Since 1892\u00a0<a href=\"https:\/\/culturecheesemag.us3.list-manage.com\/track\/click?u=c636c679f05cb1485e3abb43f&amp;id=bf3adba290&amp;e=f49c0f75d2\" target=\"_blank\" rel=\"noreferrer noopener\">Alleva Dairy<\/a>\u00a0has served its local community in Little Italy in New York City. Unfortunately,\u00a0financial stress from the\u00a0COVID-19\u00a0pandemic proved to be insurmountable for the small business. Alleva hopes to continue its legacy in a new location.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Montreal-based\u00a0<a href=\"https:\/\/www.just-food.com\/news\/saputo-to-build-us-cheese-facility-close-three\/?mc_cid=ee5b5823d4&amp;mc_eid=UNIQID\" target=\"_blank\" rel=\"noreferrer noopener\">Saputo is &#8220;streamlining<\/a>\u00a0its manufacturing footprint in the U.S.&#8221; by converting a California cut-and-wrap facility\u00a0into a string-cheese plant and closing three other sites.\u00a0The move will generate 600 new jobs, and cause 720 job losses and was followed by Saputo&#8217;s <a href=\"https:\/\/www.therecord.com\/ts\/business\/2023\/02\/10\/dairy-giant-saputo-doubles-profit-despite-fast-and-furious-inflationary-pressures.html?li_source=LI&amp;li_medium=therecord_business\" target=\"_blank\" rel=\"noreferrer noopener\">third-quarter earnings report<\/a> in which the dairy giant reported double the amount of profit compared to the same time period the previous year.<\/li>\n\n\n\n<li>Adeline Druart, who joined\u00a0<a href=\"https:\/\/www.vermontcreamery.com\/?mc_cid=ee5b5823d4&amp;mc_eid=UNIQID\" target=\"_blank\" rel=\"noreferrer noopener\">Vermont Creamery<\/a>\u00a0in 2002 as an intern, rose to become its president, and shepherded the company through a sale to Land O Lakes and becoming a B Corp., among other milestones, is leaving the company on Feb. 17.\u00a0David Stearle, vice president of Land O Lakes Dairy Foods Sales, will be appointed president.<\/li>\n\n\n\n<li>The Cheese Professor Editor Amy Sherman reached out to cheesemaker Mike Koch of\u00a0<a href=\"https:\/\/fireflyfarms.com\/?mc_cid=52d14d1bb5&amp;mc_eid=UNIQID\" target=\"_blank\" rel=\"noreferrer noopener\">FireFly Farms<\/a>, importer\u00a0<a href=\"https:\/\/forevercheese.com\/?mc_cid=52d14d1bb5&amp;mc_eid=UNIQID\" target=\"_blank\" rel=\"noreferrer noopener\">Michele Buster<\/a>\u00a0of Forever Cheese, and cheesemonger David Phillips of\u00a0<a href=\"https:\/\/www.potashmarkets.com\/?mc_cid=52d14d1bb5&amp;mc_eid=UNIQID\" target=\"_blank\" rel=\"noreferrer noopener\">Potash Markets<\/a>\u00a0to get their perspectives on the current state of the industry and what they expect in 2023.
