Later, he started cooking in Korean restaurants, where his interest in fermentation began to grow. His first job in cheese was in 2012 as an assistant cheesemaker in Northwest Washington. Since 2017, he\u2019s moved cross- country three times for different jobs, spending a couple years making soft cheese at Jasper Hill Farm, then pursuing a more corporate route with Tillamook in Oregon. After a few years at Tillamook, Vivanco got a call from his friend, Olivia Haver, about an opportunity at the Farm at Doe Run. Just two weeks after that phone call, he made the move to Pennsylvania. Vivanco considers himself incredibly lucky to work with milk from cows, goats, and sheep to produce <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/blog\/the-farm-at-doe-run-wins-best-in-show-at-2023-american-cheese-society\/\">award-winning cheeses<\/a> without creative limitations while being supported by his amazing team.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-who-is-your-biggest-inspiration-in-the-cheese-world\"><strong>Who is your biggest inspiration in the cheese world?<\/strong><\/h3>\n\n\n\n<p>Eileen O\u2019Malley. She inspired me to get out of my comfort zone, challenge myself, and move to Vermont. Eileen was my co-worker at Samish Bay Cheese and Jasper Hill.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-what-was-your-big-aha-moment-when-you-entered-this-industry\"><strong>What was your big \u201caha moment\u201d when you entered this industry?<\/strong><\/h3>\n\n\n\n<p>Realizing the consistency required to be a cheesemaker. It encourages me to show up with intention, and to respect the resources required to participate in this industry.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-what-s-your-number-one-goal-for-your-career-in-the-cheese-industry\"><strong>What\u2019s your number one goal for your career in the cheese industry?<\/strong><\/h3>\n\n\n\n<p>I\u2019d like to find a way to reflect my cultural heritage as a Mexican-American through cheesemaking or cheese education. I\u2019m not exactly sure how I\u2019d like to do this yet, but I\u2019m currently enjoying the pursuit of delicious flavors through new recipes.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-what-s-the-biggest-challenge-you-ve-experienced-or-overcome-in-the-industry\"><strong>What\u2019s the biggest challenge you\u2019ve experienced or overcome in the industry? <\/strong><\/h3>\n\n\n\n<p>One of the biggest challenges I\u2019ve faced was the transition from my desk job at Tillamook back into cheesemaking. After taking two years off from production, it was difficult to create a dozen recipes while still learning a new facility.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-pair-a-celebrity-with-a-cheese\"><strong>Pair a celebrity with a cheese<\/strong>.<\/h3>\n\n\n\n<p>Nicolas Cage and pule.
