But these difficult times have also inspired an era of resilience\u2014small cheese shops across the country have been getting creative, finding ways to thrive during these difficult times and even selflessly giving back to those in need. They went from selling 90 percent wholesale, with additional revenue from their restaurant, retail shop, and Italian culinary tours; to selling 90 percent to consumers, with their restaurant, shop, and tours shut down. \u201cI\u2019m not sure if the wholesale market will ever really come back the way it was before,\u201d co-owner Rynn Caputo says. \u201cBut if we want to \u2018weather the storm\u2019, our only option is direct-to-consumer.\u201d&nbsp;&nbsp;<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The Spring Grove, Pennsylvania shop has pivoted by <\/span><a href=\"https:\/\/caputobrotherscreamery.com\/collections\/classes\"><span style=\"font-weight: 400;\">hosting virtual tastings and cheesemaking classes<\/span><\/a><span style=\"font-weight: 400;\">, and shipping cheese to thousands of consumers every week. And it\u2019s been a hit. \u201cWord has spread to where we\u2019re having corporations contact us to do [classes] as a staff activity, and families have scheduled zoom parties with each other across different states,\u201d Rynn says. Although the Caputo Brothers staff has been working extra hard to keep sales going, Rynn says morale has remained high, and there haven\u2019t been layoffs\u2014only hiring and promotions.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cWe have thrived, not just survived,\u201d Rynn says. \u201cWe\u2019ve come together as a team and been very innovative during a time where we could have just closed up shop and said this is too hard.\u201d<\/span><\/p>\n<hr>\n<h2><a href=\"https:\/\/www.chantalscheese.com\/\"><b>Chantal\u2019s Cheese Shop<\/b><\/a><\/h2>\n<p><a href=\"https:\/\/www.chantalscheese.com\/\"><img decoding=\"async\" class=\"alignnone wp-image-38579 size-large\" src=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2020\/08\/unnamed-2-e1596812135646-1024x1024.jpg\" alt=\"\" width=\"1024\" height=\"1024\" srcset=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2020\/08\/unnamed-2-e1596812135646-1024x1024.jpg 1024w, https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2020\/08\/unnamed-2-e1596812135646-300x300.jpg 300w, https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2020\/08\/unnamed-2-e1596812135646-150x150.jpg 150w, https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2020\/08\/unnamed-2-e1596812135646-768x768.jpg 768w, https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2020\/08\/unnamed-2-e1596812135646.jpg 1534w\" sizes=\"(max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p><span style=\"font-weight: 400;\">Pittsburgh-based <\/span><a href=\"https:\/\/www.chantalscheese.com\/\"><span style=\"font-weight: 400;\">Chantal\u2019s Cheese Shop<\/span><\/a><span style=\"font-weight: 400;\"> had to make fast and drastic changes to their business in March, and they\u2019re still dealing with the repercussions. \u201cOvernight, we switched to pickup and delivery only \u2026 for more than two months, that was the only way we were doing business,\u201d explain husband-and-wife owners Chris and Ana\u00efs Loughran. \u201cThe impact has been enormous and unpredictable, placing ourselves and our staff under unprecedented amounts of stress.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Together with these major changes, Chantal\u2019s has also had to face the cancellation of in-store classes and events and dealing with the subsequent revenue loss. \u201cWe had to lean on our DIY marketing skills,\u201d say the Loughrans. The couple worked together to restructure their website and amplify their social media presence, but their lack of an online shop and adequate phone service has made these hurdles all the more difficult.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Still, the Chantal\u2019s team has been able to find silver linings amidst the chaos. They\u2019ve implemented small, specialty cheese plates (perfect for social distancing!) that customers love. <\/span><span style=\"font-weight: 400;\">\u201cIt&#8217;s been a big hit for people celebrating birthdays, anniversaries, honeymoons, and such during quarantine,\u201d the couple says. <\/span><span style=\"font-weight: 400;\">Their new curbside pickup and delivery offerings have also become increasingly popular, allowing them to reach more customers than ever before\u2014plus the wiggle room to raise $1,000 for <\/span><a href=\"https:\/\/412foodrescue.org\/\"><span style=\"font-weight: 400;\">412 Food Rescue<\/span><\/a><span style=\"font-weight: 400;\"> through delivery fees.&nbsp;<\/span><\/p>\n<p><span style=\"font-weight: 400;\">For the Loughrans,<\/span><span style=\"font-weight: 400;\"> one of the most inspiring parts of this difficult time has been their loyal customer base. <\/span><span style=\"font-weight: 400;\">\u201cIt&#8217;s been a lot of hard work, but the response has been overwhelming,\u201d they say. \u201cIt seems we are gaining more loyal customers, both in new customers who&#8217;ve found out about us during this crisis, and in customers\u2014who were already fans\u2014now shopping more frequently.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">And that positive support and feeling of community is what keeps them determined and optimistic. <\/span><span style=\"font-weight: 400;\">\u201cWhatever happens in the future, that will stick in the back of our minds, that some people cared\u2014about us, about cheese, about small business, about our community.\u201d<\/span><\/p>\n<hr>\n<h2><a href=\"http:\/\/cherrygrovefarm.com\/\"><b>Cherry Grove Farm<\/b><\/a><\/h2>\n<p><a href=\"http:\/\/cherrygrovefarm.com\"><img decoding=\"async\" class=\"alignnone wp-image-38589 size-full\" src=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2020\/08\/100770531_3914745331899757_7990201804216336384_n.jpg\" alt=\"\" width=\"960\" height=\"753\" srcset=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2020\/08\/100770531_3914745331899757_7990201804216336384_n.jpg 960w, https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2020\/08\/100770531_3914745331899757_7990201804216336384_n-300x235.jpg 300w, https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2020\/08\/100770531_3914745331899757_7990201804216336384_n-768x602.jpg 768w\" sizes=\"(max-width: 960px) 100vw, 960px\" \/><\/a><\/p>\n<p><span style=\"font-weight: 400;\">When the staff at this small dairy farm and creamery in Lawrenceville, New Jersey, had to switch gears from wholesale to retail in a matter of weeks, it wasn\u2019t smooth sailing at first. \u201cIt did put a small strain on us labor-wise,\u201d says Joselyn Preston, head of sales at <\/span><a href=\"http:\/\/cherrygrovefarm.com\"><span style=\"font-weight: 400;\">Cherry Grove Farm.<\/span><\/a><span style=\"font-weight: 400;\"> \u201cBeing a small working farm, we only have so much staff.\u201d&nbsp;<\/span><\/p>\n<p><span style=\"font-weight: 400;\">But that didn\u2019t discourage them from pushing forward and making it work. The Cherry Grove team readjusted their day-to-day roles to develop a delivery system for local consumers and a pre-ordering method for farmers markets. \u201cWe were able to share the load and ultimately push on, in spite of the extra time involved.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Now, as restaurants open back up and we all transition to this \u201cnew normal,\u201d Cherry Grove is coming up with new ways to stay safe and keep their business strong\u2014and that all starts with their staff. Their busy summer months have called for an influx of part-timers, which lead to the idea of <\/span><a href=\"https:\/\/www.instagram.com\/p\/CCeCOH9j5pW\/\"><span style=\"font-weight: 400;\">socially distant cheese training sessions<\/span><\/a><span style=\"font-weight: 400;\">. \u201cCheese training helps our staff get to know our farm, our message, and our cheeses in order to better help customers at markets and in the store,\u201d says Preston. \u201cThroughout this entire ordeal, we have really seen a sense of community come back to our area,\u201d Preston says. \u201cThe pandemic has made people stop and look at what was around them in their own area, as opposed to their usual shopping spots.\u201d<\/span><\/p>\n<hr>\n<h2><a href=\"https:\/\/www.olssonsfinefoods.com\/\"><b>Olsson\u2019s Fine Foods<\/b><\/a><\/h2>\n<p><a href=\"https:\/\/www.olssonsfinefoods.com\/\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-38580 size-large\" src=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2020\/08\/image1-scaled-e1596812102263-1024x1021.jpeg\" alt=\"\" width=\"1024\" height=\"1021\" srcset=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2020\/08\/image1-scaled-e1596812102263-1024x1021.jpeg 1024w, https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2020\/08\/image1-scaled-e1596812102263-300x300.jpeg 300w, https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2020\/08\/image1-scaled-e1596812102263-150x150.jpeg 150w, https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2020\/08\/image1-scaled-e1596812102263-768x766.jpeg 768w, https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2020\/08\/image1-scaled-e1596812102263-1536x1531.jpeg 1536w, https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2020\/08\/image1-scaled-e1596812102263.jpeg 1600w\" sizes=\"(max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p><span style=\"font-weight: 400;\">Maintaining the special bond between mongers and consumers has been paramount for the staff at <\/span><a href=\"https:\/\/www.olssonsfinefoods.com\/\"><span style=\"font-weight: 400;\">Olsson\u2019s Fine Foods<\/span><\/a><span style=\"font-weight: 400;\"> in Princeton, New Jersey. \u201cThe most difficult part was [trying] to keep the personal connection with our community,\u201d says owner Rudie Smit. \u201cWe needed to translate this experience onto the internet.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Since March, the staff has been finding creative ways to maintain that connection while still staying safe. They\u2019ve launched <\/span><a href=\"https:\/\/www.olssonsfinefoods.com\/cheese-classes\/\"><span style=\"font-weight: 400;\">virtual classes<\/span><\/a><span style=\"font-weight: 400;\">, including mozzarella making, pairing sessions, and \u201cCurd Nurds\u201d information sessions\u2014all bringing folks together to learn and savor from home. Now that things are starting to open up, Olsson\u2019s also plans to launch small in-store personal shopping events, where families can sign up for 30-minute time slots to taste cheeses like the good ol\u2019 days.&nbsp;<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Smit says one of their most popular successes since the pandemic began has been their <\/span><a href=\"https:\/\/www.olssonsfinefoods.com\/family-happy-hour-box\/\"><span style=\"font-weight: 400;\">Happy Hour Boxes<\/span><\/a><span style=\"font-weight: 400;\">. \u201cWe were looking for something that would be both catchy and fitting to get our cheeses out there,\u201d Smit says. \u201cThe idea really caught on and we now have quite a few customers who have a Thursday or Friday \u2018happy hour\u2019 set up with friends and enjoy our cheeses.\u201d&nbsp;<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Although there have been significant hurdles for the business and its staff, Smit says the pandemic has allowed them to get out of their comfort zone and explore new opportunities. \u201cWe have definitely become much more internet-oriented and increased sales through the channel by at least 300 percent.\u201d But at the end of the day, no amount of business growth can replace the special face-to-face contact over a cheese case\u2014a tradition that will eventually return\u2014which Smit says \u201cis what every cheesemonger lives for.\u201d&nbsp;<\/span><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Check out how these businesses in New Jersey and
