{"id":46292,"date":"2023-08-29T16:17:20","date_gmt":"2023-08-29T20:17:20","guid":{"rendered":"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/?p=46292"},"modified":"2023-09-19T11:44:37","modified_gmt":"2023-09-19T15:44:37","slug":"new-record-for-worlds-most-expensive-cheese","status":"publish","type":"post","link":"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/new-record-for-worlds-most-expensive-cheese\/","title":{"rendered":"New Record for World&#8217;s Most Expensive Cheese"},"content":{"rendered":"\n<p><em>Photo by Luis Carr\u00e8 \/ icex<\/em><\/p>\n\n\n\n<p>If you thought $30 for a pound of blue cheese was expensive, wait till you hear how much this Spanish blue cheese just sold for. <\/p>\n\n\n\n<p>Clocking in at $6,682 per pound, a wheel of <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-library\/Cabrales\">Cabrales<\/a> blue cheese from northern&nbsp;Spain&nbsp;earned the title of the world\u2019s most expensive cheese after a 2.2 kg (4.85 lb) wheel was sold at auction for \u20ac30,000 ($32,408.10). <\/p>\n\n\n\n<p>The auction took place at the 51st annual <a href=\"https:\/\/www.turismoasturias.es\/en\/descubre\/fiestas-de-interes-turistico\/certamen-del-queso-de-cabrales\">Cabrales Cheese Competition<\/a> held in the Principality of Asturias. Bidding started at \u20ac3,000 and quickly rose as passionate turophiles battled for the right to own the first-place cheese.<\/p>\n\n\n\n<p>In the end, restauranteur Iv\u00e1n Su\u00e1rez won the prized wheel. Su\u00e1rez told Spanish news outlet EFE that \u201cthe passion for the land\u201d and \u201crecognizing the work of all the cheesemakers\u201d made him buy the cheese.<\/p>\n\n\n\n<p>Suarez broke his own record for the most expensive cheese ever purchased. In <a href=\"https:\/\/www.guinnessworldrecords.com\/world-records\/549138-most-expensive-cheese-sold-at-auction\">2019 he bought a wheel of Cabrales<\/a> for \u20ac20,500.<\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-full\"><a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-library\/Cabrales\"><img fetchpriority=\"high\" decoding=\"async\" width=\"540\" height=\"360\" src=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2023\/08\/cheeseLibrary_58.jpg\" alt=\"\" class=\"wp-image-46295\" srcset=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2023\/08\/cheeseLibrary_58.jpg 540w, https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2023\/08\/cheeseLibrary_58-300x200.jpg 300w\" sizes=\"(max-width: 540px) 100vw, 540px\" \/><\/a><figcaption class=\"wp-element-caption\">The inside of a wheel of Cabrales cheese. <\/figcaption><\/figure><\/div>\n\n\n<p>Cabrales is a Protected Designation of Origin (PDO) produced in Asturias. A strong, blue-veined cheese with a creamy, firm texture, it can be made from unpasteurized cow\u2019s milk or blended with sheep\u2019s and goat\u2019s milk. Aged in limestone caves, Cabrales used to be wrapped in sycamore leaves, but is now sold in foil.&nbsp;<\/p>\n\n\n\n<p>The winning wheel was made by Guillermo Pend\u00e1s at his family&#8217;s Los Puertos factory. \u201cWe knew we had a good cheese but also that it is very difficult to win,\u201d Pend\u00e1s told EFE.<\/p>\n\n\n\n<p>Rosa Vada, Pend\u00e1s\u2019 mother and the owner of Los Puertos, said the winning cheese had been aged in a 1,400-meter-high (4,593 feet) cave at 7C (44.6F) for a minimum of eight months.<\/p>\n\n\n\n<p>Vada said this particular cave is located in a town called P\u00f3o [high place] de Cabrales. &#8220;The town is so small they don\u2019t name the streets so it\u2019s \u201cbest to ask\u201d for directions,&#8221; he says.<\/p>\n\n\n\n<p>Cabrales is one of the more than forty different artisanal cheeses\u2014four under Protected Designation of Origin (PDO)\u2014produced in Asturias.
