Most of these handmade, cow\u2019s milk cheeses feature pretty watercolor-like package designs that reflect their names, including <a href=\"https:\/\/deercreekcheese.com\/portfolio\/the-fawn\/\">The Fawn,<\/a> <a href=\"https:\/\/deercreekcheese.com\/portfolio\/the-robin\/\">The Robin<\/a>, <a href=\"https:\/\/deercreekcheese.com\/portfolio\/the-doe\/\">The Doe<\/a>, <a href=\"https:\/\/deercreekcheese.com\/portfolio\/the-blue-jay\/\">The Blue Jay<\/a>, and <a href=\"https:\/\/deercreekcheese.com\/portfolio\/the-moonrabbit\/\">Moon Rabbit<\/a>\u2014the last a sweet-finish cheddar washed in green Chartreuse. And then there\u2019s <a href=\"https:\/\/deercreekcheese.com\/portfolio\/the-rattlesnake\/\">The Rattlesnake<\/a>, dramatically illustrated with a Wisconsin Timber Rattler slithering through a skull. While it\u2019s a departure from the gentle drawings of woodland creatures, the label is apt for a cheddar spiked with tequila and habanero peppers, which Deer Creek Founder and President Chris Gentine had a direct hand in creating. \u201cI like tequila a little bit\u2014sometimes a lot a bit,\u201d he jokes.<\/p>\n<p>Working with his friend, cheesemaker Kerry Henning of <a href=\"https:\/\/www.henningscheese.com\/\">Henning\u2019s Wisconsin Cheese<\/a>, Gentine spent about a year developing The Rattlesnake. \u201cWe tried all different types of tequila and liked the flavor that came off the Cuervo Gold\u2014it really seemed to work with the balance of other flavors we had,\u201d he says. The color of the dried habaneros is important too; Gentine insists on \u201cred-orange, bright, fresh-looking peppers,\u201d which are reconstituted in the tequila and added to the cheese finishing table late in the process. \u201cWhen we do the whey drain, we go over and catch some in a red Solo cup; we call it \u2018drinking the venom.\u2019\u201d The resulting cheese has a definite kick with a blend of flavors that\u2019s nicely balanced. It\u2019s been the Deer Creek cheese of choice during the pandemic, and it shines in recipes, including the signature <a href=\"https:\/\/deercreekcheese.com\/2020\/05\/05\/cabo-corn-dip-featuring-the-robin-and-the-rattlesnake\/\">Cabo Corn Dip<\/a>\u2014in which The Robin (a buttery Colby) tempers but doesn\u2019t dull The Rattlesnake\u2019s bit.<\/p>\n<hr>\n<p style=\"text-align: left;\"><em>&#8220;You get the tequila aroma off the cheese as you open it. When you taste it, you get the sweet of the tequila, then you get the cheddar, then just as you\u2019re saying, \u2018it\u2019s not that hot,\u2019 you get the knife blade of the pepper.&#8221;<\/em><\/p>\n<hr>\n<p><em>\u201cMy wife designs some of the cheeses, like <a href=\"https:\/\/deercreekcheese.com\/portfolio\/the-doe\/\">The Doe<\/a>, an aged cheddar infused with bourbon vanilla.
