Part fromagerie, part bistro, this shop boasts a selection of cheeses \u201cfrom five to 5,000miles away.\u201d Co-founder Tina Mooney takes pride in the range of offerings that will satisfy locavores and globetrotters alike. If you happen to stop in for a bite at the bistro, chances are you\u2019ll sample some of hometown hero MouCo Cheese Company\u2019s products. \u201cThese guys have completely honed their process and their consistency is always on point,\u201d Mooney says. \u201cWe\u2019ve even incorporated [their] curds in a menu offering as well as offering them at retail.\u201d Beyond local cheese, The Fox &amp; The Crow has everything from caciocavallo to cr\u00e8me fra\u00eeche\u2014just ask the monger.<\/p>\n<p><strong>culture<\/strong>: What\u2019s your go-to cheese to bring to a party?<\/p>\n<p><strong>Tina Mooney<\/strong>: I always bring burrata or Fruition Farms sheep\u2019s milk ricotta, served in a bowl with fresh baguette for scooping. I top the burrata with whatever stone fruit is in season, a drizzle of olive oil, a pinch of sea salt, and garnish the ricotta with a drizzle of Mike\u2019s Hot Honey and freshly roasted pistachios. Both are very social dishes.<\/p>\n<p><strong>culture<\/strong>: If you were stranded on a desert island, what would be the one cheese, one meat, and one accompaniment you\u2019d bring?<\/p>\n<p><strong>TM<\/strong>: This is a question I get almost daily [and it\u2019s] always the same answer: Marcel Petite Comt\u00e9, p\u00e2t\u00e9 de campagne, and a great stone-ground mustard. The Comt\u00e9 is complex enough that I would never be bored!<\/p>\n<p><strong>culture<\/strong>: What\u2019s the strangest request you\u2019ve gotten from a customer?<\/p>\n<p><strong>TM<\/strong>: That they only wanted a goat\u2019s milk ch\u00e8vre, not a cow\u2019s milk one. As I tried to explain that ch\u00e8vre literally translates to \u201cgoat\u201d in French, she interrupted, and said, no, she\u2019s had cow\u2019s ch\u00e8vre before and won\u2019t be fooled!<\/p>\n<p>2601 S.
