The &#8220;how <em>do<\/em> you pronounce that?&#8221; spreadable salume was featured as a new product at a variety of charcuterie tables, and each had its own unique twist on suggested application, texture, or spice level. Spread it on crusty bread, plop it on pizza, mix it in a beany brothy soup, or whip up a creamy dip\u2014whatever you do, don&#8217;t sleep on it!&#8221; &#8211; Mallory Scyphers<\/p>\n\n\n\n<p>Some standouts included <a href=\"https:\/\/www.tempestaartisansalumi.com\/shop\/nduja\/\" target=\"_blank\" rel=\"noreferrer noopener\">Tempesta \u2018Nduja<\/a> and <a href=\"https:\/\/elevationmeats.com\/products\/nduja-smokey-spicy-spreadable-salami\" target=\"_blank\" rel=\"noreferrer noopener\">Elevation Nduja<\/a>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-peppercorn\">Peppercorn<\/h2>\n\n\n\n<p>I sampled a lot of <strong>peppercorn<\/strong>-laced cheeses and noticed the spice replacing popular peppers like hatch and chile. Everything. From classics like cucumber and carrots, to colorful varieties like mango, pickled fare seemed to be everywhere. <a href=\"http:\/\/pluckypickledip.com\" target=\"_blank\" rel=\"noreferrer noopener\">Plucky Pickle Dip<\/a> and <a href=\"https:\/\/beehivecheese.com\/collections\/cheese-curds\" target=\"_blank\" rel=\"noreferrer noopener\">Beehive\u2019s<\/a> pickle-flavored cheese curds were two chickle-inspired snacks we couldn&#8217;t get enough of. <em>Yes, chickle is a combination of cheese and pickle, and yes, <a href=\"https:\/\/spoonuniversity.com\/lifestyle\/tiktok-viral-chickle\" target=\"_blank\" rel=\"noreferrer noopener\">it&#8217;s a thing<\/a>.<\/em> <\/p>\n\n\n\n<p>The pickled green mango we tried with <a href=\"https:\/\/kleinrivercheese.co.za\/cheese-2\/gruberg\/\" target=\"_blank\" rel=\"noreferrer noopener\">Klein River Cheese&#8217;s Gruberg<\/a> was unlike any pickle we&#8217;d ever had\u2014in a good way. It was like a children&#8217;s book come to life:&nbsp;<br>In a tub or in a can<br>Dollop, torch(!) or spoon<br>Not your average mallow fluffs<br>They really made us swoon<\/p>\n\n\n\n<p>Obviously our minds drifted to gooey, melty campfire cheese + s&#8217;mores combos.<\/p>\n\n\n\n<p><a href=\"https:\/\/www.sh-mallow.com\/\" target=\"_blank\" rel=\"noreferrer noopener\">Sh\u2019mallow<\/a>, the innovative marshmallow in a can that sprays like whipped cream and toasts like a classic jet puffed, immediately got us thinking about the seemingly limitless applications. And there were several vegan marshmallow brands that were so good we couldn\u2019t tell the difference, including <a href=\"https:\/\/www.funkymello.com\/\" target=\"_blank\" rel=\"noreferrer noopener\">Funky Mellow\u2019s<\/a> vegan fluff made of aquafaba.&nbsp;<\/p>\n\n\n\n<p>We swooned over <a href=\"https:\/\/www.firehook.com\/\" target=\"_blank\" rel=\"noreferrer noopener\">Firehook\u2019s<\/a> yet-to-be-released chocolate crispy graham\u2014which I think I may like even more than the original version! It was the best new pimento cheese I&#8217;ve tried in quite some time\u2014and I should know as a southerner with a discerning taste for pimento cheese. It&#8217;s used with freshly grated cheddar, eliminating that weird texture that can happen when mixing up pre-shredded bagged cheddar, and comes in three flavors. Spicy white cheddar was my fave.<\/p>\n\n\n\n<p>Sartori\u2019s <a href=\"https:\/\/www.sartoricheese.com\/news\/news-detail#garlic-herb-bellavitano-launch\" target=\"_blank\" rel=\"noreferrer noopener\">new <strong>Garlic &amp; Herb BellaVitano<\/strong><\/a> spread is another standout in an increasingly crowded spread category. I especially enjoyed the <a href=\"https:\/\/www.amazon.com\/stores\/page\/0F6B2000-356B-4803-AFCF-A350F515411B?store_ref=storeRecs_dp_aplus\" target=\"_blank\" rel=\"noreferrer noopener\">Amarillo Pepper Sauce<\/a>, made with yellow Peruvian peppers and slightly milder and tangier than its Rocoto counterpart.&nbsp;<\/p>\n\n\n\n<p>Speaking of spice, we got to sample <a href=\"https:\/\/www.delimarketnews.com\/quick-bite\/artikaas-announces-new-cheeses-winter-fancy-food-show\/peggy-packer\/thu-01182024-0843\/16798\" target=\"_blank\" rel=\"noreferrer noopener\">Artikaas\u2019 new pepper line<\/a> featuring flavors like peppadew and gochugang. Which is actually not ham at all, but a cut from the pig&#8217;s shoulder which is then seasoned with traditional Louisiana spices for a slap-you-in-the-face burst of flavor.&#8221; &#8211; Josie Krogh<\/p>\n\n\n\n<p>&#8220;I&#8217;m also excited about BelGioioso&#8217;s new <a href=\"https:\/\/www.perishablenews.com\/deli\/belgioioso-cheese-introduces-new-baking-fresh-mozzarella-log\/?mc_cid=52ce207e74&amp;mc_eid=7a384e7026\" target=\"_blank\" rel=\"noreferrer noopener\"><strong>Baking Fresh Mozzarella log<\/strong><\/a>, made with a lower moisture content to withstand baking and high-heat. What I loved about this one is its insistence to <em>not<\/em> imitate alcohol, yet still set itself apart from your standard fizzy drink.
