That would be Tessa and Scott McCormick of <a href=\"http:\/\/whiterivercreamery.com\/WhiteRiverCreamery\/Welcome.html\" target=\"_blank\" rel=\"noopener noreferrer\">White River Creamery<\/a>.<\/p>\n<p>White River Creamery opened in Elkins, Arkansas in May 2013, but getting there was no small feat. The McCormicks both spent their early years working on family farms before pursuing jobs as teachers in Southern California. However, a difficult year of medical issues combined with a house fire forced them to rethink their lives in the Golden State.<\/p>\n<p>After much deliberation, the McCormicks decided to relocate their family to the rolling hills of northwest Arkansas to open a dairy. Although the new property came with a large barn and a bathroom\u2026it <em>only <\/em>came with a large barn and a bathroom. The family researched alternate housing options and decided to keep it simple.<\/p>\n<p><img fetchpriority=\"high\" decoding=\"async\" class=\"alignnone size-full wp-image-37062\" src=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2019\/08\/IMG_4738-1.jpg\" alt=\"\" width=\"3888\" height=\"2592\" srcset=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2019\/08\/IMG_4738-1.jpg 1600w, https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2019\/08\/IMG_4738-1-300x200.jpg 300w, https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2019\/08\/IMG_4738-1-768x512.jpg 768w, https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2019\/08\/IMG_4738-1-1024x683.jpg 1024w\" sizes=\"(max-width: 3888px) 100vw, 3888px\" \/><\/p>\n<p>&nbsp;\u201cWe knew building a dairy and starting a new business would take all, so we decided to live in yurts,\u201d says Tessa. The family bought three used yurts to live in while they spent the next two years developing the property.<\/p>\n<p>When it came to choosing their goat herd, the McCormicks made an unorthodox choice: <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/farm-animal\/nigerian-dwarf-goat\" target=\"_blank\" rel=\"noopener noreferrer\">Nigerian Dwarf<\/a> goats. While most goat\u2019s milk contains only 2 to 6% butterfat, Nigerian Dwarfs produce milk with 6 to 10%. While their diminutive size corresponds to less milk production, Tessa says, \u201cWhat they lack in volume, they make up for in flavor!\u201d<\/p>\n<p><img decoding=\"async\" class=\"alignnone size-full wp-image-37059\" src=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2019\/08\/IMG_7351.jpg\" alt=\"\" width=\"1136\" height=\"640\" srcset=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2019\/08\/IMG_7351.jpg 1136w, https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2019\/08\/IMG_7351-300x169.jpg 300w, https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2019\/08\/IMG_7351-768x433.jpg 768w, https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2019\/08\/IMG_7351-1024x577.jpg 1024w\" sizes=\"(max-width: 1136px) 100vw, 1136px\" \/><\/p>\n<p>The goats weren\u2019t cheap, and then there were the classes at Vermont\u2019s <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/for-retailers\/the-business-of-mongering-pastoral-artisan-cheese-bread-wine\" target=\"_blank\" rel=\"noopener noreferrer\">Institute of Artisan Cheese<\/a>. They decided to sell Scott\u2019s Jeep and the third yurt to cover these costs. When a Canadian couple contacted them about buying the yurt, they drove to Chicago to get same-day passports in order to make the delivery on their way to Vermont. &nbsp;<\/p>\n<p>\u201cWe [hadn\u2019t] realized how difficult finding parking would be,\u201d says Tessa. \u201cWe took turns driving [around] while [we each got our] passport. We were quite the site with our rusty horse trailer and yurt circling the skyscrapers.\u201d<\/p>\n<p><img decoding=\"async\" class=\"alignnone size-full wp-image-37056\" src=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2019\/08\/white-river.jpg\" alt=\"\" width=\"960\" height=\"960\" srcset=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2019\/08\/white-river.jpg 960w, https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2019\/08\/white-river-150x150.jpg 150w, https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2019\/08\/white-river-300x300.jpg 300w, https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2019\/08\/white-river-768x768.jpg 768w\" sizes=\"(max-width: 960px) 100vw, 960px\" \/><\/p>\n<p>White River Creamery now makes a wide variety of cheeses from their goat\u2019s milk as well as local cow\u2019s milk they have delivered. The McCormicks have one aging room for their feta and cheddar, and hope to build a second one that would allow them to make <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-iq\/cheese-showdown-brie-vs-camembert\" target=\"_blank\" rel=\"noopener noreferrer\">camembert<\/a>, since bloomy rinds need their own cave.<\/p>\n<p>While the journey has been long, the sacrifices have been worth it. \u201cThere are so many aspects we love about farm life,\u201d says Tessa. \u201cThe beauty of nature, being able to create a product from the land, and having our family involved [are some of them.]\u201d<\/p>\n<p>\u201cWe\u2019ve had a great time supplying Arkansas with artisan cheese,\u201d notes
