contrast=\"auto\">on<\/span><span data-contrast=\"auto\">&nbsp;a<\/span><span data-contrast=\"auto\">&nbsp;small,<\/span><span data-contrast=\"auto\">&nbsp;family-owned kiwi orchard.<\/span><span data-contrast=\"auto\">&nbsp;<\/span><span data-contrast=\"auto\">Th<\/span><span data-contrast=\"auto\">at<\/span><span data-contrast=\"auto\">&nbsp;man is Franklin Peluso<\/span><span data-contrast=\"auto\">, owner of <a href=\"https:\/\/franklinscheesedotcom.wordpress.com\/\" target=\"_blank\" rel=\"noopener\">Mid Coast Cheese Company<\/a><\/span><span data-contrast=\"auto\">. My goal? To nominate Teleme for an <a href=\"https:\/\/www.slowfoodusa.org\/ark-of-taste-in-the-usa\" target=\"_blank\" rel=\"noopener\">Ark of Taste<\/a> designation, a Slow Food Foundation for Biodiversity project that catalogs distinctive foods with rich histories that are at risk of extinction. While learning about Teleme\u2019s history and getting to know Peluso, it\u2019s become clear that his wisdom of craft and firsthand knowledge of California\u2019s cheese history are inspiring\u2014and worthy of being preserved.<\/span><span data-ccp-props=\"{&quot;134233279&quot;:true,&quot;335559731&quot;:720,&quot;335559739&quot;:200}\">&nbsp;<\/span><\/p>\n<p><i><span data-contrast=\"auto\">I think I\u2019<\/span><\/i><i><span data-contrast=\"auto\">ve reached<\/span><\/i><i><span data-contrast=\"auto\">&nbsp;groupie<\/span><\/i><i><span data-contrast=\"auto\">&nbsp;<\/span><\/i><i><span data-contrast=\"auto\">status<\/span><\/i><i><span data-contrast=\"auto\">,<\/span><\/i><span data-contrast=\"auto\">&nbsp;I&nbsp;<\/span><span data-contrast=\"auto\">tell<\/span><span data-contrast=\"auto\">&nbsp;myself&nbsp;<\/span><span data-contrast=\"auto\">while<\/span><span data-contrast=\"auto\">&nbsp;crisscross<\/span><span data-contrast=\"auto\">ing<\/span><span data-contrast=\"auto\">&nbsp;the country roads<\/span><span data-contrast=\"auto\">, looking for the last&nbsp;<\/span><span data-contrast=\"auto\">road&nbsp;<\/span><span data-contrast=\"auto\">sign pointing me to<\/span><span data-contrast=\"auto\">ward<\/span><span data-contrast=\"auto\">&nbsp;Teleme<\/span><span data-contrast=\"auto\">.&nbsp;<\/span><span data-contrast=\"auto\">And I\u2019m not&nbsp;<\/span><span data-contrast=\"auto\">its<\/span><span data-contrast=\"auto\">&nbsp;only&nbsp;<\/span><span data-contrast=\"auto\">devotee<\/span><span data-contrast=\"auto\">:<\/span><span data-contrast=\"auto\">&nbsp;<\/span><span data-contrast=\"auto\">Teleme\u2019s mystical<\/span><span data-contrast=\"auto\">&nbsp;story&nbsp;<\/span><span data-contrast=\"auto\">and&nbsp;<\/span><span data-contrast=\"auto\">larger-than-life<\/span><span data-contrast=\"auto\">&nbsp;personality have earned it a cult following in California.<\/span><span data-contrast=\"auto\">&nbsp;<\/span><span data-contrast=\"auto\">The beauty of Teleme<\/span><span data-contrast=\"auto\">\u2014<\/span><span data-contrast=\"auto\">as&nbsp;<\/span><span data-contrast=\"auto\">I<\/span><span data-contrast=\"auto\">&nbsp;often<\/span><span data-contrast=\"auto\">&nbsp;profess to&nbsp;<\/span><span data-contrast=\"auto\">anyone<\/span><span data-contrast=\"auto\">&nbsp;willing to listen<\/span><span data-contrast=\"auto\">\u2014<\/span><span data-contrast=\"auto\">is that it is a<\/span><span data-contrast=\"auto\">t once&nbsp;<\/span><span data-contrast=\"auto\">a piece of history, an American&nbsp;<\/span><span data-contrast=\"auto\">O<\/span><span data-contrast=\"auto\">riginal, an immigrant story,<\/span><span data-contrast=\"auto\">&nbsp;and<\/span><span data-contrast=\"auto\">&nbsp;<\/span><span data-contrast=\"auto\">a<\/span><span data-contrast=\"auto\">&nbsp;culinary workhorse, a cheese whose stark simplicity balks at pretension<\/span><span data-contrast=\"auto\">.<\/span><span data-contrast=\"auto\">&nbsp;I finally encounter the<\/span><span data-contrast=\"auto\">&nbsp;hand-painted<\/span><span data-contrast=\"auto\">&nbsp;<\/span><span data-contrast=\"auto\">roadside<\/span><span data-contrast=\"auto\">&nbsp;<\/span><span data-contrast=\"auto\">sign that reads&nbsp;<\/span><span data-contrast=\"auto\">\u201c<\/span><span data-contrast=\"auto\">CHEESE KIWI<\/span><span data-contrast=\"auto\">.<\/span><span data-contrast=\"auto\">\u201d<\/span><span data-ccp-props=\"{&quot;134233279&quot;:true,&quot;335559731&quot;:720,&quot;335559739&quot;:200}\">&nbsp;<\/span><\/p>\n<p><span data-contrast=\"auto\">After<\/span><span data-contrast=\"auto\">&nbsp;I<\/span><span data-contrast=\"auto\">&nbsp;knock on three<\/span><span data-contrast=\"auto\">&nbsp;different<\/span><span data-contrast=\"auto\">&nbsp;doors,&nbsp;<\/span><span data-contrast=\"auto\">Franklin<\/span><span data-contrast=\"auto\">&nbsp;pokes<\/span><span data-contrast=\"auto\">&nbsp;his head<\/span><span data-contrast=\"auto\">&nbsp;out. He&nbsp;<\/span><span data-contrast=\"auto\">says hello<\/span><span data-contrast=\"auto\">&nbsp;<\/span><span data-contrast=\"auto\">and&nbsp;<\/span><span data-contrast=\"auto\">quickly ushers me inside,&nbsp;<\/span><span data-contrast=\"auto\">lest the<\/span><span data-contrast=\"auto\">&nbsp;barn cats leap&nbsp;<\/span><span data-contrast=\"auto\">indoors<\/span><span data-contrast=\"auto\">. He settles immediately into his cheesemaking routine, one that he has mastered&nbsp;<\/span><span data-contrast=\"auto\">over<\/span><span data-contrast=\"auto\">&nbsp;more years than I<\/span><span data-contrast=\"auto\">\u2019ve<\/span><span data-contrast=\"auto\">&nbsp;been alive.&nbsp;<\/span><span data-contrast=\"auto\">After the early hours of pasteurization and production setup lapse, it<\/span><span data-contrast=\"auto\">&nbsp;comes<\/span><span data-contrast=\"auto\">&nbsp;time to inoculate and set the milk<\/span><span data-contrast=\"auto\">\u2014<\/span><span data-contrast=\"auto\">the&nbsp;<\/span><i><span data-contrast=\"auto\">secret<\/span><\/i><span data-contrast=\"auto\">&nbsp;part of the family recipe.&nbsp;<\/span><span data-contrast=\"auto\">Peluso&nbsp;<\/span><span data-contrast=\"auto\">politely but intently suggests that this would be a great time to go out for some coffee, his treat. He&nbsp;<\/span><span data-contrast=\"auto\">shifts&nbsp;<\/span><span data-contrast=\"auto\">into recounting tales of Teleme.<\/span><span data-contrast=\"auto\">&nbsp;<\/span><span data-ccp-props=\"{&quot;134233279&quot;:true,&quot;335559731&quot;:720,&quot;335559739&quot;:200}\">&nbsp;<\/span><\/p>\n<p><span data-contrast=\"auto\">\u201cTeleme has a long history in California<\/span><span data-contrast=\"auto\">,\u201d Peluso&nbsp;<\/span><span data-contrast=\"auto\">says<\/span><span data-contrast=\"auto\">. \u201cO<\/span><span data-contrast=\"auto\">ther companies made it at different times,&nbsp;<\/span><span data-contrast=\"auto\">but<\/span><span data-contrast=\"auto\">&nbsp;my family has made it since the beginning<\/span><span data-contrast=\"auto\">\u2014<\/span><span data-contrast=\"auto\">and it was my grandfather who more or less created&nbsp;<\/span><span data-contrast=\"auto\">it<\/span><span data-contrast=\"auto\">.<\/span><span data-contrast=\"auto\">\u201d&nbsp;<\/span><span data-ccp-props=\"{&quot;134233279&quot;:true,&quot;335559731&quot;:720,&quot;335559739&quot;:200}\">&nbsp;<\/span><\/p>\n<p><span data-contrast=\"auto\">Peluso&nbsp;<\/span><span data-contrast=\"auto\">learned to make<\/span><span data-contrast=\"auto\">&nbsp;<\/span><span data-contrast=\"auto\">cheese from his father who was taught by his father<\/span><span data-contrast=\"auto\">;&nbsp;<\/span><span data-contrast=\"auto\">a<\/span><span data-contrast=\"auto\">&nbsp;secret<\/span><span data-contrast=\"auto\">&nbsp;<\/span><span data-contrast=\"auto\">recipe&nbsp;<\/span><span data-contrast=\"auto\">passed between generations<\/span><span data-contrast=\"auto\">.&nbsp;<\/span><span data-contrast=\"auto\">In 1927,<\/span><span data-contrast=\"auto\">&nbsp;<\/span><span data-contrast=\"auto\">Peluso\u2019s&nbsp;<\/span><span data-contrast=\"auto\">grandfather<\/span><span data-contrast=\"auto\">, Giovanni,&nbsp;<\/span><span data-contrast=\"auto\">was inspired by the success of<\/span><span data-contrast=\"auto\">&nbsp;a cheese<\/span><span data-contrast=\"auto\">&nbsp;called&nbsp;<\/span><i><span data-contrast=\"auto\">t<\/span><\/i><i><span data-contrast=\"auto\">elemea<\/span><\/i><span data-contrast=\"auto\">&nbsp;<\/span><span data-contrast=\"auto\">made&nbsp;<\/span><span data-contrast=\"auto\">by Greek<\/span><span data-contrast=\"auto\">s<\/span><span data-contrast=\"auto\">&nbsp;<\/span><span data-contrast=\"auto\">in the&nbsp;<\/span><span data-contrast=\"auto\">Bay Area<\/span><span data-contrast=\"auto\">, so&nbsp;<\/span><span data-contrast=\"auto\">h<\/span><span data-contrast=\"auto\">e&nbsp;<\/span><span data-contrast=\"auto\">played&nbsp;<\/span><span data-contrast=\"auto\">around with&nbsp;<\/span><span data-contrast=\"auto\">re-engineering it. data-contrast=\"auto\">&nbsp;<\/span><span data-contrast=\"auto\">ric<\/span><span data-contrast=\"auto\">e flour<\/span><span data-contrast=\"auto\">,&nbsp;<\/span><span data-contrast=\"auto\">a&nbsp;<\/span><span data-contrast=\"auto\">tradition that&nbsp;<\/span><span data-contrast=\"auto\">harkens&nbsp;<\/span><span data-contrast=\"auto\">back to&nbsp;<\/span><span data-contrast=\"auto\">N<\/span><span data-contrast=\"auto\">orthern Italy.&nbsp;<\/span><span data-contrast=\"auto\">Peluso&nbsp;<\/span><span data-contrast=\"auto\">explains that rice flour dries the rindless edges of the&nbsp;<\/span><span data-contrast=\"auto\">squares<\/span><span data-contrast=\"auto\">&nbsp;without&nbsp;<\/span><span data-contrast=\"auto\">becoming&nbsp;<\/span><span data-contrast=\"auto\">hard or&nbsp;<\/span><span data-contrast=\"auto\">gummy<\/span><span data-contrast=\"auto\">.&nbsp;<\/span><span data-contrast=\"auto\">The&nbsp;<\/span><span data-contrast=\"auto\">Pelusos<\/span><span data-contrast=\"auto\">&nbsp;have always sourced&nbsp;<\/span><span data-contrast=\"auto\">their&nbsp;<\/span><span data-contrast=\"auto\">rice flour from nearby&nbsp;<\/span><span data-contrast=\"auto\">Koda<\/span><span data-contrast=\"auto\">&nbsp;Farms, a<\/span><span data-contrast=\"auto\">n allied exemplar of multi-generational, immigran<\/span><span data-contrast=\"auto\">t<\/span><span data-contrast=\"auto\">&#8211;<\/span><span data-contrast=\"auto\">founded<\/span><span data-contrast=\"auto\">,<\/span><span data-contrast=\"auto\">Telemes<\/span><span data-contrast=\"auto\">&nbsp;look like slabs of bread dough waiting to be proofed<\/span><span data-contrast=\"auto\">.<\/span><span data-contrast=\"auto\">&nbsp;<\/span><span data-contrast=\"auto\">T<\/span><span data-contrast=\"auto\">heir&nbsp;<\/span><span data-contrast=\"auto\">aroma isn\u2019t all that different, either.&nbsp;<\/span><span data-contrast=\"auto\">After being<\/span><span data-contrast=\"auto\">&nbsp;wrapped in white butcher paper and placed in&nbsp;<\/span><span data-contrast=\"auto\">individual&nbsp;<\/span><span data-contrast=\"auto\">boxes<\/span><span data-contrast=\"auto\">,<\/span><span data-contrast=\"auto\">&nbsp;<\/span><span data-contrast=\"auto\">the cheeses<\/span><span data-contrast=\"auto\">&nbsp;mature<\/span><span data-contrast=\"auto\">&nbsp;for three weeks<\/span><span data-contrast=\"auto\">&nbsp;before&nbsp;<\/span><span data-contrast=\"auto\">being<\/span><span data-contrast=\"auto\">&nbsp;released to market.&nbsp;<\/span><span Franklin re<\/span><span data-contrast=\"auto\">calls that when he was young,<\/span><span data-contrast=\"auto\">&nbsp;Teleme was<\/span><span data-contrast=\"auto\">&nbsp;even larger,<\/span><span data-contrast=\"auto\">&nbsp;made&nbsp;<\/span><span data-contrast=\"auto\">as<\/span><span data-contrast=\"auto\">&nbsp;<\/span><span data-contrast=\"auto\">11<\/span><span data-contrast=\"auto\">-pound blocks for sandwich shops that sliced&nbsp;<\/span><span data-contrast=\"auto\">it&nbsp;<\/span><span data-contrast=\"auto\">right&nbsp;<\/span><span data-contrast=\"auto\">onto bread<\/span><span data-contrast=\"auto\">.&nbsp;<\/span><i><span data-contrast=\"auto\">What a dream,<\/span><\/i><span data-contrast=\"auto\">&nbsp;I&nbsp;<\/span><span data-contrast=\"auto\">think&nbsp;<\/span><span data-contrast=\"auto\">to myself.
