Inside,&nbsp;<\/span><span data-contrast=\"auto\">rubber&nbsp;<\/span><span data-contrast=\"auto\">boots&nbsp;<\/span><span data-contrast=\"auto\">line<\/span><span data-contrast=\"auto\">&nbsp;a narrow&nbsp;<\/span><span data-contrast=\"auto\">passageway to<\/span><span data-contrast=\"auto\">&nbsp;another door, which opens&nbsp;<\/span><span data-contrast=\"auto\">i<\/span><span data-contrast=\"auto\">nto&nbsp;<\/span><span data-contrast=\"auto\">a<\/span><span data-contrast=\"auto\">&nbsp;single&nbsp;<\/span><span data-contrast=\"auto\">subterranean&nbsp;<\/span><span data-contrast=\"auto\">room<\/span><span data-contrast=\"auto\">, revealing<\/span><span data-contrast=\"auto\">&nbsp;<\/span><span data-contrast=\"auto\">wooden boards stacked&nbsp;<\/span><span data-contrast=\"auto\">high<\/span><span data-contrast=\"auto\">. The contest includes<\/span><span data-contrast=\"auto\">&nbsp;a category called \u201cAmerican Or<\/span><span data-contrast=\"auto\">i<\/span><span data-contrast=\"auto\">ginals\u201d\u2014cheeses that are described as being \u201cuniquely American in their original forms.\u201d&nbsp;<\/span><span data-contrast=\"auto\">Within that&nbsp;<\/span><span data-contrast=\"auto\">group<\/span><span data-contrast=\"auto\">&nbsp;is a short&nbsp;<\/span><span data-contrast=\"auto\">roster<\/span><span data-contrast=\"auto\">&nbsp;of<\/span><span data-contrast=\"auto\">&nbsp;specific<\/span><span data-contrast=\"auto\">&nbsp;<\/span><span data-contrast=\"auto\">subcategories<\/span><span data-contrast=\"auto\">\u2014brick cheese, brick&nbsp;<\/span><span data-contrast=\"auto\">muenster, <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/blog\/regional-cheese-cuisine-wisconsin-colby\" target=\"_blank\" rel=\"noopener noreferrer\">Colby<\/a>, dry Jack, Monterey Jack<\/span><span data-contrast=\"auto\">,<\/span><span data-contrast=\"auto\">&nbsp;and&nbsp;<\/span><a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/article\/teleme-franklins-edition\" target=\"_blank\" rel=\"noopener noreferrer\"><span data-contrast=\"auto\">T<\/span><span data-contrast=\"auto\">eleme<\/span><\/a><span data-contrast=\"auto\">\u2014<\/span><span data-contrast=\"auto\">a list that has<\/span><span data-contrast=\"auto\">&nbsp;remained static for decades<\/span><span data-contrast=\"auto\">.&nbsp;<\/span><span data-ccp-props=\"{&quot;201341983&quot;:0,&quot;335559739&quot;:160,&quot;335559740&quot;:240}\">&nbsp;<\/span><\/p>\n<p><span data-contrast=\"auto\">There\u2019<\/span><span data-contrast=\"auto\">s no shortage of inventiveness, artistry<\/span><span data-contrast=\"auto\">,<\/span><span data-contrast=\"auto\">&nbsp;and technical know-how among the nation\u2019s cheesemakers<\/span><span data-contrast=\"auto\">, assures John Greeley, chair emeritus of the society\u2019s Co<\/span><span data-contrast=\"auto\">mpetition and Judging Committee;<\/span><span data-contrast=\"auto\">&nbsp;<\/span><span data-contrast=\"auto\">\u201cp<\/span><span data-contrast=\"auto\">eople are making a lot of creative cheese<\/span><span data-contrast=\"auto\">.<\/span><span data-contrast=\"auto\">\u201d But there\u2019s&nbsp;<\/span><span data-contrast=\"auto\">a&nbsp;<\/span><span data-contrast=\"auto\">catch<\/span><span data-contrast=\"auto\">&nbsp;to establishing a new cheese type<\/span><span data-contrast=\"auto\">:&nbsp;<\/span><span data-contrast=\"auto\">\u201c<\/span><span data-contrast=\"auto\">A<\/span><span data-contrast=\"auto\">chieving an American original is tricky because of ownership<\/span><span data-contrast=\"auto\">,\u201d he says. In America, new cheeses tend to be created by single cheesemakers using proprietary recipes<\/span><span data-contrast=\"auto\">. That\u2019s why the competition organizers created an additional American Original&nbsp;<\/span><span data-contrast=\"auto\">Recipe<\/span><span data-contrast=\"auto\">&nbsp;subcategory, for&nbsp;<\/span><span data-contrast=\"auto\">uniqu<\/span><span data-contrast=\"auto\">e<\/span><span data-contrast=\"auto\">&nbsp;<\/span><span data-contrast=\"auto\">cheeses that don\u2019t fit anywhere else.<\/span><span data-ccp-props=\"{&quot;201341983&quot;:0,&quot;335559731&quot;:450,&quot;335559739&quot;:160,&quot;335559740&quot;:240}\">&nbsp;<\/span><\/p>\n<p><span data-contrast=\"auto\">But Greeley thinks that it\u2019s high time the number of American Original subcategories expanded. At the society\u2019s 2015 conference, he&nbsp;<\/span><span data-contrast=\"auto\">put out a call to makers to create more original recipes<\/span><span data-contrast=\"auto\">&nbsp;that could be shared among multiple cheesemakers.&nbsp;<\/span><span data-ccp-props=\"{&quot;201341983&quot;:0,&quot;335559731&quot;:450,&quot;335559739&quot;:160,&quot;335559740&quot;:240}\">&nbsp;<\/span><\/p>\n<p><a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-iq\/new-kind-blue-cheese-need-try\" target=\"_blank\" rel=\"noopener noreferrer\"><span data-contrast=\"auto\">Brian Civitello<\/span><\/a><span data-contrast=\"auto\">,&nbsp;<\/span><span data-contrast=\"auto\">co-founder&nbsp;<\/span><span data-contrast=\"auto\">and cheesemaker at<\/span><span data-contrast=\"auto\"> Mystic Cheese Company<\/span><span data-contrast=\"auto\">&nbsp;in Connecticut<\/span><span data-contrast=\"auto\">,<\/span><span data-contrast=\"auto\">&nbsp;jumped on&nbsp;<\/span><span data-contrast=\"auto\">the<\/span><span data-contrast=\"auto\">&nbsp;challenge. Over beers after the conference, he proposed to&nbsp;<\/span><span data-contrast=\"auto\">Peter&nbsp;<\/span><span data-contrast=\"auto\">Dixon a<\/span><span data-contrast=\"auto\">nd Sue Mille<\/span><span data-contrast=\"auto\">r&nbsp;<\/span><span data-contrast=\"auto\">that&nbsp;<\/span><span data-contrast=\"auto\">they&nbsp;<\/span><span data-contrast=\"auto\">work together to&nbsp;<\/span><span data-contrast=\"auto\">develop a<\/span><span data-contrast=\"auto\">&nbsp;new<\/span><span data-contrast=\"auto\">,<\/span><span data-contrast=\"auto\">&nbsp;unique<\/span><span data-contrast=\"auto\">ly<\/span><span data-contrast=\"auto\">&nbsp;<\/span><span data-contrast=\"auto\">American&nbsp;<\/span><span data-contrast=\"auto\">recipe<\/span><span data-contrast=\"auto\">&nbsp;<\/span><span data-contrast=\"auto\">and<\/span><span data-contrast=\"auto\">&nbsp;<\/span><span data-contrast=\"auto\">make it available to all. \u201cI thought,&nbsp;<\/span><i><span data-contrast=\"auto\">W<\/span><\/i><i><span data-contrast=\"auto\">hy<\/span><\/i><i><span data-contrast=\"auto\">&nbsp;not take the ego out it?<\/span><\/i><span data-contrast=\"auto\">\u201d<\/span><span data-contrast=\"auto\">&nbsp;<\/span><span data-contrast=\"auto\">Civitello<\/span><span data-contrast=\"auto\">&nbsp;recal<\/span><span data-contrast=\"auto\">ls<\/span><span data-contrast=\"auto\">. \u201cThat seemed to be the missing piece of the puzzle.\u201d&nbsp;<\/span><span data-contrast=\"auto\">As the project&nbsp;<\/span><span data-contrast=\"auto\">developed<\/span><span data-contrast=\"auto\">,&nbsp;<\/span><span data-contrast=\"auto\">Civitello&nbsp;<\/span><span data-contrast=\"auto\">had to&nbsp;<\/span><span data-contrast=\"auto\">prioritize<\/span><span data-contrast=\"auto\">&nbsp;<\/span><span data-contrast=\"auto\">his own major<\/span><span data-contrast=\"auto\">&nbsp;business expansion<\/span><span data-contrast=\"auto\">&nbsp;<\/span><span data-contrast=\"auto\">and<\/span><span data-contrast=\"auto\">&nbsp;suggested&nbsp;<\/span><span data-contrast=\"auto\">bringing<\/span><span data-contrast=\"auto\">&nbsp;in Cato Corner<\/span><span data-contrast=\"auto\">&nbsp;instead.&nbsp;<\/span><span data-ccp-props=\"{&quot;201341983&quot;:0,&quot;335559731&quot;:450,&quot;335559739&quot;:160,&quot;335559740&quot;:240}\">&nbsp;<\/span><\/p>\n<h3>Taste of Place<\/h3>\n<p><span data-contrast=\"auto\">If<\/span><span data-contrast=\"auto\">&nbsp;<\/span><span data-contrast=\"auto\">Civitello<\/span><span data-contrast=\"auto\">&nbsp;was the&nbsp;<\/span><span data-contrast=\"auto\">initial<\/span><span data-contrast=\"auto\">&nbsp;<\/span><span data-contrast=\"auto\">ring<\/span><span data-contrast=\"auto\">leader,&nbsp;<\/span><span data-contrast=\"auto\">Dixon is the&nbsp;<\/span><span data-contrast=\"auto\">philosophical visionary<\/span><span data-contrast=\"auto\">. collaborative&nbsp;<\/span><span data-contrast=\"auto\">opportun<\/span><span data-contrast=\"auto\">i<\/span><span data-contrast=\"auto\">ty<\/span><span data-contrast=\"auto\">. Gillman&nbsp;<\/span><span data-contrast=\"auto\">has&nbsp;<\/span><span data-contrast=\"auto\">made cheese for two decades&nbsp;<\/span><span data-contrast=\"auto\">with<\/span><span data-contrast=\"auto\">&nbsp;his mother<\/span><span data-contrast=\"auto\">,<\/span><span data-contrast=\"auto\">&nbsp;<\/span><span data-contrast=\"auto\">Elizabeth Mac<\/span><span data-contrast=\"auto\">A<\/span><span data-contrast=\"auto\">lister<\/span><span data-contrast=\"auto\">,&nbsp;<\/span><span data-contrast=\"auto\">on their Colchester, Connecticut&nbsp;<\/span><span data-contrast=\"auto\">farm&nbsp;<\/span><span data-contrast=\"auto\">with&nbsp;<\/span><span data-contrast=\"auto\">the milk of their Jersey herd<\/span><span data-contrast=\"auto\">.<\/span><span data-contrast=\"auto\">&nbsp;<\/span><span data-contrast=\"auto\">While the cheeses have evolved over time, m<\/span><span data-contrast=\"auto\">any<\/span><span data-contrast=\"auto\">&nbsp;of&nbsp;<\/span><span data-contrast=\"auto\">the duo\u2019s initial&nbsp;<\/span><span data-contrast=\"auto\">recipes&nbsp;<\/span><span
