Two of <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/ruminations\/going-distance-great-cheese-marathon\" target=\"_blank\">ACS CCP<\/a> Lincoln Broadbooks&#8217; favorite grilled burger-toppers are <a href=\"\/cheese-library\/Landaff\" target=\"_blank\">Landaff<\/a>, a rustic, semi-firm cow&#8217;s milk cheese with&nbsp;<span style=\"color: #666666;\">flavors of tangy buttermilk, savory-sweet brown butter, and aromas of grass and cave,&nbsp;<\/span>and Alpine-style&nbsp;<a href=\"\/cheese-library\/Alpha-Tolman\" target=\"_blank\">Alpha Tolman, <\/a>the flavors of which can range from lactic to meaty depending on its age. Both cheeses are from&nbsp;the <a href=\"https:\/\/developer83.wordpress-developer.us\/culturecheesemag\/cheese-bites\/taste-place-cellars-jasper-hill\" target=\"_blank\">Cellars at Jasper Hill<\/a>&nbsp;in Vermont.<\/p>\n<blockquote><p>While the raw cow\u2019s milk Landaff is young, it has a milky tanginess with some grassy flavors. As it matures, a savory-sweet caramelized flavor emerges in the cheese. The rind is edible so go for it. It brings a little cheese cave to the experience.<\/p>\n<p>For your burger just slice it relatively thin. Also keep the rind on.
