But wait, stay with us\u2014you don\u2019t have to spend a ton to build a beautiful cheese plate.<\/p>\n\n\n\n<p>While assembling a board on a budget does come with restrictions, that\u2019s not necessarily a bad thing; it forces you to get creative. Evan Talen, cheesemonger at Aperitivo in Grand Rapids, Michigan, and recent Cheesemonger Invitational Champion, says having fun is the most important part of creating pairings. \u201cI try to decipher if a complementary or a contrasting flavor will make a more complete bite,\u201d he says. \u201cMy rule of thumb is to keep things simple and let cheese be the star.&#8221;<\/p>\n\n\n\n<p>If experimentation isn\u2019t your thing, then consider trusting your monger. They serve as the gatekeepers of cheese wisdom, so \u201clet them work their magic,\u201d advises Talen. \u201cIt isn\u2019t a shock to us that you don\u2019t want to spend your whole paycheck on cheese,\u201d he says. <\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-1-gorgonzola-dolce-pdo\">1. <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-library\/Gorgonzola-Dolce\" target=\"_blank\" rel=\"noreferrer noopener\">Gorgonzola Dolce PDO<\/a><\/h3>\n\n\n\n<p>Origin: Piedmont or Lombardy, Italy | Milk: Raw or pasteurized cow<\/p>\n\n\n\n<p><strong>+ BLACK MISSION FIGS<\/strong><\/p>\n\n\n\n<p>Gorgonzola Dolce is beloved among blue turophiles, and with good reason.
