With its consistent humidity and temperature, this cave has established itself as the perfect ageing space for some of the world&#8217;s best cheeses (Kaltbach <span style=\"font-weight: 400;\"><a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-iq\/cheese-day-gruyere-aop-1655-le-cret\" target=\"_blank\" rel=\"noopener noreferrer\">Le Gruy\u00e8re<\/a> AOP or Kaltbach <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-iq\/cheese-day-emmentaler\" target=\"_blank\" rel=\"noopener noreferrer\">Emmentaler<\/a> AOP among them). Although the cave wasn&#8217;t always used for ageing, recent<\/span><span style=\"font-weight: 400;\"> archaeological evidence reveals local residents have been producing cheese in the region since the Iron Age. Now, let&#8217;s get on to the news.<\/span><\/p>\n<h3><span style=\"font-weight: 400;\">Here&#8217;s what you may have missed this week in cheese news:&nbsp;<\/span><\/h3>\n<ul>\n<li>Next time you&#8217;re in Wisconsin, keep an eye out for the <a href=\"https:\/\/www.leadertelegram.com\/country-today\/farm\/dairy\/beer-battered-cheese-curds-prove-to-be-a-cash-c\/article_49b220f9-1b7d-5daa-88e7-be08d23a9f4c.html\" target=\"_blank\" rel=\"noopener noreferrer\">Curds of Wisconsin<\/a> food truck (otherwise known as C.O.W.) They&#8217;re serving up deep-fried, beer-battered cheese curds, and you might have to fight us for a place in line.&nbsp;<br \/>\n&nbsp; &nbsp;<\/li>\n<li>Hopefully your favorite wines and cheeses are local. In response to EU subsidies on Airbus, the Trump administration is <a href=\"https:\/\/www.latimes.com\/business\/la-fi-trump-airbus-subsidy-threats-20190408-story.html\" target=\"_blank\" rel=\"noopener noreferrer\">threatening tariffs<\/a> on European wine and cheese (and helicopters, but we just care about the important things).&nbsp; &nbsp;<br \/>\n&nbsp;<\/li>\n<li>Guinness&nbsp; World Records announced <a href=\"https:\/\/thetakeout.com\/guinness-world-record-pizza-most-cheeses-154-1833912965\" target=\"_blank\" rel=\"noopener noreferrer\">a new record<\/a> for the Greatest Variety of Cheese on a Pizza. Obliterating the previous record of 111, <span style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Australian pizzamaker Johnny di Francesco created a pie with 154 different cheeses.&nbsp;<br \/>\n&nbsp;<\/span><\/span><\/li>\n<li>Many of us have fond childhood memories of Chuck E. Cheese. The company has been quietly modernizing its menu and offerings, and <a href=\"https:\/\/www.cnn.com\/2019\/04\/08\/business\/chuck-e-cheese-public-trnd\/index.html\" target=\"_blank\" rel=\"noopener noreferrer\">recently announced<\/a> it&#8217;ll once again be a public company.&nbsp;<br \/>\n&nbsp;&nbsp;<\/li>\n<li><a href=\"https:\/\/people.com\/food\/hungry-girl-gourmet-grilled-cheese-recipe\/\" target=\"_blank\" rel=\"noopener noreferrer\">This recipe<\/a> promises a (relatively) healthy grilled cheese in under 10 minutes. Not entirely sure what grilled cheese takes MORE than ten minutes, but this one still looks yummy.&nbsp;<br \/>\n&nbsp;<\/li>\n<li>Vinepair conducted a round up of the world&#8217;s <a href=\"https:\/\/vinepair.com\/articles\/worlds-most-unforgettable-cheeses\/\" target=\"_blank\" rel=\"noopener noreferrer\">most unforgettable cheeses<\/a>.
