What I remember most is, toward the end of the meal, the waiter wheeling a cheese trolley over to our table. I thought I\u2019d died and gone to heaven. I chose a small wedge of nearly every variety of cheese and asked for <em>all<\/em> the nut and jam accompaniments. (I swear the waiter rolled his eyes as if to say \u201cAh, mais oui! Another gluttonous American!\u201d) I closed my eyes and really took in the flavor and texture of each variety and thought: \u201cI have never really tasted cheese before.\u201d I\u2019ve been devouring cheese and thinking about interesting pairings ever since.<\/p>\n<p class=\"p1\">Sometimes the most unexpected flavors provide the \u201cperfect\u201d pairing for a cheese. I try to stay open and not just think about say, traditional French flavors paired with French cheeses or Italian ingredients with Italian cheeses. Unusual, off-beat pairings can be revelatory. Consider mango chutney with aged cheeses, mango pur\u00e9e layered with salty cheeses, mango pickles with strong aged cheeses. Mango jam pairs well with a variety of cheeses from soft <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-library\/Munster\" target=\"_blank\" rel=\"noopener\">Munster<\/a> or creamy <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-library\/Emmentaler\" target=\"_blank\" rel=\"noopener\">Emmentaler<\/a> to gooey <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-iq\/cheese-showdown-brie-vs-camembert\/\">Brie or Camembert<\/a>.<\/p>\n<p><strong>BITE:<\/strong> Pair PDO French Munster with dried mango and dessert wine.<\/p>\n<p><strong>DISH:<\/strong> For a sweet-savory lunch or snack, spread a toasted baguette with a dollop of <a href=\"http:\/\/www.maplebrookvt.com\/hand-dipped\">Vermont\u2019s Maplebrook Farm Hand-Dipped Ricotta<\/a> and top with Mango-Citrus Jam (recipe <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/recipes\/pairings-mango-citrus-jam\/\">here<\/a>).<\/p>\n<h2>KIMCHI<\/h2>\n<p>This strongly flavored fermented vegetable, traditionally made with Napa cabbage, radish, ginger, and garlic, pairs well with both mild and sharp cheeses\u2014particularly cheddars. Think of a kimchi and sharp cheddar grilled cheese sandwich. The full-flavored nut can be chopped and scattered over cubes of feta, goat cheese, or mild cheeses like <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-library\/Gruyre-Switzerland\">Gruy\u00e8re<\/a>. Pistachios can even hold up to a nutty aged chunk of <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-library\/Parmigiano-Reggiano\">Parmigiano Reggiano<\/a>.<\/p>\n<p><strong>BITE:<\/strong> Place cubes of <a href=\"https:\/\/igourmet.com\/products\/australian-marinated-feta-cheese?variant=32155496054820&amp;currency=USD&amp;utm_medium=product_sync&amp;utm_source=google&amp;utm_content=sag_organic&amp;utm_campaign=sag_organic&amp;gclid=Cj0KCQjw6-SDBhCMARIsAGbI7UhGr4NiMIXocC7KO-Sk3iGCZG9aV2uNvWO6zP5WOQXCQTJgxVYd-S4aAp5xEALw_wcB\">Meredith Dairy Sheep and Goat Cheese<\/a> in a bowl and top with coarsely chopped pistachios.<\/p>\n<p><strong>DISH:<\/strong> Serve <a href=\"https:\/\/www.jasperhillfarm.com\/clothbound\">Cabot Clothbound Cheddar<\/a> and Pistachio-Sharp Cheddar Shortbread (recipe <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/recipes\/pairings-pistachio-sharp-cheddar-shortbread\">here<\/a>), with Earl Grey tea or white wine.<\/p>\n<h2>COCONUT<\/h2>\n<p>Most cooks think of coconut as a sweet pairing with dessert, but coconut provides a \u201cmeatiness,\u201d fiber, and a subtle sweetness that pairs well with a variety of cheeses. Coconut jam, coconut chutney, and toasted coconut flakes go well with soft, rich gooey triple cr\u00e8me cheeses.<\/p>\n<p><strong>BITE:<\/strong> Serve <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-library\/Reblochon-Fermier\">Reblochon<\/a> with toasted unsweetened <a href=\"https:\/\/www.bobsredmill.com\/coconut-flakes.html\">Bob\u2019s Red Mill Coconut Flakes<\/a> (toast them on a cookie sheet in a 325 degree oven until they turn golden brown, about 6 to 8 minutes).<\/p>\n<p><strong>DISH:<\/strong> Spread crepes or toast with <a href=\"https:\/\/auriasmalaysiankitchen.com\/products\/pandan-kaya-8oz237g\">Auria\u2019s Pandan Kaya<\/a> (Malaysian coconut breakfast jam made from coconut milk and eggs) and top with paper thin slices of sharp cheddar.<\/p>\n<h2>OLIVES<\/h2>\n<p>Olives are a traditional element on cheese platters, but don\u2019t overlook the potential of green or black tapenade, or spicy herbed olives in olive oil, to serve with soft fresh goat cheese, French cheeses like Brie and <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-library\/Camembert-Normandie\" target=\"_blank\" rel=\"noopener\">Camembert<\/a>, or Italian <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-iq\/style-highlight-burrata\/\">burrata<\/a>. Like nuts, they add fiber, color, and a great texture. You can make a pumpkin seed\u2013bacon brittle to serve with a soft, somewhat mild cheese or a full-flavored blue cheese. The bold flavors in the brittle hold up well with the assertiveness of the blue. Beware of salted pumpkin seeds, which can overwhelm milder cheeses.<\/p>\n<p><strong>BITE:<\/strong> Serve chunks of <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-library\/Parmigiano-Reggiano\" target=\"_blank\" rel=\"noopener\">Parmigiano Reggiano<\/a> with pumpkin seeds and dried cranberries.<\/p>\n<p><strong>DISH<\/strong>: Top an arugula salad with <a href=\"https:\/\/www.jasperhillfarm.com\/bayley\">Jasper Hill Farm Bayley Hazen Blue<\/a> and Pumpkin Seed, Rosemary, and Bacon Brittle (recipe <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/recipes\/pairings-pumpkin-seed-rosemary-and-bacon-brittle\">here<\/a>).<\/p>\n<h2>HONEY<\/h2>\n<p>The sweet flavor of honey is a time-honored match for many cheeses, from creamy to firm, mild to pungent.
