It\u2019s something that both domestic and international cheesemakers should be thinking about and working to improve. And what would this <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/?s=green+cheese\" target=\"_blank\">Green Cheese series<\/a> be without talking to someone beyond the US border?<\/p>\n<p>Enter family-owned Spanish creamery <a href=\"http:\/\/www.santa-gadea.com\" target=\"_blank\">Santa Gadea<\/a>. Touted as the first farm in Europe to be 100% sustainable and organic, they are also completely carbon negative\u2014an impressive feat for dairy housing 1,300 French Alpine goats. Founded by Alfonso P\u00e9rez-And\u00fajar and staffed by less than 15 people, the farm is located in San Crist\u00f3bal de Rioseco and focuses on both traditional and less conventional environmental strategies to reduce emissions. Though they\u2019ve owned the property for 12 years, they\u2019ve only been seriously producing cheese for the last two and a half years.<\/p>\n<div id=\"attachment_6240\" style=\"width: 640px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/www.santa-gadea.com\/quienes-somos.php\"><img fetchpriority=\"high\" decoding=\"async\" aria-describedby=\"caption-attachment-6240\" class=\" wp-image-6240 \" src=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2014\/04\/aprisco.jpg\" alt=\"Santa Gadea's barn\" width=\"630\" height=\"420\" srcset=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2014\/04\/aprisco.jpg 700w, https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2014\/04\/aprisco-300x200.jpg 300w\" sizes=\"(max-width: 630px) 100vw, 630px\" \/><\/a><p id=\"caption-attachment-6240\" class=\"wp-caption-text\">Santa Gadea&#8217;s barn<\/p><\/div>\n<p>I spoke with Marta Milans, vice president of the dairy and daughter of P\u00e9rez-And\u00fajar. \u201cMy dad\u2019s passion for nature and trees is insane,\u201d she says. This is good news, considering that their large property is very lush and green. P\u00e9rez-And\u00fajar want to keep as much of the natural forest as possible, and began his reforestation efforts several years ago. Milans explains that \u201cvariety is important, because that way the fauna has many more options. You create a much healthier animal.\u201d Over 120,000 trees have been planted to date, many of them pine or walnut. All of that extra greenery removes carbon dioxide from the atmosphere, to which Milans simply says, \u201cIt\u2019s a beautiful thing to do, to give back to Earth that way.\u201d<\/p>\n<div id=\"attachment_6239\" style=\"width: 703px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/www.santa-gadea.com\/reduccion-de-emisiones.php\"><img decoding=\"async\" aria-describedby=\"caption-attachment-6239\" class=\" wp-image-6239 \" src=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2014\/04\/gas.jpg\" alt=\"Emissions chart\" width=\"693\" height=\"385\" srcset=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2014\/04\/gas.jpg 770w, https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2014\/04\/gas-300x166.jpg 300w\" sizes=\"(max-width: 693px) 100vw, 693px\" \/><\/a><p id=\"caption-attachment-6239\" class=\"wp-caption-text\">Chart from <a href=\"http:\/\/www.santa-gadea.com\/reduccion-de-emisiones.php\" target=\"_blank\">Santa Gadea<\/a><\/p><\/div>\n<p>Along with reforestation, the farm features solar and wind farms, in addition to less traditional eco-friendly techniques. P\u00e9rez-And\u00fajar is a big fan of <a href=\"http:\/\/www.santa-gadea.com\/tecnologia-em.php\" target=\"_blank\">effective micoorganism (EM) technology<\/a>. Discovered by a Japanese scientist in the 1980\u2019s, EM technology is a precise combination of three types of bacteria\u2014phototrophic bacteria, lactic acid bacteria, and yeasts. Milans explains, \u201cIn a certain combination, it regenerates soil and earth in an incredible way.\u201d When applied in the correct ratios to manure, bacteria will feed off gases, which reduces methane and carbon dioxide emissions by 40 percent and speeds up the process of turning manure into usable compost.<\/p>\n<div id=\"attachment_6238\" style=\"width: 613px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/www.santa-gadea.com\/tecnologia-em.php\"><img decoding=\"async\" aria-describedby=\"caption-attachment-6238\" class=\"size-full wp-image-6238\" src=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2014\/04\/EM.jpg\" alt=\"EM technology chart\" width=\"603\" height=\"324\" srcset=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2014\/04\/EM.jpg 603w, https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/wp-content\/uploads\/2014\/04\/EM-300x161.jpg 300w\" sizes=\"(max-width: 603px) 100vw, 603px\" \/><\/a><p id=\"caption-attachment-6238\" class=\"wp-caption-text\">Chart from <a href=\"http:\/\/www.santa-gadea.com\/tecnologia-em.php\" target=\"_blank\">Santa Gadea<\/a><\/p><\/div>\n<p>Milans explains that this EM technology can have very diverse uses. \u201cOnce my dad discovered this, he decided to bring that technique into our farm. We spray all of our soil with it, we spray the food we feed our goats, and that\u2019s part of the reason our goats are so healthy.\u201d For the very brave, Milans also adds that people \u201ccan take shots of it and it regenerates all your intestinal flora.\u201d<\/p>\n<p>Besides the environment, the farm also places emphasis on family: Milan\u2019s father Alfonso, the patriarch of the family, founded the business and strives to be eco-friendly. Marta\u2019s mother makes the cheese, and her siblings (a marine biologist and renewable wind energy specialist) both help with the more technical ecological aspects of the farm. Milans herself works to find distributors and importers. Santa Gadea is already widely sold in European countries like Germany, Sweden, and England, and Milans recently signed a contract to begin selling their cheese in US Whole Foods.<\/p>\n<p>And P\u00e9rez-And\u00fajar has passed down his environmental views to his children. But perhaps Milans puts it best, simply saying, \u201cYou want to really respect nature.
