{"id":3771,"date":"2013-07-18T08:00:03","date_gmt":"2013-07-18T12:00:03","guid":{"rendered":"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/?p=3771"},"modified":"2014-04-10T13:24:16","modified_gmt":"2014-04-10T17:24:16","slug":"cheese-personality-washed-rinds","status":"publish","type":"post","link":"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-personality-washed-rinds\/","title":{"rendered":"Cheese Personality: Washed Rinds"},"content":{"rendered":"<p><em>Of course a cheese\u2019s personality is largely dependent on the taste, texture, aroma, and ingredients that go into it, but there are other parts of a cheese\u2019s story that contribute to its character.&nbsp;In this blog series, Natalie investigates the distinct personality traits of some of the most unique cheeses out there.<\/em><\/p>\n<hr>\n<p>\u00c9poisses and other smear-ripened cheeses are smelly, messy, and strangely fleshy in appearance. For these kinds of cheeses, their funkiness is more than just a personality trait\u2014it makes them who they are. Some people find these cheeses are offensive, but many turophiles are willing to overlook these qualities\u2014even embrace them\u2014in order to enjoy the unique flavors that come along with a stinky pink cheese. The salty, creamy, meaty goodness can make it all worth it. (The word \u201c\u00e9poisses,\u201d in fact, literally means \u201cworth the effort.\u201d)<\/p>\n<p>\u00c9poisses, which is washed weekly in a mixture of brine and brandy, is known for being so pungent that it\u2019s actually banned on the subway in France. Originally monks made and ate \u00c9poisses as a substitute for meat during religious fasting. Indeed, \u00c9poisses and many of its washed-rind cousins have a distinctly meaty, earthy taste to them. The rind\u2019s fleshy pink color even looks sort of meat-like.<\/p>\n<div id=\"attachment_6536\" style=\"width: 570px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2013\/07\/washed_rind_epoisses.jpg\"><img fetchpriority=\"high\" decoding=\"async\" aria-describedby=\"caption-attachment-6536\" class=\" wp-image-6536\" alt=\"washed_rind_epoisses\" src=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2013\/07\/washed_rind_epoisses.jpg\" width=\"560\" height=\"420\" srcset=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2013\/07\/washed_rind_epoisses.jpg 1000w, https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2013\/07\/washed_rind_epoisses-300x225.jpg 300w\" sizes=\"(max-width: 560px) 100vw, 560px\" \/><\/a><p id=\"caption-attachment-6536\" class=\"wp-caption-text\">Photo by Kirstin Jackson via NPR<\/p><\/div>\n<p><em>Brevibacterium linens<\/em>&nbsp;is the bacteria behind the smell. It is also responsible for the pinkish orange color of the rind and the texture of the cheese. Stinky washed-rind cheeses are bathed in brine repeatedly, and in many cases, the&nbsp;<em>B. linens&nbsp;<\/em>bacteria are manually spread onto the rind during this process. A moist, briny surface is the perfect environment for&nbsp;<em>B. linens<\/em>&nbsp;to flourish. As the cheese is washed again and again, the bacteria multiply and the cheese gets smellier, stickier, and deeper in color. (<em>B. linens&nbsp;<\/em>is also found in human sweat, which is why these cheeses often smell distinctly like feet or locker room musk.)<\/p>\n<p>Intimidated? Fear not. You can ease into your relationship with this strong personality. Taleggio, a popular Italian washed-rind, has been called the \u201cgateway stinker.\u201d It\u2019s like \u00c9poisses\u2019s slightly moldier but more mellow cousin. If you want to cook with a pink stinker, a cheese like \u00c9poisses can add some extra personality to a grilled cheese or a BLT.<\/p>\n<p>While ripe stinky cheese is delectably creamy, it can be quite runny. Many of these cheeses are kept in little wooden boxes for a reason. If you try to slice a cheese like \u00c9poisses or its American cousin Winnimere, you\u2019re going to find yourself in a runny, gooey (albeit tasty) mess.
