F<\/span>ew things divide turophiles like blue cheese; creamy wedges laced with blue and green veins either make people lick their lips in anticipation or scurry away with a quick \u201cno, thanks.\u201d Grace Pullin, head cheesemonger at Talbott & Arding in Hudson, New York, says that encouraging customers to try even a mild blue requires a light touch.<\/p>\n

And pairing a blue? That\u2019s a whole different animal. \u201c[Blue cheeses] are tricky because of their high salt content and potential to overwhelm the palate,\u201d Pullin says. \u201cTo balance those bold, savory qualities, spring for sweet accompaniments.\u201d Check out her expert sweet-and-salty pairings below, from old classics like honey to new favorites like blackcurrant preserves.<\/p>\n

1. The Grey Barn and Farm Bluebird<\/h3>\n

Origin: Chilmark, Massachusetts<\/em><\/p>\n

Milk: Raw cow\u2019s milk<\/em><\/p>\n
